Dough for single-crust pie
3 tablespoons butter
4 cups thinly sliced zucchini (about 3 medium)
1 large onion, thinly sliced
2 large eggs, room temperature
2 teaspoons dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
2 cups shredded part-skim mozzarella cheese
2 teaspoons prepared mustard

Steps:

  • Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a large skillet, heat butter over medium heat. Add zucchini and onion; cook and stir until tender. Drain and cool slightly., Whisk eggs and seasonings until blended. Stir in cheese and zucchini mixture. Spread mustard over pastry shell; add filling., Bake on a lower oven rack until a knife inserted in center comes out clean and crust is golden brown, 35-40 minutes. If needed, cover edge loosely with foil during last 15 minutes to prevent overbrowning. Let stand 10 minutes before cutting.

2 cups shredded zucchini
2 eggs
¼ cup finely chopped onion
1 clove garlic, minced
1 ½ cups buttermilk baking mix
salt and ground black pepper to taste
oil for frying

Steps:

  • In a large bowl, combine zucchini, eggs, onion, and garlic. Blend in baking mix, salt and pepper.
  • Heat 1/2 inch of oil in deep-fryer to 375 degrees F (190 degrees C).
  • Drop batter by spoonfuls into hot oil, and fry until evenly brown and fluffy. Drain on paper towels. Sprinkle with salt before serving.

EASY ZUCCHINI, TOMATO, AND CHEESE TART



Easy Zucchini, Tomato, and Cheese Tart image

1 sheet (half of a 17-ounce package) frozen puff pastry
2 tablespoons olive oil
1 onion, finely diced
2 garlic cloves, minced
2 medium zucchini, quartered lengthwise and thinly sliced
1 (14-ounce) can ready-cut diced tomatoes, well drained
3 large eggs
1 cup grated smoked Gouda
1/2 teaspoon salt
Generous seasoning freshly ground black pepper

Steps:

  • Remove the puff pastry from the package and let thaw at room temperature for about 30 minutes, or until no longer frozen but still cool.
  • Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and garlic, and cook 5 minutes, or until the onion is slightly tender. Stir in the zucchini and saute just until it begins to soften, about 5 minutes. Mix in the drained tomatoes and raise the heat to medium-high. Cook, stirring often, until the zucchini is tender but not mushy and the juices have evaporated. Let cool.
  • Lightly butter a dark-colored 9-inch tart pan with a removable rim or a glass pie plate. On a lightly floured surface, roll the puff pastry into an 11-inch square. Fit it into the tart pan or pie plate. Trim off the overhanging pieces of pastry with scissors. Refrigerate the crust, uncovered, for 15 minutes, or up to 8 hours, covered.
  • Preheat the oven to 425 degrees F.
  • Beat the eggs in a large bowl. Stir in the cheese, salt, pepper, and cooled vegetables. Spoon the mixture into the tart pan. Bake 25 to 30 minutes, or until the pastry is brown and a knife inserted in the center of the tart comes out clean. Remove the outer rim of the tart pan. Let the tart cool on a wire rack for 20 minutes before slicing. It is best to serve this tart very warm rather than piping hot.

1 1/2 lbs zucchini, shredded
1 1/2 teaspoons salt
2 teaspoons vegetable oil
1 small yellow onion, chopped
4 eggs, lightly beaten
1/2 cup ricotta cheese
3 ounces shredded cheddar cheese or 3 ounces mozzarella cheese
1/2 cup fine dry breadcrumb
2 tablespoons chopped parsley
1 tablespoon minced basil or 1 teaspoon dried basil, crumbled
1/4 teaspoon black pepper

Steps:

  • In a large colander, mix the zucchini with the salt and let stand for 20 minutes.
  • Press the zucchini with a wooden spoon to extract the liquid.
  • Heat the oil in a heavy 10-inch skillet over moderate heat.
  • Sauté the onion until soft, about 5 minutes.
  • Preheat the oven to 350°F.
  • In a large bowl, mix the eggs and ricotta.
  • Stir in the zucchini, onion, cheddar cheese, bread crumbs, parsley, basil, and pepper.
  • Pour into a lightly oiled, 1 1/2-quart souffle dish or casserole.
  • *At this point the mixture can be stored.
  • Refrigerate in the tightly covered casserole for up to 12 hours.
  • •Bake, uncovered, until the center is set, 45 to 55 minutes.
  • The mixture will rise slightly.
  • Serve immediately with buttered mixed vegetables and Yeast Corn Rolls.

1 cup milk
1/4-pound (1 stick) unsalted butter
1 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Pinch nutmeg
1 cup all-purpose flour
4 extra-large eggs
1/2 cup grated Gruyere, plus extra for sprinkling
1/4 cup freshly grated Parmesan
1 egg beaten with 1 teaspoon water, for egg wash

Steps:

  • Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment paper.
  • In a saucepan, heat the milk, butter, salt, pepper, and nutmeg over medium heat, until scalded. Add the flour all at once and beat it vigorously with a wooden spoon until the mixture comes together. Cook, stirring constantly, over low heat for 2 minutes. The flour will begin to coat the bottom of the pan. Dump the hot mixture into the bowl of a food processor fitted with the steel blade. Immediately add the eggs, Gruyere, and Parmesan and pulse until the eggs are incorporated and the dough is smooth and thick.
  • Spoon the mixture into a pastry bag fitted with a large plain round tip. Pipe in mounds 1 1/4 inches wide and 3/4-inch high onto the baking sheets. With a wet finger, lightly press down the swirl at the top of each puff. (You can also use 2 spoons to scoop out the mixture and shape the puffs with damp fingers.) Brush the top of each puff lightly with egg wash and sprinkle with a pinch of Gruyere. Bake for 15 minutes, or until golden brown outside but still soft inside.

