Here's another quick and easy zip 'n steam recipe from Zip Lock. These are so fast and taste wonderful. I fix these about every other week for my family.

Steps:
- Combine all ingredients except chives and sour cream into medium or large zip 'n steam bag.
- Shake to mix ingredients and place bag in microwave.
- Cook on full power for 7 minute or until tender.
- Allow bag to sit in microwave for 1 minute before handeling.
- Gently shake to distrubute seasonings.
- Carefully open bag and remove contents.
- Sprinkle with 1 tbs chopped chives.
- Add salt and pepper to taste.
- Serve with sour cream if desired.

This recipe came from my cousin. Our family loves homemade mashed potatoes any way you fix them, and this is one of the many ways we enjoy them. Prep time does not include cook time for the potatoes.

- Add onions, salt and pepper.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender but firm, about 15 minutes; drain.
- In a large bowl, mash potatoes with the butter and milk. With a hand mixer, beat in cream cheese and onion. In a small bowl, beat the egg with a little bit of the mashed potatoes. Stir into potatoes, and season with salt and pepper. Transfer to a 2 quart casserole dish.
- Bake 1 hour in the preheated oven, or until puffy and lightly browned.

These are my absolute favorite mashed potatoes! I usually use red potatoes, but I don't know the exact amount. I kind of eyeball it. I like it better with the baking potatoes, but my boyfriend prefers the red ones.

- Place hot potatoes into a large bowl. Start mixing the potatoes at medium speed until they are smooth. Add sour cream, cream cheese, butter, milk, garlic, salt, and pepper and continue beating until thoroughly mixed.
- Pour into a greased 9x13-inch baking dish. Bake, uncovered, for 30 min at 400ºF.

LAO NAI YANG YU (CHINESE SPICY MASHED POTATOES)
This is a dish our family likes to order in Kunming. The name literally means "Old granny potatoes" because it's well-suited to people who have no teeth. I've never seen how it's made, but I found the following description at http://www.etours.cn/china_city_guide/yunnan_travel_guide/dining/kunming_food.php : "Making method is very simple and popular for people of all ages. In fact we can think of it as a kind of mashed potato stir-fried with vegetable oil, chopped shallot and onion, and sliced green pepper and hams and so on. Assistant materials are added according to individual taste." With that description and my own memory of the dish to go on, here's a recipe!

Steps:
- Peel potatoes, and dice into 1-inch cubes.
- Boil potatoes in water for 10 minutes or until done. Drain water.
- Mash potatoes briefly with a hand masher--there should still be a lot of large lumps.
- Heat empty wok over highest heat until you can see heat rise from the surface.
- Add peanut oil and swirl in wok for a moment until heated.
- Add garlic cloves and chilies and toss in oil for a moment until fragrant. If the garlic starts to brown before you get the other ingredients added, move off heat for a moment.
- Add green onions, fennel, chili paste, and salt and stir-fry for a moment until ingredients are fully combined and green onion is wilted. (The fennel of Yunnan has only leafy green parts, no bulb, so it resembles dillweed.).
- Add potatoes, stir-fry until ingredients are thoroughly combined and potatoes are heated through.
- Serves 4 as part of a Chinese meal (a couple of meat dishes, a green vegetable, lao nai potatoes, a soup, and white rice).
