8 medium zucchini, sliced 1/2 in. thick
2 (16 ounce) cans s&w Italian stewed tomatoes
1 lb bacon, chopped
1 large onion
garlic clove
olive oil
thyme
oregano
basil
marjoram

Steps:

  • Cook chopped bacon until done, but not crispy.Drain and set aside.
  • Saute sliced zucchini in large skillet, tossing in chopped onion, at the last moment adding crushed garlic cloves.
  • Transfer to 6-8 qt pot, adding bacon and canned tomatoes, seasonings and more garlic, plus just enough water to make sure everything is covered. C over and cook over medium-low heat until zucchini is tender, keeping an eye on the fluid.
  • Optional: Top with parmesan or grated mozzarella.

This is a basic recipe for zucchini. Zucchini, because it is so abundant in summer, produces lots of recipes for "how to get rid of it". This one is for enjoying it for its own sake. The amounts for each ingredient are very flexible. Use your own judgement. It's hard to go wrong. Gardeners can avoid a glut of zucchini by harvesting it at its best, about the time the blossom drops from the fruit.

3 tablespoons olive oil
4 small zucchini
1/2 medium onion
1 medium tomatoes
fresh basil or dried basil, to taste
1/4 teaspoon crushed red pepper flakes, to taste
salt
parmesan cheese

Steps:

  • Cut the zucchini in bite size pieces.
  • Chop the onion.
  • Dice the tomato.
  • Heat the olive oil in a heavy skillet.
  • Saute the zucchini and onion until tender and lightly browned, about 20 minutes.
  • Add the rest of the ingredients and cook until the juices thicken a little, about 5 or 10 minutes.
  • Serve with grated parmesan cheese.

ZUCCHINI TOMATO PIE

The pairing of tomatoes and zucchini is delicious in so many dishes and this pie approach I modified from a Bisquick recipe site is one more way to bring life to them when they're out of season. Important in this dish to drain and blot tomatoes so pie doesn't become watery.

1 c chopped zucchini
1 c chopped tomato, drained and blotted dry
1/2 c chopped green onions
3/4 c grated parmesan cheese
1 c bisquick
3/4 c milk
3 eggs
1 tsp no-salt lemon pepper
1 tsp garlic powder
1 tsp oregano
1-2 tsp sugar
1/2 tsp salt

Steps:

  • 1. Heat oven to 400°F. Lightly grease bottom and side of 9-inch pie plate.
  • 2. Combine chopped zucchini, tomato and onion in a bowl, and mix well with cheese. Spread in pie plate.
  • 3. Stir together remaining ingredients with fork until blended. Pour over veggies in pie plate.
  • 4. Bake about 35 minutes or until knife inserted in center comes out clean. Cool at least 10 minutes.

4 courgettes or 4 zucchini, medium
2 small onions
2 garlic cloves
3 ounces black olives
4 mint leaves
2 basil leaves, large
1 sprig parsley
1 lemon, juice of
1/2 teaspoon thyme
1/3-1/2 cup creme fraiche
salt
pepper

Steps:

  • Cut the courgettes into 1/2" thick slices.
  • Cook them in simmering salted water for 15 minutes.
  • During this time, take the pips out of the olives, and chop them up with the onions, garlic, mint, basil and parsley.
  • Drain the courgettes as soon as they are soft and mashable.
  • Blend the herb/onion mixture with the courgettes.
  • Let cool. When it's cool, whizz it up in a processor, or press it through a food mill.
  • Add the fresh lemon juice and the thyme.
  • Salt and pepper this, according to your own taste, but making sure there is enough of this seasoning to bring out the flavor of the food.
  • At the last minute, add the liquid creme fraiche, using a whisk to blend and get the right consistency (spreadable - dippable).
  • Keep this cool and serve with toast fingers or sliced French bread.

6 medium zucchini, diced (about 6 cups)
4 tablespoons butter, melted
2 medium tomatoes, diced
1 cup shredded cheddar cheese
1 cup Velveeta
1 cup soft bread crumbs
2 large eggs, beaten
2 tablespoons dried minced onion
3 tablespoons minced fresh parsley or 1 tablespoon dried parsley
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large skillet, saute zucchini in 2 tablespoons butter until crisp-tender; drain well. In a bowl, combine the remaining ingredients. Stir in the zucchini and remaining butter. Transfer to an ungreased 2-qt. baking dish. Bake, uncovered, at 350° for 25-30 minutes or until bubbly. Let stand for 10 minutes before serving.
