CHOPPED CAPRESE SALAD
Chopped Caprese salad. An easy way to toss together this delicious vegetarian appetizer and perfect for sharing - or for keeping the whole bowl to yourself. Basil gives this a fresh taste and the flavors meld together for a delicious, crowd pleasing dish.

- In a medium bowl, toss together the cut up tomatoes, mozzarella, and basil leaves.
- Add olive oil to bowl, and lightly toss together.
- Drizzle the balsamic vinegar over the top of salad.
- Sprinkle salt as desired.

10 MINUTE CAPRESE SALAD APPETIZER
For those occasions when you're short on time but want an appetizer with some visual pizzazz! The BelGioioso mozzarella pearls are a marvelous little trick that make this appetizer a cinch. This tasty little beauty could be paired with a lovely young Sangiovese wine. Or when in doubt? A nice brut Champagne goes with everything!

Steps:
- Wash and then gently pat tomatoes dry with paper towels. Slice each tomato into halves or thirds depending on how big and what shape they are. Arrange into rows so the tomatoes are slightly overlapping.
- In a small bowl, combine your olive oil and basil paste. Stir until well blended, and then drizzle evenly over tomatoes.
- Pour your vinegar into the same bowl you just used for the basil oil (no need to create more dishes!). Drizzle vinegar lightly and evenly over tomatoes. Give the whole plate a sprinkling of flaked salt.
- Put your mozzarella pearls into a bowl (you could theoretically cut a larger ball of mozzarella yourself but the pre-packaged pearls are a great time saver) and nestle the bowl of mozzarella onto the plate with the tomatoes. Et voila!! A lovely, colorful dish that comes together in a flash.
SIMPLE CAPRESE SALAD
Traditional appetizer, but also makes a great main dish on a hot summer day. Feel free to add cooked eggplant and/or zucchini slices to this dish to make it heartier.

- Cut roasted red peppers into 16 large pieces. Starting at the edge of a serving platter, place a slice of tomato, a basil leaf, a slice of mozzarella cheese, a piece of roasted pepper, and another basil leaf. Continue in that pattern, forming a spiral from the outside in, until all the ingredients have been arranged; salad should end in the center of the platter. Drizzle the salad with olive oil and sprinkle with black pepper and black olives.
