2 cups quick-cooking oats
1 ½ cups whole wheat flour
1 cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon baking powder
½ teaspoon baking soda
⅔ cup peanut butter
½ cup margarine
1 egg
1 small zucchini, peeled and shredded

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine oats, whole wheat flour, brown sugar, cinnamon, baking powder, and baking soda in a large bowl. Stir in peanut butter, margarine, and egg. Add shredded zucchini and mix thoroughly.
  • Drop spoonfuls of cookie dough onto ungreased cookie sheets.
  • Bake in the preheated oven until edges are lightly browned, about 12 minutes. Cool for 3 minutes before transferring to wire racks.

1 1/2 cups all-purpose flour
1/2 cup crunchy peanut butter
1 cup grated unpeeled zucchini
1/2 cup packed brown sugar
1/2 cup sugar
1 teaspoon baking soda
1/2 cup margarine, softened
1 egg, beaten
1 teaspoon vanilla
1 cup chopped roasted peanuts
1/2 cup semi-sweet chocolate chips

Steps:

  • In a large bowl, cream margarine, peanut butter and sugars.
  • Add in egg and vanilla; stir to combine. Stir in zucchini.
  • Add dry ingredients; stir to combine.
  • Stir in nuts and chocolate chips.
  • Cover and chill dough for at least 2 hours.
  • Drop by teaspoonful onto greased cookie sheet.
  • Bake in a 375° oven for 12-15 minutes.
  • Cool on wire rack.
