Recipe video above. A classic chocolate self saucing pudding! One batter magically transforms into a moist chocolate cake AND a chocolate sauce. The sauce has the consistency of maple syrup - never watery, never gluggy. This is easy and fast to make. Serve it up straight away otherwise the sauce gets absorbed into the cake!

1 cup (175g) brown sugar (, loosely packed (Note 1))
1/4 cup (30g) cocoa powder (, unsweetened (Note 2))
1 1/4 cups (315ml) boiling water
1 cup (150g) plain flour ((all purpose flour))
2 1/2 tsp baking powder
1/3 cup (70g) white sugar (, preferably caster/super fine but ordinary ok)
1/4 cup (30g) cocoa powder (, unsweetened (Note 2))
Pinch of salt
1/2 cup (125ml) milk
50 g / 4 1/2 tbsp butter (, melted)
1 egg
1 tsp vanilla extract

Steps:

  • Preheat oven to 170C/335F (standard) / 150C/305F (fan forced / convection).
  • Grease a 5 - 6 cup baking dish with butter. (Note 3)
  • Topping: Whisk brown sugar and cocoa in a bowl, set aside.
  • Whisk flour, baking powder, caster sugar, cocoa powder and salt in a bowl.
  • In a separate bowl or jug, whisk together the butter and milk, then whisk in the egg and vanilla.
  • Pour the egg mixture into the flour mixture. Mix until combined - it will be a thick batter.
  • Spread into baking dish. Sprinkle with sugar / cocoa mixture. Shake gently to spread out thinly.
  • Carefully pour the hot water over the back of a dessert spoon all over the top of the pudding - see photo in post or video below recipe. (Note 4)
  • Transfer to oven and bake for 30 minutes, or until the top of the cake springs back when poked lightly. The top will be a bit crusty, like the top of brownies.
  • Remove from oven, stand for just a few minutes (no more!), then serve immediately. (Note 5)

Got this recipe from the "essentially food magazine". It's not the best chocolate self-saucing pudding I've had, but it is so quick and great if you have an after-dinner chocolate craving!!!

2 tablespoons butter, melted
1 cup self-raising flour
3/4 cup sugar
2 tablespoons cocoa
1/2 teaspoon salt
1/2 cup milk
1 teaspoon vanilla essence
1/2 cup brown sugar
1 tablespoon cocoa
2 tablespoons desiccated coconut
1 1/2 cups boiling water
1 piece of baking paper

Steps:

  • In a bowl, combine flour, 2 Tbsps cocoa, salt and 3/4 cup sugar. Stir in milk, melted butter and vanilla.
  • Spoon batter into a microwave ring mold or a microwave-proof casserole dish. Combine brown sugar, 1 Tbsp cocoa and coconut and sprinkle over the batter.
  • Pour hot water gently over the top. Cover with a sheet of baking paper.
  • Cook on HIGH for 6 minutes.
  • Leave to cool for 4-5 minutes before serving.
  • Serve with a little whipped cream or vanilla ice cream, if you like.

Chocolate, not many people who don't like it. This always goes down well, my husband likes it with soft whipped cream on the side. Easy to put together, you should end up with a cake topping and a puddle of sauce underneath that.

1 cup self-raising flour
3/4 cup caster sugar
2 tablespoons good cocoa powder
1/2 cup milk
1 teaspoon vanilla essence
1 ounce melted butter
3/4 cup brown sugar, firmly packed
1/4 cup cocoa powder
1 3/4 cups hot water

Steps:

  • Preheat oven to 350 degrees F.
  • Grease an eight-cup capacity ovenproof dish, not too shallow.
  • Sift the flour, castor sugar and cocoa powder into a large bowl.
  • Combine the milk, essence and melted butter, add this and stir until smooth and combined.
  • Pour this mix into your prepared dish.
  • Combine the brown sugar and the rest of the cocoa powder; sift that evenly over the top.
  • Carefully, with love and a bit of patience, pour the hot water over the pudding mix.
  • Bake for approx 40- 50 minutes, or until the pudding feels firm to the touch.
  • If you want serve it dusted with icing/confectioners sugar.

2/3 cup canola oil

  • preheat oven to 180 Celsius lightly grease a large, deep, baking dish.
  • using an electric mixer, beat all the pudding ingredients together till well combined.

Break through the spongey chocolate topping to reveal a puddle of sauce in this super-simple dessert with Irish cream liqueur

100g butter , melted, plus a little extra for greasing
250g self-raising flour
140g golden caster sugar
50g cocoa
1 tsp baking powder
3 large eggs
200ml Irish cream liqueur , plus extra to serve (optional)
50ml milk
100g milk chocolate , very roughly chopped into chunks
icing sugar , for dusting (optional)
single cream , to serve
200g light muscovado sugar
25g cocoa

Steps:

  • Grease a 2-litre baking dish and heat oven to 180C/160C fan/gas 4. Put the kettle on. Put the flour, caster sugar, cocoa, baking powder and a pinch of salt in a large mixing bowl. Whisk together the eggs, butter, liqueur and milk, then pour onto the dry ingredients and mix together until smooth. Stir in the chocolate chunks and scrape everything into the baking dish.
  • To make the sauce, mix 300ml boiling water from the kettle with the sugar and cocoa, then pour all over the pudding batter - don't worry, it will look very strange at this stage! Bake on the middle shelf of the oven for 30 mins until the surface looks firm, risen and crisp. Dust with icing sugar, if you like. Serve straight away - as you scoop spoonfuls into serving bowls, you should find a gorgeous chocolate sauce underneath. Eat with single cream and extra liqueur, if you like.