Crisp Zucchini Blossoms Stuffed With Goat Cheese image

Zucchini blossoms are a thing of wonder. They are great raw, in a salad, with a drizzle of good olive oil, but when they are coated in a crisp batter and stuffed with a light filling, they are an otherworldly experience. To get a good batter that isn't too thick or oily, ensure that your sparkling or soda water is very well carbonated and ice cold. Also take your time with the oil, testing it a few times to get the perfect temperature. Adjust the temperature as you go, making sure the flowers don't color too quickly.

1 tablespoon ground sumac
Boiling water
1/4 cup/50 grams ricotta
3 tablespoons/50 grams soft goat cheese
1 teaspoon finely chopped oregano leaves
2 tablespoons/10 grams chopped walnuts
1 lemon, finely grated to get 1 tablespoon zest, then cut into wedges
Flaky sea salt and black pepper
8 zucchini blossoms
About 1 1/2 cups/350 milliliters sunflower oil, for frying
Scant 1/2 cup/60 grams all-purpose flour (plain flour)
1/8 teaspoon baking soda (bicarbonate of soda)
1/3 cup plus 1 tablespoon/100 milliliters ice-cold sparkling or soda water

Steps:

  • In a medium bowl, cover 3/4 tablespoon of the sumac with 1 tablespoon of boiling water and leave to infuse for 5 minutes. Add both types of cheese, oregano, walnuts, lemon zest, 1/4 teaspoon salt and a generous grind of pepper. Mix well.
  • Fill the flowers by carefully opening them and either spooning or piping about a tablespoon of the ricotta mixture into each, gently pushing the filling all the way to the bottom of each blossom but being careful not to fill them too much; if you can get someone to hold the flower open for you, it would make it much easier. Gently twist the tips of the petals to secure the filling inside and set aside until you're ready to fry.
  • Pour enough oil into a medium (about 8-inch/20-centimeter) nonstick frying pan so that the oil rises about 1 inch/2 centimeters up the sides of the pan. Place on a high heat for 5 minutes and then turn the heat down a fraction.
  • Meanwhile, mix the flour and baking soda together in a medium bowl. Slowly pour in the sparkling water, whisking continuously to form a smooth batter.
  • When bubbles start to surface in the oil, test it by dropping some batter into the oil: if it sizzles, you are ready. (The oil should hover between 320 and 350 degrees Fahrenheit/160 and 180 degrees Celsius.)
  • Lower a zucchini blossom into the batter, turning to coat completely, before carefully placing in the hot oil. Repeat, cooking a few blossoms at a time, adjusting the temperature between batches so they take about 30 seconds on each side to turn a golden brown. Use a slotted spoon to transfer to a paper towel-lined plate and then sprinkle with salt and the remaining 1/4 tablespoon sumac. Serve at once with the lemon wedges alongside.

4 c shredded zucchini
1 c bisquick baking mix (or other brand)
2/3 c chopped onion
1/2 c grated parmesan cheese, shredded
2 Tbsp chopped parsley (or dried, about 1 tablespoon)
1/2 tsp salt
1/2 tsp italian blend spices (or oregano)
2 large cloves garlic, minced
4 eggs, beaten
1/2 c vegetable oil

Steps:

  • 1. In a large bowl, combine all ingredients. ( I like to mix the eggs,oil and Bisquick first and then add the rest of the ingredients for ease of blending) Mix very well. Pour mixture into a greased 8x8 baking pan. (or a 1 1/2 quart baking dish)
  • 2. Bake in a preheated 350 degree oven for 45-50 minutes.

¼ cup melted butter
2 cups cubed zucchini
1 large onion, chopped
1 teaspoon garlic salt
1 egg, beaten
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bread cubes in a medium bowl and pour melted butter over the bread. Add the zucchini, onion, garlic salt and egg; mix well. Transfer the mixture into a 9x13 inch baking dish and top with the cheese.
  • Bake, covered, in preheated oven for 30 minutes. Then uncover the dish and bake for another 30 minutes.

This is one way I like to eat zucchini. It's from the Better Homes & Gardens cook book. I often use half zucchini and half yellow crookneck squash and Ritz for the cracker crumbs.

1 lb zucchini (4 c) or 1 lb crookneck yellow squash, sliced 1/4 (4 c)
1/2 cup sour cream
1 beaten egg yolk
1 tablespoon flour
1/4 teaspoon onion salt
1/8 teaspoon pepper
3/4 cup shredded cheddar cheese
1 egg white
2 tablespoons seasoned dry bread crumbs
1 teaspoon butter, melted

Steps:

  • In medium saucepan, cook zucchini (or squash), covered, in a small amount of boiling water for 3-5 minutes or till tender. Drain well. Spread evenly in 8 x 1 1/2" round baking dish (or 8"square).
  • In a bowl combine sour cream, egg yolk, flour, onion salt, and pepper. Stir in cheese. In a bowl, beat egg white till stiff peaks form (tips stand straight). Fold beaten egg white into sour cream mixture. Spoon atop squash.
  • In a small bowl, combine bread crumbs and melted butter. Sprinkle over egg mixture. Bake in a 350 oven for 20-25 minutes or till golden. Makes 6 servings.
