GARLIC KALE AND BROWN RICE SALAD WITH ZIPPY LEMON DRESSING

Steps:
- Pulse all the dressing ingredients ( first 7 ) in a food processor until smooth.
- Heat the oil in a large skillet over medium high heat. Add the kale and saute until wilted to about half of the original volume.
- Add the brown rice and stir-fry for a few minutes together with the kale until everything is heated through.
- Add the dressing into the pan (start with about half of it) and toss to combine.
- Just before serving (can be served hot or cold), toss with the chips. Top with dried cranberries

- 1. In a medium mixing bowl, add all the ingredients together; whisk until well blended.
- 2. Cover and refrigerate for at least 3 hours.
- 3. Note #1: If you want to use fresh garlic, keep in mind that garlic flavor will intensify as it sits.
- 4. Note #2: Increase or decrease the amount of buttermilk for your purposes. For example if you want to use it as a dip for chicken wings, don't go over a 1/4 cup. If you want to use as a salad dressing, increase volume to your liking.

- Combine first 3 ingredients in saucepan gradually add the cold water.
- Cook and stir over med heat til thickens.
- Remove from heat, Cover with paper towel, to keep skin from forming.
- Cool to lukewarm, about 10 minutes.
- Beat in remaining ingredients with whisk.
- Transfer to container with lid.
- Chill.

- Place vinegar, water, tomato paste, oil, green onion, parsley, sugar, paprika, basil, thyme, lemon juice, pepper, garlic powder and salt in a blender container. Cover and blend at medium speed for 1 minute or until smooth. Pour into a jar with a tight-fitting lid. Cover and let stand for 30 minutes to develop flavor.Shake before using. Serve over Chicken Topopo Salad or on mixed salad greens or cottage cheese.
