2 cups fresh broccoli florets
2 cups cauliflower, chopped
1 red onion, sliced in rings
½ cup zesty Italian dressing
¼ cup sunflower seeds

Steps:

  • In a mixing bowl, combine the broccoli, cauliflower, onions and dressing. Toss, cover and refrigerate. Sprinkle with sunflower seeds before serving.

Light and refreshing Italian-themed summer salad that replaces pasta with cauliflower. I typically make my own salad dressing but found that olive oil solidifies when refrigerated and bottled dressing works best in this. It also adds a ton of flavor, cutting down on the ingredient list. This is a great side dish for a summertime BBQ or picnic. Serve cold or at room temperature.

1 medium head cauliflower, cut into small florets
1 small red onion, sliced
½ cup Italian-style salad dressing
12 grape tomatoes, halved
1 (14 ounce) can quartered artichoke hearts, drained
½ cup sliced Kalamata olives
½ cup mild banana pepper rings
8 ounces small fresh mozzarella balls (such as BelGioioso®)
4 ounces Genoa salami, chopped

Steps:

  • Place cauliflower, onion, and salad dressing in a large bowl. Stir to coat. Cover and marinate for 30 minutes.
  • Add tomatoes, artichoke hearts, olives, banana peppers, mozzarella balls, and salami; stir to combine.

Cauliflower wings & zesty lentil salad image

Toss cauliflower florets in a hot sauce and serve with lentils and salad leaves to make this healthy, flavourful and nutrient-packed dinner

1 tbsp olive oil, plus extra for the baking sheet
75g plain flour
1 tbsp paprika
200g low-fat natural yogurt
265g cauliflower florets
25-50ml hot sauce (depending on how much heat you prefer)
2 tsp honey
1 lime, zested and juiced
150g salad leaves
250g lentils, cooked

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Oil and line a baking sheet with non-stick baking parchment. Put the flour, paprika and a big pinch of salt in a bowl and whisk in the yogurt and 50ml water until you have a smooth batter. Toss in the cauliflower florets until coated and spread out in an even layer on the baking sheet.
  • Bake for 20-25 mins, tossing halfway through, until crisp and golden. Put the hot sauce and 1 tsp of the honey in a pan to heat up, toss the cauliflower in the mixture, put back on the tray and cook for about 5-8 mins more.
  • Meanwhile, whisk together most of the lime zest and all the juice, the remaining 1 tsp honey and 1 tbsp olive oil in a large bowl, and toss in the salad leaves and lentils. Divide between two plates and top with the cauliflower wings and the remaining lime zest, if you like.

2 tablespoons grainy mustard
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice

2 celery stalks, thinly sliced

Steps:

  • While cauliflower is steaming, combine sour cream, mustards, and lemon juice in a large bowl; season with salt and pepper.
