1/2 yellow onion, diced
1 (12 ounce) package frozen chopped spinach (thawed, drained and squeezed dry)
1 (8 ounce) jar marinated artichoke hearts
1 tablespoon olive oil
1 (12 ounce) package firm silken tofu (I dig Mori-Nu)
1/2 cup nutritional yeast flakes
3 garlic cloves
2 -3 tablespoons apple cider vinegar
1 teaspoon dried basil
1 teaspoon dried parsley
1/4 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 350°F.
  • Saute onion, spinach and artichoke hearts in olive oil until onion is soft, about 6 minutes.
  • Blend together tofu, nutritional yeast, garlic, vinegar and spices in blender until mixed and smooth.
  • Combine all ingredients.
  • Taste and add extra seasonings and nutritional yeast, as needed.
  • Smooth into non-stick baking dish and bake for 15-20 minutes, or until lightly browned on top.
  • Serve warm with bread or tortilla chips. Enjoy!

I planned to post this recipe a day or so ago; however, life got in the way. So, I am going to post this with a final photo to get it out the door. If you are looking for a great dip that can be assembled quickly and taste awesome, look no further... I could eat this stuff out of the bowl with a spoon. So, you ready... Let's...

PLAN/PURCHASE
8 oz cream cheese, softened
1/2 c mozzarella cheese, freshly shredded, divided
1/4 c sour cream
1/4 c parmesan cheese, grated
2 clove garlic, minced
6 oz marinated artichoke hearts, drained & chopped, 1 jar
5 - 6 oz chopped spinach, frozen variety, thawed and drained
salt, kosher variety, to taste
black or white pepper, freshly ground, to taste
OPTIONAL ITEMS
a bit of cayenne pepper, for kick
a drop or two of hot sauce, i prefer frank's
sliced black olives, mixed in, or used as a garnish

Steps:

  • 1. PREP/PREPARE
  • 2. You will need an ovenproof dish to make this recipe. Something you can bake in and take directly to the table. Just make sure everyone knows that it will hot, hot, hot.
  • 3. This dip is a bit thicker than most, so I would not suggest just dipping a chip into it because you will wind up with a lot of broken chips. Instead, have each guest spoon off a bit onto their plates, break it up slightly, and then proceed to scoop it up.
  • 4. Gather your ingredients (mise en place).
  • 5. Drain and chop the artichokes, and defrost the chopped spinach, then allow them to drain on a couple of paper towels. Place a rack in the middle position, and preheat the oven to 355f (180c) In a mixing bowl, combine the cream cheese, sour cream, parmesan cheese, 1/4 cup of the mozzarella, minced garlic, and some salt and pepper, to taste
  • 6. Make sure that the cream cheese is softened.
  • 7. With all the cheese, this dish is already going to be a bit salty, so take care with the salt.
  • 8. Carefully fold in the artichoke hearts and spinach. Lightly oil or butter a small baking dish. Place into the baking dish and sprinkle the top with the remaining 1/4 cup of shredded mozzarella. Place in the preheated oven and bake until the dish is bubbly, and the top begins to brown, about 20 - 25 minutes.
  • 9. Once it begins to brown, it is a quick step from brown-to-black, so keep an eye on it.
  • 10. PLATE/PRESENT
  • 11. Serve hot with chips, toasted bread, whatever you fancy. Enjoy.
  • 12. Keep the faith, and keep cooking.

1 (16 ounce) package frozen pizza dough, thawed
1 egg, beaten
2 sticks kraft mozzarella string cheese or 2 sticks polly-o mozzarella string cheese
2 sliced ripe olives
1 cup BREAKSTONE'S Reduced Fat Sour Cream or 1 cup KNUDSEN Light Sour Cream
1/4 cup kraft lite ranch dressing
1 (10 ounce) package frozen chopped spinach, thawed, well drained
1 green onion, sliced
1/2 cup finely chopped red pepper
1/4 cup Kraft® Grated Parmesan Cheese
1/4 teaspoon ground black pepper
wheat thins crackers, original snacks

Steps:

  • Pat dough into 12x16-inch oval on baking sheet sprayed with cooking spray. Indent dough, about 3 inches from one end of oval, for the mummy's head. Let rise in warm place 20 minutes or until doubled in volume.
  • Heat oven to 375°F Brush dough with egg. Bake 18 to 20 minutes or until golden brown and sounds hollow when tapped lightly. Pull apart string cheese to make about 16 strips; arrange on bread for mummy's wrappings. Bake 1 to 2 minutes or just until cheese is melted; cool slightly. Press olives into bread for the mummy's eyes; cool completely.
  • Meanwhile, mix sour cream and dressing in medium bowl until well blended. Stir in next 5 ingredients. Refrigerate 30 minutes or until ready to serve.
  • Use sharp knife to remove bread from top of mummy's body; scoop out bread from center leaving a thin shell on bottom and sides. (Reserve bread top. Discard removed bread or reserve for another use.) Fill bread with spinach dip just before serving; cover with top of bread. Serve with WHEAT THINS.

1 (16 ounce) container sour cream
¾ cup mayonnaise
3 green onions, chopped
1 (1 ounce) package dry vegetable dip mix
1 (8 ounce) can water chestnuts, drained and chopped
2 teaspoons prepared Dijon-style mustard

Steps:

  • In a medium bowl, mix together chopped spinach, sour cream, mayonnaise, green onions, dry vegetable dip mix, water chestnuts and prepared Dijon-style mustard. Chill in the refrigerator 8 hours, or overnight, before serving.

1 c mayonnaise
1 c sour cream
1 pkg vegetable soup mix
1 can(s) water chestnuts (8 oz.) chopped
1 small green onion, chopped

This recipe came about for 2 reasons. My parents have sensitivies to dairy products, and I couldn't find any Leek Soup mix at my local grocery store So I came up with my own herb mix. It can easily be made Vegan by using a Veganaise instead of Mayo.

1 cup mayonnaise
1 tablespoon dried dill weed

2 tablespoons finely minced red onions
salt and pepper
2 (10 ounce) packages frozen spinach, defrosted

Steps:

  • Mix the Tofutti Sour Cream and mayonaise until combined.

  • Press and drain the spinach.
