1/2 teaspoon ground ginger
1/4 teaspoon baking soda

1/2 cup refrigerated or frozen fat-free egg product, thawed
1 1/2 cups shredded carrot
1 medium zucchini, shredded (1 cup)
3/4 cup packed brown sugar
1/2 cup raisins
1/2 cup chopped walnuts
1/3 cup canola oil
1/4 cup unsweetened applesauce
1/4 cup honey
1 teaspoon vanilla
1 package (8 oz) 1/3-less-fat cream cheese (Neufchâtel), softened
1 cup powdered sugar

Steps:

  • Preheat oven to 350°F. In a large bowl, combine flour, baking powder, ginger, baking soda, and salt. In another large bowl, stir together egg product, carrot, zucchini, brown sugar, raisins, walnuts, oil, applesauce, honey, and vanilla. Add carrot mixture to flour mixture, stirring just until combined. Spread batter into an ungreased 13x9x2-inch baking pan.
  • Bake about 25 minutes or until a toothpick inserted in the center comes out clean. Cool completely in pan on a wire rack.
  • For frosting: In a medium mixing bowl, beat cream cheese and powdered sugar with an electric mixer on medium speed until fluffy. Frost bars with frosting. Cut into bars.

2 eggs
3/4 cup packed brown sugar
1/2 cup canola oil
1/4 cup honey
1 teaspoon vanilla
1 1/2 cups shredded carrots
1 cup shredded zucchini
1/2 cup chopped walnuts (optional)
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground ginger
1/4 teaspoon baking soda
1 (8 ounce) package cream cheese
1 cup powdered sugar
1 1/2 teaspoons lemon zest

Steps:

  • Preheat oven to 350 degrees F. In a large bowl, whisk together the eggs, brown sugar, oil, honey, and vanilla. Don't worry about clumps of the brown sugar, those will dissolve as it sits while you prepare the remaining ingredients. Then fold in the carrot, zucchini, and walnuts.
  • In another bowl combine add the flour, baking powder, ginger, and baking soda. Whisk to blend together.
  • Add to flour mixture to the wet mixture. Stir just until combined. Spread batter into a greased 13x9 inch baking pan.
  • Bake about 25 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack.
  • Once the cake is cooled prepare the frosting. In a medium mixing bowl, beat the fosting ingredients with an electric mixer on medium speed until fluffy. Spread or pipe the frosting over the cooled bars.

There appear to be several version of this on the net and the BHG version is the closest I have found to this recipe so it may have originated there.

1 1/2 c all purpose flour
1/2 c brown sugar, firmly packed
1 tsp baking powder
1/2 tsp ground ginger
1/4 tsp baking soda
2 large eggs, beaten
1 1/2 c shredded fresh carrots
1 c shredded fresh zucchini
1/2 c raisins
3/4 c chopped walnuts
1/2 c vegetable oil
1/2 c honey
1 tsp vanilla extract
LIME CREAM CHEESE FROSTING
1 pkg (8 ounces) cream cheese, softened
1 c sifted powdered sugar
1 tsp finely shredded lemon peel
1 tsp finely shredded lime peel

Steps:

  • 1. Preheat oven to 350 degrees. In a large bowl mix together flour, brown sugar, baking powder, ginger, and baking soda. In another bowl stir together eggs, carrot, zucchini, raisins, walnuts, oil, honey, and vanilla.
  • 2. Add carrot mixture to flour mixture and stir just until mixed. Spread batter in an un-greased 9 by 13 inch cake pan. Bake for 25 minutes or until toothpick inserted in center of bar comes out clean. Cool pan on a wire rack and when cool frost with Lemon-Lime Frosting.
  • 3. FROSTING: In a medium mixer bowl combine cream cheese, and powdered sugar. When well mixed and fluffy add lemon and lime peel. Frost bars. Store any leftovers in the refrigerator.

