  • Preheat an oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper or aluminum foil lightly greased with cooking spray.

Nonstick cooking spray
1/2 cup all-purpose flour
Kosher salt
2 large eggs
2 1/2 cups panko breadcrumbs (see Cook's Note)
1/2 cup finely grated Parmesan
1 pound zucchini (2 to 3 small-to-medium zucchini), cut into 3-inch-by-1/4-inch sticks

Steps:

  • Adjust 2 oven racks to the top and bottom thirds of the oven and preheat to 425 degrees F. Put the wire racks in the baking sheets and coat each generously with cooking spray.
  • Combine the flour and 3/4 teaspoon salt in a large re-sealable plastic bag. Combine the eggs and 3/4 teaspoon salt in another large plastic bag; combine the breadcrumbs, Parmesan and 3/4 teaspoon salt in a third large plastic bag.
  • Add about a half of the zucchini sticks to the bag with the flour and use a combination of your hands and shaking the bag to coat the zucchini. Remove the zucchini and shake off any excess flour. Transfer to the egg wash and repeat until coated. (It's less messy if you use only one hand for the dry ingredients and the other for the wet.) Let any excess egg drip off before transferring to the breadcrumb mixture; repeat until fully coated (you'll still see some green and white of the zucchini peeking through the breading). Transfer to the prepared baking sheets and coat the breaded zucchini generously with cooking spray (there's no need to turn them). Repeat with the remaining zucchini.
  • Bake, rotating the baking sheets from top to bottom about halfway through, until golden brown and tender, 25 to 30 minutes. Sprinkle with a little salt and serve warm with your favorite dipping sauces.

1/2 cup milk
Juice of 1 lemon
1/2 cup cornstarch
1 teaspoon kosher salt
2 medium zucchini (1 pound total), cut into 3-by-1/2-inch batons
Sea salt flakes, for sprinkling
2 cups all-purpose flour
2 teaspoons kosher salt and pinch black pepper
1/4 cup cornstarch
2 teaspoons baking powder
One 12-ounce bottle brown ale
1 1/2 pounds cod, haddock or pollock fillets, cut into finger-size strips
Sea salt flakes, for sprinkling
Store-bought tartare sauce
Lemon wedges
1 small bunch of fresh parsley

Steps:

  • Fill a large deep pot halfway with vegetable oil and heat over medium-high heat to 375 degrees F on a deep-fry thermometer.
  • Preheat the oven to 200 degrees F. Place a wire rack on a sheet pan and set aside.
  • For the zucchini fries: Add the milk and lemon juice to a bowl and mix. Add the cornstarch and salt to a separate bowl and mix.
  • Place the zucchini batons first in the milk and then in the cornstarch and toss to coat.
  • Carefully add the zucchini batons to the hot oil in 2 batches and fry until golden brown, about 4 minutes per batch. Remove to the prepared wire rack and sprinkle with sea salt. Keep warm in the oven while you make the fish goujons.
  • For the fish goujons: Place 1/2 cup of the flour in a shallow dish, add 1 teaspoon of the salt and the pepper, then mix.
  • Combine the cornstarch, baking powder, remaining 1 teaspoon salt and remaining 1 1/2 cups flour, then whisk together. Slowly add the brown ale and mix until just combined.
  • Dredge the fish, one piece at a time, in the seasoned flour, shaking off the excess, then dip into the batter, coating well. Lower the fish into the hot oil in 2 batches and cook until golden brown, about 3 minutes per batch, flipping halfway. Remove to a paper towel-lined plate and sprinkle with sea salt.
  • To serve, place the goujons on one end of a platter or board. Remove the fries from the oven and arrange on the other end.
  • Place a ramekin of tartare sauce on the platter, then garnish with lemon wedges and the parsley to serve.

  • 3. In a medium bowl, combine the bread crumbs, salt, and pepper. Place the flour in another medium bowl and the beaten eggs in a smaller bowl.

Zucchini fries are a trendy replacement for the traditional french fry. While most would try to salt zucchini to help remove excess moisture, I found it caused my zucchini fries to burn. I used a spiralizer fitted to my Kitchenaid® and used the larger spiralizer plate.

1 large zucchini, ends trimmed
1 egg
¼ cup melted butter
¼ cup all-purpose flour
1 teaspoon dried oregano
1 teaspoon garlic powder
freshly ground black pepper to taste
1 cup panko bread crumbs
¼ cup freshly grated Parmesan cheese

Steps:

  • Cut zucchini into two or three 3-inch pieces, then spiralize each piece.
  • Whip egg in a shallow bowl until foamy. Carefully pour melted butter into egg and whip until blended.
  • Combine flour, oregano, garlic powder, and pepper in a second shallow bowl. Stir together panko bread crumbs and Parmesan cheese in a third bowl.
  • Dredge zucchini spirals in seasoned flour mixture, shaking off excess flour. Dip spirals in egg wash, allowing excess wash to drip off, and then dredge spirals in Parmesan-bread crumbs. Place on a clean sheet pan.
  • Set air fryer temperature to 400 degrees F (200 degrees C). Set timer for 12 minutes. Transfer breaded zucchini fries into the air fryer basket in batches without crowding. Cook until crispy, about 12 minutes. Serve immediately.

2 small zucchini
1 large egg white
1/4 cup all-purpose flour
3 tablespoons cornmeal
1/2 teaspoon each salt, garlic powder, chili powder, paprika and pepper
Cooking spray
Marinara or spaghetti sauce, warmed

Steps:

  • Cut zucchini into 3x1/2x1/2-in. pieces. In a shallow bowl, whisk egg white. In another shallow bowl, combine the flour, cornmeal and seasonings. Dip zucchini in egg white, then roll in flour mixture., Place zucchini on a baking sheet coated with cooking spray; spray with additional cooking spray. Bake at 425° for 18-22 minutes or until golden brown, turning once. Serve with marinara sauce.

2 tablespoons olive oil
1 zucchini, quartered lengthwise and cut into 1/2-inch pieces
3 tablespoons olive oil
salt and ground black pepper to taste
2 cups bread crumbs, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Drizzle 2 tablespoons olive oil onto the prepared baking sheet; place zucchini slices in the oil. Drizzle 3 more tablespoons olive oil over zucchini slices; season with salt and black pepper. Toss coated zucchini slices with 1 cup bread crumbs.
  • Bake in the preheated oven for 15 minutes. Toss zucchini slices with remaining 1 cup bread crumbs. Return to oven and bake until zucchini is soft and bread crumbs are lightly browned, 15 to 20 minutes.

1 cup panko bread crumbs
3/4 cup grated Parmesan cheese

2 egg whites
¼ cup water
1 cup almond meal
¼ cup grated Parmesan cheese
1 teaspoon Italian seasoning
1 teaspoon ground black pepper
4 zucchini, quartered lengthwise
1 teaspoon chopped fresh parsley

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Pour coconut flour into a bowl.
  • Whisk egg whites and water together in a bowl.
  • Combine almond meal, Parmesan cheese, Italian seasoning, and pepper in another bowl.
