8 boneless chicken breasts
1 jar dried beef
8 strips of bacon
16 oz. sour cream
2 cans cream of chicken soup

Steps:

  • Lightly grease 9x13 glass casserole dish and line with dried beef.
  • Wrap bacon around chicken breasts and lay on dried beef.
  • Mix sour cream and chicken soup together and pour over chicken.
  • Cook for 1 hour at 350 degrees or until tender.

4 chicken breasts, pounded to an even thickness
homemade seasoned salt (see notes for recipe) and pepper
extra virgin olive oil
1 Tablespoon minced shallot
3oz prosciutto, chopped
3 cloves garlic, minced
1 cup low-sodium gluten-free chicken broth
2 Tablespoons butter or ghee
2 Tablespoons capers (Mezetti are GF)
Squeeze fresh lemon juice

Steps:

  • Heat a large skillet over medium-high heat then spray with nonstick spray. Season chicken breasts on both sides with seasoned salt and pepper then saute for 3-4 minutes on each side, or until cooked through. Remove chicken to a plate then tent loosely with foil and set aside.
  • Turn heat down to medium (remove skillet from heat to cool for a couple minutes if using a cast iron skillet like the one pictured,) then add a drizzle of extra virgin olive oil to the skillet. Add shallots then saute until golden brown, 1 minute. Add prosciutto then saute until crisp, 3-4 minutes. Add garlic then saute for 30 more seconds. Add broth and butter then simmer until sauce has reduced and slightly thickened, 3-4 minutes. Add capers and a squeeze of fresh lemon juice, then plate chicken and serve sauce on top.

6 boneless, skinless chicken breasts (about 3 1/2 pounds)
4 envelopes Italian dressing mix
2 tablespoons vegetable oil
2 tablespoons unsalted butter
1 pound white mushrooms, sliced
Kosher salt
One 10 3/4-ounce can cream of mushroom soup
6 ounces cream cheese
3/4 cup dry white wine
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat the chicken breasts in the dressing mix.
  • Heat the oil in a large nonstick skillet over medium-high heat until very hot. Add the chicken and cook undisturbed until well browned, about 4 minutes. Turn the chicken, add the butter to the pan, and cook until the chicken is just golden brown on the reverse side, 3 minutes more. Transfer the chicken to a large baking dish.
  • To the skillet, add the mushrooms and a pinch of salt; cook, stirring occasionally, until golden brown, about 5 minutes. Spoon the mushrooms on top of the chicken.
  • In a medium saucepan combine the soup, cream cheese and wine. Stir over medium-high heat until well blended and heated through. Pour the sauce over the chicken and mushrooms.
  • Bake, uncovered, until the chicken is cooked through, 1 hour. Sprinkle with parsley and serve.

I made this up when I wanted something easy, different but not exotic for a dinner party. My family all love it. Make sure you use a smoked type ham. Honey ham just doesnt taste as good. Enjoy!

6 boneless skinless chicken breasts
12 slices of thin provolone cheese
6 slices thin hickory smoked ham (from the deli)
breadcrumbs
dried parsley (or fresh)
garlic powder
salt
pepper
basic spaghetti sauce (I use the jar stuff)

Steps:

  • Place each chicken breast between 2 sheets of plastic wrap and pound them to about 1/2 inch thick Place 2 slices of cheese and one slice of ham over the"wrong" side (the part without the shiny membrane) of the chicken.
  • Roll it up as tight as you can, it doesnt have to be perfect, and"stitch" it shut with a toothpick.
  • Mix your breadcrumbs with the parsley, garlic powder, salt& pepper.
  • Roll the chicken in the crumbs, make sure everything is coated.
  • Pour your sauce in an appropriate sized baking dish and place the chicken on top.
  • Bake in a 375 degree oven for about 40 minutes, or until chicken is cooked through.

6 slices bread, crusts removed
4 cups cubed cooked chicken
1/2 pound fresh mushrooms, sliced
6 tablespoons butter, divided
1 can (8 ounces) water chestnuts, drained and chopped
1/2 cup mayonnaise
6 slices Monterey Jack cheese
4 slices process American cheese
3 eggs
1-1/2 cups milk
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2/3 cup dry bread crumbs

Steps:

  • Place bread in a greased 13-in. x 9-in. baking dish. Top with chicken. In a skillet, saute mushrooms in 2 tablespoons butter until tender. , Using a slotted spoon, place mushrooms over chicken. Combine water chestnuts and mayonnaise; spoon over mushrooms. Top with cheeses. Beat eggs and milk; pour over cheese. Combine soups; spread over top. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 1 hour. Melt remaining butter; toss with bread crumbs. Sprinkle over the casserole; bake 10 minutes longer.

4 skinless, boneless chicken breast halves
¼ cup all-purpose flour
½ teaspoon salt
ground black pepper to taste
1 tablespoon olive oil
1 ½ teaspoons butter
½ cup sliced fresh mushrooms
4 green onions, chopped
1 clove garlic, finely minced
⅓ cup unsweetened apple juice
2 tablespoons lemon juice
1 teaspoon white sugar

Steps:

  • Pound the chicken breast halves flat and to about 1/2 inch thick. Cut the flattened chicken breasts into several large pieces.
  • Place the flour, salt, and pepper into a plastic bag, and drop the chicken pieces into the bag. Shake gently to coat the chicken thoroughly with flour mixture.
  • Preheat an oven to 325 degrees F (165 degrees C). Grease an 8x8 inch baking dish.
  • Heat the olive oil and butter in a large skillet over medium heat, and brown the coated chicken pieces on each side until golden brown, about 5 minutes per side. Place the chicken pieces into the prepared baking dish, leaving the oil and butter in the skillet. Cook and stir the mushrooms, green onions, and garlic in the hot skillet until the mushrooms give up their juice and start to brown, about 10 minutes. Spread the cooked vegetables over the chicken pieces.
  • Pour the apple juice, lemon juice, and sugar into the skillet, stir to dissolve the sugar, and bring the mixture to a boil. Pour the sauce over the chicken and vegetables, cover the baking dish with foil, and bake in the preheated oven until the sauce has reduced and the chicken has absorbed the sauce, about 1 hour.

1 whole chicken, cut up
4 -5 medium potatoes, peeled & cut in 1/2 lengthwise
2 (10 3/4 ounce) cans cream of mushroom soup
1 medium onion, sliced
2 -3 cups shredded cheddar cheese
salt and pepper

Steps:

  • Peel potatoes and slice in half lenthwise. Lay flat side down in a 9 x 13 lightly buttered pan sprinkle with salt and pepper and sliced onions.
  • Season chicken pieces the way you like and brown lightly in a large fry pan. Lay chicken pieces on top of potatoes spread the soup over chicken and follow with the shredded cheddar cheese.
  • Bake at 350 for 1-1/2 to 2 hours. You may need to cover with foil after the first 1 hour if top browns to quickly.
