1 cup buttermilk
2 eggs
3 1/4 cups whole wheat flour
4 ml salt
2 tablespoons gluten
3 tablespoons margarine
1/4 cup honey
2 teaspoons dry active yeast

Steps:

  • Microwave buttermilk for 30secs to a minute so it's lukewarm.
  • Add all ingredients to breadmachine in the order listed.
  • Select 1.5 lbs loaf
  • NOTE: Due to difference in moisture content of flour you may want to watch bread mixture to ensure the right consistency. If the mixture is too dry add one tablespoon of buttermilk and a time & if it's too wet add a tablespoon of flour at a time. Make sure the buttermilk or flour is completely incorporated before adjusting again.

I adapted this from a recipe found on the KAF website after finding out there's no good recipes out there for 1lb bread machines. I'm attempting to cut out all processed foods and refined grains and this makes a great everyday whole wheat bread with a light texture. Don't omit the gluten - it's essential if you want to make bread rather than a concrete block. I am at over 6000ft in elevation - you may need to add another .5tsp of yeast for proper rise at sea level.

7 ounces water
1 tablespoon olive oil
1 teaspoon olive oil
2 tablespoons honey
2 teaspoons honey
2 -2 1/4 cups whole wheat flour
3 tablespoons chia seeds or 3 tablespoons flax seeds
2 teaspoons wheat gluten
1 teaspoon salt
1 teaspoon yeast

Steps:

  • Add ingredients in order listed to your bread machine. If your bread machine specifies dry ingredients should be added first, reverse the order in which ingredients are added. Use the basic (not the whole wheat) cycle on your bread machine.
  • Try subbing 1/2c rye flour and adding 1tsp of caraway seeds for a delicious seeded rye!

1 cup warm water
3 tablespoons shortening, lard or 3 tablespoons butter
3 tablespoons sugar or 2 2/3 tablespoons honey
2/3 teaspoon table salt
2 teaspoons vinegar (I prefer cider vinegar, or unseasoned rice vinegar)
4 teaspoons gluten
3 cups whole wheat flour, minus 4 teaspoons
1 1/3 teaspoons bread machine yeast

Steps:

  • Put 4 teaspoons of gluten in the bottom of a one cup measure. Add whole wheat flour to fill the cup, and then measure another 2 cups of just whole wheat flour.
  • Add ingredients to the bread machine as per instructions for your model.
  • As the machine begins to mix, adjust the water or extra flour to give a smooth ball of dough when kneaded.
  • I use the whole grain option of my machine to bake my loaf.

I find most 100% whole wheat buns are very dense, and let's be frank, taste like the floor of a barn. This recipe is an adaptation of my "Mom's Air Buns" #168628, and makes delicious, soft, healthy,and easy to make rolls. I think the unusual addition of vinegar is what makes the difference. 1 1/2 cups warm water
1/4 cup shortening or 1/4 cup soft butter
1/4 cup sugar or 4 tablespoons honey
1 teaspoon table salt
1 tablespoon vinegar
2 tablespoons gluten
4 1/2 cups whole wheat flour (minus 2 tablespoons)
2 teaspoons bread machine yeast

Steps:

  • Put water, butter, honey, salt and vinegar in the machine.
  • In the bottom of a one cup measure, put 2 tablespoons of gluten, and then fill the cup with W.W. flour.
  • Put that, and another 3 1/2 cups of flour on top of the liquids.
  • Add yeast to surface, and programme for "dough" cycle.
  • I make two 9 inch pans of rolls, each with 9 rolls per pan, and let rise until double (the rolls will fill the pans).
  • Bake at 350°F (I use convection bake) for approximately 20 minutes. Rolls will be deeply golden and oh so yummy.

It is summer and I still want to make my own bread without heating up the house.So I tried this and very pleased with the result. White whole wheat flour is new around here. Next time I will try it with regular whole wheat.

1 ¾ cups warm water
2 tablespoons honey
¾ teaspoon active dry yeast
3 ½ cups whole wheat flour, or more as needed, divided
1 tablespoon olive oil
1 teaspoon sea salt

Steps:

  • Mix the warm water, honey, and yeast in a stand-mixer bowl until mixture becomes foamy, about 5 minutes.
  • Add half the whole wheat flour, olive oil, and salt to the mixture. Mix with a spatula or wooden spoon until incorporated. Let sit for 1 to 2 minutes.
  • Mix with a dough hook attachment on low speed, slowly adding the remaining whole wheat flour, increasing the speed to high. Mix on high until the batter is combined and not sticking to the sides of the bowl, about 7 minutes. Cover the bowl with a towel and let rest for 15 minutes.
  • Meanwhile, prepare a 9x5-inch loaf pan with parchment paper. Flour a surface to work the dough.
  • Place the dough onto the floured work surface and shape into a loaf. Use more flour if necessary. Place into the prepared loaf pan.
  • Let shaped dough sit in a warm place until it has risen over the top of the pan, about 1 hour.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until top of the loaf sounds hollow when tapped, about 35 minutes. Remove from the oven and let cool for 15 to 20 minutes before removing from the pan and transferring to a wire rack. Let cool an additional hour before slicing; otherwise it will feel doughy.
