This is an excellent homemade ice cream, with lots of room for variations...limited only by your imagination. I originally got the recipe with an ice cream maker that I purchased some time before I was married in 1986. The recipe and variations are designed for a one-quart yield, and may be doubled if desired. Prep time is for combining the mixture and does not include freezing time (as that will vary by machine/method). Note: Oreo cookie pudding ice cream is EXCELLENT. :D

1 (3 3/4 ounce) package instant pudding mix, any flavor
1/2 cup sugar
2 cups light cream or 2 cups half-and-half
1 teaspoon vanilla
1/2 cup heavy cream or 1/2 cup whipping cream

Steps:

  • Combine pudding, light cream and sugar. Beat mixture as directed on pudding package, however, discontinue beating as soon as the mixture begins to thicken.
  • Stir in vanilla and heavy cream.
  • Transfer pudding mixture to ice cream machine maker and process according to specifications.

Using only two ingredients, this ice cream recipe consistently produces thick, creamy ice cream. It can be made fat-free or sugar free in any flavor available in a pudding mix. This recipe is ideal for busy cooks, children, elderly people, diabetics, or dieters who cannot find sugar-free ice cream they like, or anyone who wants to impress guests with little effort. This recipe has been tested in a Cuisinart®® 2-quart electric ice cream maker, the kind where you freeze the bowl overnight and do not need ice or salt. This ice cream tastes like very good commercial ice cream.

1 quart half-and-half
1 (3.5 ounce) package instant pudding mix, any flavor

Steps:

  • Place the bowl of an ice cream maker in the freezer until completely chilled, at least 1 hour.
  • Chill half-and-half in the freezer, shaking every 10 minutes, until chilled but not frozen, about 30 minutes.
  • Pour chilled half-and-half and pudding mix into a bowl and mix well with a whisk.
  • Place frozen bowl of ice cream maker into the ice cream maker; add the stirring component and lid. Turn on the machine so the bowl is rotating. Pour pudding mixture into the machine through the hole in the lid.
  • Allow ice cream to process in the ice cream maker until desired consistency is reached, about 30 minutes.

Steps:

  • Beat heavy cream in a bowl using an electric mixer until soft peaks form; add sweetened condensed milk and beat until thick and well combined.

My new 1 1/2 quart ice cream freezer is getting a work out!! Came up with this idea after wondering if it would work, and it did, wonderfully. I used butterscotch pudding but I imagine any flavor would work. Note that this doesn't use extra sugar. The pudding should be enough.

1 (3 ounce) package instant pudding mix
4 cups whole milk
3 egg yolks

Steps:

  • separate eggs and use whites for something else (like breakfast).
  • beat yolks and 2 cups milk until well combined.
  • heat mixture over low to medium heat to near boiling. It should coat a spoon dipped into it when ready.
  • cool for 15 or more minutes then add the rest of the milk.
  • refrigerate for at least two hours.
  • add pudding mix and stir for 30 seconds to remove major lumps (don't worry about small lumps, they will disappear during freezing process.).
  • add to ice cream freezer and process according to your machines directions.

1 cup milk
1 (12 ounce) carton Cool Whip, thawed

Steps:

  • In blender, briefly combine milk and pudding powder until smooth. Quickly pour into small bowl and let stand 5 minutes.
  • Use bowl scraper to fold the pudding into the cool whip, combining well.
  • Cover tightly and freeze several hours for Dairy Queen soft texture or freeze overnight for firm texture, that you can scoop like ice cream.