2 small zucchini, grated
1/2 cup butter, melted
3 tablespoons milk
2 eggs
4 cups powdered sugar
1 oz cream cheese (from 3-oz package)
1 to 2 tablespoons milk
1 teaspoon vanilla
1 pint (2 cups) fresh raspberries
Fresh mint leaves

Steps:

  • Heat oven to 350°F. Line bottom of 15x10x1-inch pan with parchment paper or spray with cooking spray. In large bowl, stir together bar ingredients until well mixed. Spread in pan.
  • Bake 15 to 20 minutes or until golden brown and toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In large bowl, beat together frosting ingredients with electric mixer on medium speed until smooth. If needed, add more milk to make a spreadable consistency. Spread over cooled bars. Cut into 2x1-inch bars. Garnish with raspberries and mint leaves. Store in refrigerator.

This is a recipe I came up with myself after getting sick of on the run meals and I wanted to make something that would keep well during the day and energize me--while also giving me the fiber, veggies, and nutrition I need. A bar for quick snack to tide you over or even a few "bars" for a meal replacement. Obviously I like being healthy, so if you like the bread bar sweeter then use 3/4 cup of both brown and white sugar. This is good served warm with a slice of fat free cream cheese, cottage cheese, or even honey.

1 extra large egg (or 2 egg whites)
1/2 cup brown sugar, tightly packed
1/2 cup sugar, tightly packed

2 cups zucchini, grated
1 cup carrot, grated
2 cups whole wheat flour

Steps:

  • Preheat the oven to 350 degrees F. Spray a cake pan (9x13) with nonstick cooking spray.
  • Mix together milk with lemon juice. Set aside for 5 minutes.
  • Beat egg well, then add brown sugar, sugar, oil and beat together again. Add in vanilla, zucchini, carrots, cranberries and the milk and lemon mixture. Mix together well.
  • Put the flour, cinnamon, baking soda, salt and nuts if you added any in another bowl. Mix them together.
  • Add the dry mixture with the wet mixture, mix together until just combined. Spoon the mixture into the oiled pan and sprinkle some cinnamon sugar mixture onto the top if desired.
  • Bake for about 35-40 minutes or until wooden stick inserted into the middle comes out clean and the bars are not sticky in the middle.
  • Turn off the oven but don't open the oven or take the pan out, just leave it in there for 5 minutes if you like the outside crispy. Don't overbake, they become really dry and hard.

2 cups shredded zucchini, unpeeled
1 small carrot, shredded
3/4 cup rolled oats
1 cup chopped walnuts
1 cup butter, softened

3 teaspoons vanilla
5 cups confectioners' sugar
1 (8 ounce) package cream cheese, softened

Steps:

  • Set oven to 350 degrees.
  • Grease a 15 x 10-inch jelly roll pan or cookie sheet, and line with parchment paper.
  • In a large bowl, beat the eggs oil, vanilla and sugar until smooth (about 2 minutes).

1 C shredded zucchini (about 2 small zucchinis)
1/2 C chopped pecans (optional) **I sprinkled them on top of the frosting instead of adding them to the bars
1 1/2 C flour
1 tsp baking powder
1/2 tsp ground ginger
1/4 tsp baking soda
1/4 tsp salt
Frosting
8 ounces reduced fat cream cheese, room temperature
1 C powdered sugar
zest of one lemon
pinch of salt

Steps:

  • 1. Preheat oven to 350 degrees and lightly spray a 9×13 pan with nonstick spray. 2. In a large bowl, whisk together the eggs, brown sugar, oil, honey and vanilla until smooth. Switch to a rubber spatula and mix in the carrot, zucchini and pecans. Add all the dry ingredients and mix together just until they are incorporated. Pour into your greased pan and bake for 22-25 minutes, until the top springs back when lightly touched. Cool completely on a wire rack before frosting. 3. Prepare the frosting by beating together all the ingredients until well blended. You can frost the whole pan before cutting to make it easy, but I really like cutting the bars first and individually frosting each bar.
