ZUCCHINI GARDEN CHOWDER
Years ago, when my husband and I put in our first garden, a neighbor suggested zucchini since it's easy to grow. Our kids were reluctant to try new things, so I used our squash in this cheesy chowder-it met with solid approval from all of us! -Nanette Jordan, Flint, Michigan

ZUCCHINI GARDEN CHOWDER
This soup is amazing, my all time favorite. I found the recipe in an old Taste of Home magazine. Sometimes I add the cheddar cheese, sometimes I don't. It's delicious either way.

CORN AND CLAM CHOWDER WITH ZUCCHINI AND HERBS
Summer corn and clam chowder is like a clambake in a bowl, emphasizing the sweetness of each ingredient. To give the chowder a somewhat Italian slant and to magnify the corn flavor, a handful of polenta is used to thicken the broth slightly, as is the case with certain Tuscan vegetable soups. Steam your own clams, if possible, or buy chopped clams from the fishmonger.

Steps:
- Set up a clam steamer, or put about 2 inches of water in a large pot with a lid, place over high heat and bring to a boil.
- Steam open clams over high heat, covered. Large clams will take about 12 minutes. When cool, shuck the clams. Strain and reserve all clam broth, leaving any sand or grit in the bottom of the pot. Chop meat roughly and set aside. To save time, do this step in advance. (If using chopped clams, skip Step 1 and 2.)
- Put olive oil in a heavy-bottomed soup pot over medium-high heat. Add onions and celery, season generously with salt and pepper and cook until softened, 5 to 8 minutes.
- Add garlic, red pepper and thyme. Stir and let sizzle briefly, then add polenta and stir to coat. Gradually add the water, stirring constantly with a wire whisk as mixture begins to thicken, then add clam broth and bring to a boil. It should now look brothy and just barely thickened.
- Reduce heat to a simmer and cook for 30 minutes, until polenta grains have softened.
- Add potatoes to pot and simmer until just done, 12 to 15 minutes. Taste soup and adjust seasoning. Add more clam broth, if necessary.
- Add corn and zucchini and simmer 5 minutes until zucchini is tender. Add chopped clams and cook 2 minutes more.
- To serve, ladle soup into individual bowls. Squeeze some lime juice into each portion and top with a dollop of crème fraîche. Sprinkle with parsley and oregano.

Steps:
- 1. Cut 1 TBSP of butter off the stick of ⅓ cup and heat it in a frying pan on medium. Add in the diced onions. Let them cook for a minute or two, then add the zucchini, added a few dashes of salt and pepper. Saute vegetables for about 5 minutes, then turn off the heat.
- 2. While the zucchini is sautéing, begin making a roux (fancy word for white sauce) for your chowder. Open the cans of chicken broth and have them close at hand. Melt the remaining amount of butter in a medium-sized saucepan over medium heat. Add in sage, garlic powder and parsley. When the butter begins to sizzle, add a small amount of the chicken broth (maybe ¼ cup). Let mixture heat back up, then begin adding the flour a little at a time, whisking until smooth. In alternating amounts, add more chicken broth, then flour, until all the flour is added. Add in lemon juice, tomatoes, corn and remaining chicken broth.
- 3. Increase the heat slightly (I had my stove on "6") stirring occasionally. Once mixture looks to be nearly boiling, decrease heat back to medium and add in the cheese. Whisk gently until melted. Add in evaporated milk and the zucchini/onion mixture. Simmer soup for about 10-15 minutes. Serve with additional cheese on top if desired.
ZUCCHINI AND SWEET CORN CHOWDER
This soup is another of my favorites, besides being delicious it is rich in nutrients especially if it is prepared with organic ingredients. Zucchinis are rich in calcium, magnesium, potassium, iron, beta-carotene, vitamin B-complex, vitamin C, vitamin A and vitamin K. They are very low calorie vegetables. Zucchinis skin is an excellent source of dietary fiber and offers some protection against colon cancers. Unlike corn, fresh corn kernels have fewer calories and contain no gluten. Yellow corn kernels contain high levels of B complex, vitamin A, lutin, flavonoids among other important nutrients, and contain a moderate amount of minerals such as zinc, magnesium, copper, iron and manganese. However, corn, in line with rice, potato, etc., is one of the high glycemic index foods, limiting its authority to the main food ingredient in diabetic patients.
