CREAMY OVEN BAKED MASHED POTATOES

- Boil the potatoes in a large pot of water until tender. Drain, transfer to a large bowl and mash. Add all of the other ingredients and beat with an electric mixer until fluffy. Transfer the potatoes to a large, buttered casserole dish. Top with dots of butter, chopped chives and paprika.
- Preheat the oven to 350 degrees F. Bake the potatoes for 15 minutes, or until they begin to brown on top.

CHEESY BAKED MASHED POTATOES

- Preheat oven to 350°F. Grease a 9×13 baking dish with 2 tablespoons of butter, set aside.
- Place the potatoes in a large pot and fill with water until just covered.
- Bring the potatoes to a boil. Reduce heat to a low boil and cook for 20 minutes, until the potatoes are tender.
- Drain the potatoes and place them into a large bowl. Mash the potatoes using a hand masher.
- Add in the remaining 1/2 cup butter, cream cheese, sour cream, 1 1/2 cups grated cheddar cheese, salt, pepper, garlic powder, and egg.
- Using a hand mixer, beat the potatoes until all the ingredients are combined, and potatoes are creamy.
- Spread the potatoes into the prepared pan.
- Cover with foil and bake for 40-45 minutes, or until heated through.
- Garnish with chives and/or bacon if desired.

- 1. Place hot potatoes in a large mixing bowl. Beat potatoes with electric mixer until smooth. Add all ingredients and continue beating until thoroughly mixed. Pour into greased 13 x 9 baking dish. Bake uncovered for 25 minutes at 400 degrees. Top with shredded cheese. Bake 5 more minutes.

- Place potatoes in a pot with enough water to cover. Bring to a boil; cook until tender, about 15 minutes.
- Meanwhile, combine cilantro and jalapeno in a food processor. Process until finely chopped, about 30 seconds. Add sour cream and cream cheese. Blend for another 30 seconds.
- Drain potatoes and transfer to a bowl. Mash with a potato masher. Beat in jalapeno mixture and butter. Season with salt.
