These were given to me by a co-worker. She'd made them for a fundraiser and I asked her for the recipe. She added toffee bits to the cookies. Delicious!

1 cup white sugar
1 cup brown sugar
1 cup margarine
1 cup cooking oil
1 large egg
3/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cream of tartar
1 cup Rice Krispies
1 cup grated coconut
1 cup quick oatmeal (raw)
3 1/2 cups flour

Steps:

  • Mix in order given. Drop by teaspoonfuls onto baking sheet. Bake at 350° for 12-15 minutes.

This recipe came from my mother-in-law, Beth Wilcox. She was not only the BEST mother-in-law ever, but a wonderful cook. I have many of her recipes that I treasure.

1 c sugar
1 c oleo
1 egg
3/4 tsp salt
1 tsp cream of tartar
1 c coconut
1 c rice krispies
1 c brown sugar
1 c vegetable oil
1 tsp vanilla extract
1 tsp soda
3-1/2 c flour
1 c raw oats
1/2 c pecans, in pieces
1/2 c chocolate chips

Steps:

  • 1. Cream sugars, oil, butter, egg and vanilla. Mix together flour, salt, soda and cream of tartar; stir well then add to creamed mixture. Add coconut,oats, nuts, cereal and chips.
  • 2. Drop by teaspoons full onto cookie sheet. Bake at 350 for about 12 to 15 minutes or until brown. Makes around 100 cookies, hence the name!

No bake oatmeal cookies made with Nitrean whey protein powder. Just under 100 calories per cookie and 4.6 grams protein.

1/4 cup raw sugar
1/4 cup skim milk
1/2 tablespoon butter
1 tablespoon molasses
1/3 cup vanilla protein powder (I use Nitrean - 113 calories, 23g protein)
2 1/2 tablespoons creamy peanut butter
1 cup quick oats

Steps:

  • In a saucepan over medium heat, add the butter, milk, sugar, and molasses. Stir quickly until it bubbles up and then lower the heat.
  • Whisk in the peanut butter and protein powder, then remove from heat. Stir in oats last while the mixture is still hot.
  • Gently roll out onto a pan or plate, push down until about 1/2" thick. Let rest for 5 minutes and cut into squares.

1 lb shortening (crisco)
2 1/4 Cups molasses =( 1lb-8oz)
2 cups water
2 3/4 qts flour, wheat, or pastry & all sifted =(2lbs 8oz)
1 lb granulated sugar =( 2 1/4 cups)
6 TBS milk, (nonfat dry milk)= 1 3/4 oz)
1 3/4 TBS baking powder
3 Cups coconut, prepared sweetened chopped flaked =( 8oz bags)
3 Cups raisins, washed and stems removed and drained.= (1 lb)
1 Qt chopped nuts ( optional) = (1 lb)
TIP: RECIPE MAY BE CUT IN 1/2
TIP: DATES (CHOPPED) CAN BE SUBSTITUTED FOR THE RAISINS.
TIP: CANDIED CHERRIES, RED & GREEN (CHOPPED) CAN BE USED FOR HOLIDAY BAKING

Steps:

  • 1. Commercial mixer is used in this recipe; Preheat Oven @ 375 a Large 18x26 baking sheet pan "GREASED" or pam sprayed, or use parchment paper lined.
  • 2. Add Ingredients in order Listed into Mixer bowl. Using low speed Mix for 2 min. or til well blended.
  • 3. Drop by 1" scoop onto baking sheet, lined with parchment paper in rows, 4 x 6 across. Bake about 10 minutes. . . til golden on the edges. These freeze well.

These are a slice Chill and bake recipe and a crispy cookie. also great with icing in the center of two cookies. NOTE:You will need a commercial Mixer for this recipe.

3 Lbs - shortening ( crisco) or 1 3/4 qts
18 - eggs, slightly beaten (or 3 1/2 cups)
1/2 Cup - water
6 lbs - granulated sugar ( 3 1/2 qts)
1 1/2 TBS - salt
2 2/4 TBS - baking powder (1 1/4 oz)
1 lb - cocoa ( hersheys) = 1 qt
5 lbs - flour, pastry, or wheat flour (sifted) (cake flour)
- optional: chopped nuts or mini choc chips (2 bags)

Steps:

  • NOTE: You will need a Commercial mixer for these. this is a commercial Foodservice recipe. Preheat Oven: @ 350 Ungreased 18X26 Baker sheet pans
  • Add Ingredients in BIG Mixer in order Listed. Using Beater at Low Speed, mis 1-2 minutes, or til completely blended. Scrape down bowl once during mixing.
  • Divide the Dough in 10 pieces, (about 1 lb 10 oz each)Form into rolls about 2" thick. Wrap in plastic or wax paper and chill at least 3 hrs.
  • Slice each roll into 20 slices. Place in rows on baking sheet 5 X 7. on ungreased Baking sheet or Use Parchment paper for eazy cleanup. Bake 10 min. or until done. remove from pan while still warm. Optional ideas & variations: drizzle with chocolate frosting. This is a delicious, basic old-fashioned molasses cookie. It has the perfect balance of spices and sweetness. The sugary coating gives the cookie a little crunch on the outside, but the inside stays perfectly tender. These molasses cookies are easy to make and filled with fall and winter spices.

3/4 cup(s) shortening, I use 1 stick margarine and 1/2 stick butter
1 cup(s) sugar
1/4 cup(s) heaping, molasses
1 large egg
2 teaspoon(s) baking soda
2 1/4 cup(s) all-purpose flour
3/4 teaspoon(s) ground cloves
1/2 teaspoon(s) ground ginger
1 teaspoon(s) cinnamon
1/2 teaspoon(s) salt

Steps:

  • Cream shortening and sugar.
  • Add molasses; blend well.
  • Add egg and beat until smooth.
  • Sift together flour, soda, salt, and spices.
  • Mix together with wet ingredients.
  • Form into 1" balls.
  • Roll in sugar.
  • Flatten slightly with the bottom of a juice glass dipped in sugar. Place 2" apart on well greased cookie sheet.
  • Bake at 350 degrees for 8-10 minutes. (Watch first batch closely as my oven runs a little hot.) Remove immediately and cool on toweling or wire racks.
