Steps:

  • Lightly Grease a large casserole dish.
  • And Layer these ingredients in the order given:.
  • thin layer of diced raw potatoes.
  • thin layer of diced onions.
  • layer of peas.
  • layer of sausage.
  • ayer of carrots.
  • layer of potatoes.
  • Pour 1 can of tomato soup, mixed with water over top of it, cover, and bake at 350 degree oven, until vegetables are tender.

3 tablespoons butter, divided
2 tablespoons all-purpose flour
3/4 teaspoon dried rosemary, crushed
1/4 teaspoon pepper
1/8 teaspoon salt
2 cups 2% milk
2 cups shredded sharp cheddar cheese
4 cups leftover beef stew
4 medium Yukon potatoes, thinly sliced
1/3 cup crushed butter-flavored crackers (about 8 crackers)
1 tablespoon dried parsley flakes
1/4 teaspoon garlic powder

Steps:

  • Melt 2 tablespoons butter in a large saucepan. Stir in the flour, rosemary, pepper and salt until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until melted., Spoon 2 cups stew into a greased 2-1/2 qt. baking dish. Layer with half of the potatoes and sauce mixture. Layer with remaining stew, potatoes and sauce., Cover and bake at 400° for 45-50 minutes or until potatoes are tender. In a microwave, melt the remaining butter. Stir in the crackers, parsley and garlic powder. Sprinkle over casserole. Bake, uncovered, 5-10 minutes longer or until bubbly and topping is golden brown. Let stand for 10 minutes before serving.

10 medium sliced potatoes
4 carrots, sliced
4 stalks celery, chopped
1 medium onion, chopped
1/2 cup sliced mushrooms
1 (14 1/2 ounce) can diced stewed tomatoes
1/2 cup cracker crumbs or 1/2 cup panko breadcrumbs
1/2 cup water
8 ounces raw ground beef
salt
fresh ground pepper

Steps:

  • Preheat oven 350°F.
  • Layer potatoes, carrots, onions, mushrooms, celery, tomatoes (drain and save juice) and ground beef in a baking dish.
  • Pour juice and water over mixture.
  • Salt & pepper to taste.
  • Sprinkle crackers or Panko bread crumbs over top.
  • Bake covered in preheated oven at 350 degrees for 2 hours.
  • Uncover the last half hour to brown.

2 cups frozen mixed vegetables (from 1-lb bag)
1 jar (12 oz) beef gravy
1/2 teaspoon salt
1 bag (28 oz) frozen potatoes O'Brien with peppers and onions, thawed
2 cups shredded Swiss cheese (8 oz)

Steps:

  • Heat oven to 350°F. Spray 12x8-inch (2-quart) glass baking dish with cooking spray. In 10-inch skillet, cook ground beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in mixed vegetables, gravy and salt. Cook 3 to 4 minutes or until vegetables are thawed and mixture is thoroughly heated.
  • In baking dish, layer 3 cups of the potatoes and 1 cup of the cheese. Spoon ground beef mixture over cheese. Top with remaining potatoes. Cover with foil.

Based on his sketchy explanations and a little research into Eastern European spices, I concocted this hearty and slightly spicy bake with ground beef, paprika, and vegetables like celery and peppers. Great with a glass of red wine!

1 pound ground beef
1 tablespoon olive oil
1 green bell pepper, chopped
1 onion, chopped
1 carrot, shredded
2 celery stalks, chopped
½ tablespoon paprika
½ teaspoon salt
¾ teaspoon black pepper
¼ teaspoon crushed red pepper
1 pinch ground cinnamon
1 pinch ground cloves
¼ cup water
⅛ cup red wine
1 cube beef bouillon
2 tablespoons half-and-half
2 potatoes, peeled and sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a casserole dish.
  • In a skillet over medium heat, cook the beef until evenly brown. Remove beef from skillet, reserving juices, and set aside. Mix in the olive oil, and saute the green pepper, onion, carrot, and celery until tender.
  • Return beef to the skillet, and season with paprika, salt, black pepper, red pepper, cinnamon, and cloves. Stir in the water and red wine until heated through. Dissolve the beef bouillon cube into the mixture. Remove skillet from heat, and mix in the half-and-half.
  • Layer the bottom of the prepared casserole dish with enough potato slices to cover. Place the beef and vegetable mixture over the potatoes, and top with remaining potatoes.
  • Cook, covered, 45 minutes in the preheated oven, or until the potatoes are tender.

I got this recipe from Canadian Living magazine a few years ago. It is a delicious layered casserole combination of creamy mashed potatoes, spinach and squash, that's a great comfort food laced with zingy fresh ginger. I often receive potluck invitatiions with the requests to bring "That layered thing."

8 medium potatoes, about 3 lbs
4 tablespoons butter, at room temperature
1 cup light sour cream or 1 cup regular sour cream
1 teaspoon salt
1 (300 g) package thawed frozen spinach, preferably chopped
2 green onions, sliced thinly
1 egg, lightly beaten
1 (300 g) package frozen cooked squash, thawed
1 tablespoon finely grated fresh ginger or 1/2 teaspoon dried ginger
1 cup grated cheddar cheese

Steps:

  • Peel potatoes, cut in half.
  • Place in a large saucepan and cover with boiling or hot water.
  • Cover saucepan and bring back to the boil.
  • Reduce heat to medium and continue boiling gently, partially covered, until potatoes are very tender, about 20 to 30 minutes.
  • Drain potatoes and mash.
  • Stir in 2 TBS butter, sour cream and 1/2 tsp salt.
  • You should have about 6 cups.
  • Squeeze handfuls of spinach until fairly dry.
  • Coarsely chop if not already chopped.
  • Place in a medium size bowl.
  • Stir in onions, egg,1 TBS butter and 1/4 tsp salt.
  • Drain off any liquid from thawed squash.
  • Stir squash with 1 TBS butter, ginger and 1/4 tsp salt.
  • Preheat oven to 350*F.
  • Butter a large caserole dish that will hold at least 8 cups or coat with cooking spray.
  • Spoon one third of the potato mixture into buttered dish and spread til smooth.
  • Evenly spread with all of the squash mixture.
  • Spread with half of remaining potatoes, then all of spinach mixture.
  • Top with a layer of remaining potatoes, then sprinkle with cheese.
  • Bake uncovered, in center of oven until hot and cheese is lightly golden, from 55 to 65 minutes.
  • To test if hot right through, plunge a table knife into center of casserole and hold for 15 seconds.
  • Then withdraw knife and lightly touch to see if it has become very warm.

Sprinkle beef and corn over potatoes. Combine the soup, milk, garlic powder, pepper, onion and 1/2 cup cheese; pour over beef mixture. , Bake, uncovered, at 400° for 20 minutes or until vegetables are tender.
