Dough for single-crust pie
3 tablespoons butter
4 cups thinly sliced zucchini (about 3 medium)
1 large onion, thinly sliced
2 large eggs, room temperature
2 teaspoons dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
2 cups shredded part-skim mozzarella cheese
2 teaspoons prepared mustard

Steps:

  • Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a large skillet, heat butter over medium heat. Add zucchini and onion; cook and stir until tender. Drain and cool slightly., Whisk eggs and seasonings until blended. Stir in cheese and zucchini mixture. Spread mustard over pastry shell; add filling., Bake on a lower oven rack until a knife inserted in center comes out clean and crust is golden brown, 35-40 minutes. If needed, cover edge loosely with foil during last 15 minutes to prevent overbrowning. Let stand 10 minutes before cutting.

1 pound zucchini, thinly sliced
2 tablespoons butter
1 pie shell (9 inches), baked
1-1/2 cups shredded mozzarella cheese
1 cup ricotta cheese
1/2 cup half-and-half cream
3 large eggs, lightly beaten
3/4 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
Dash pepper
Paprika

Steps:

  • Preheat oven to 350°. In a small skillet, saute zucchini in butter until tender; drain. Place half the zucchini in the crust. Sprinkle with mozzarella cheese. , In a large bowl, combine the ricotta cheese, cream, eggs, salt, oregano, basil, garlic powder and pepper. Pour into crust. Arrange remaining zucchini slices over top. Sprinkle with paprika. , Bake for 45 minutes or until a knife inserted in the center comes out clean.

This zucchini quiche is so darn tasty, so much flavor!!! Everyone always tells me to make this to bring over!

2 c shredded zucchini
1/2 c chopped onion
1 clove minced garlic
5 eggs scrambled
1/2 c parmigiano-reggiano, grated
1 c bisquick
1/2 c vegetable oil
salt & blk pepper
pinch of oregano
2 Tbsp chopped parsley
1/4 c mozzarella cheese shredded

Steps:

  • 1. Preheat oven 350 In one bowl combine eggs, bisquck, parm. cheese, oil, salt & pep. & mix together until mixture is smooth.
  • 2. Add zucchini, onion, garlic, parsley. Once again mix together till well coated. Grease a 9x13 inch pan ( I use a glass one) Pour in pan & bake for 35-40min.
  • 3. when 10min left on your timer take quiche out & sprinkle mozz. cheese on it & cook the remaining time left till cheese is melted & golden let cool off for 1/2hr. & cut in squares & serve

6 bacon strips, diced
