Number Of Ingredients 10

4 chicken breasts, pounded to an even thickness
homemade seasoned salt (see notes for recipe) and pepper
extra virgin olive oil
1 Tablespoon minced shallot
3oz prosciutto, chopped
3 cloves garlic, minced
1 cup low-sodium gluten-free chicken broth
2 Tablespoons butter or ghee
2 Tablespoons capers (Mezetti are GF)
Squeeze fresh lemon juice

Steps:

  • Heat a large skillet over medium-high heat then spray with nonstick spray. Season chicken breasts on both sides with seasoned salt and pepper then saute for 3-4 minutes on each side, or until cooked through. Remove chicken to a plate then tent loosely with foil and set aside.
  • Turn heat down to medium (remove skillet from heat to cool for a couple minutes if using a cast iron skillet like the one pictured,) then add a drizzle of extra virgin olive oil to the skillet. Add shallots then saute until golden brown, 1 minute. Add prosciutto then saute until crisp, 3-4 minutes. Add garlic then saute for 30 more seconds. Add broth and butter then simmer until sauce has reduced and slightly thickened, 3-4 minutes. Add capers and a squeeze of fresh lemon juice, then plate chicken and serve sauce on top.

Close as I can find to our favorite recipe in college, very easy and sooooo good! You can add vegetables too for a one dish meal, or double the amount and add 1 can each cream of celery and cream of chicken soup.

4 -6 boneless skinless chicken breast halves, uncooked
4 -6 slices swiss cheese
1 (10 3/4 ounce) can cream of celery soup, undiluted
1/3 cup water or 1/3 cup dry white wine
2 cups herb stuffing mix
1/3 cup butter, melted

Steps:

  • Preheat over to 350. Place chicken breasts in a greased baking dish. Cover each breast with a slice of cheese. Mix together water/wine with soup, pour over the top of chicken. Top with unprepared stuffing mix, you can use more or less to your liking. Drizzle butter over stuffing. Bake uncovered for 50-60 minutes.

1 (10 3/4 ounce) can condensed cream of mushroom & garlic soup
1 (4 ounce) carton of whipped cream cheese with chives
1/2 cup white wine
8 boneless chicken breasts
1 teaspoon oregano
parsley or green onion

Steps:

  • Mix the soup, cream cheese and wine together.
  • Arrange the chicken in a greased 9 x 13-inch casserole dish.
  • Pour mixture over the chicken, turning chicken to coat well.
  • Crush oregano and sprinkle over the top. Salt and pepper to taste.
  • Cover with foil and cook in oven for 1/2 hour at 350 degrees. Remove foil and cook another 1/2 hour. Baste the chicken with the sauce.
  • Serve over hot noodles or rice. Sprinkle with chopped parsley or green onions.

1 whole chicken, cut up
4 -5 medium potatoes, peeled & cut in 1/2 lengthwise
2 (10 3/4 ounce) cans cream of mushroom soup
1 medium onion, sliced
2 -3 cups shredded cheddar cheese
salt and pepper

Steps:

  • Peel potatoes and slice in half lenthwise. Lay flat side down in a 9 x 13 lightly buttered pan sprinkle with salt and pepper and sliced onions.
  • Season chicken pieces the way you like and brown lightly in a large fry pan. Lay chicken pieces on top of potatoes spread the soup over chicken and follow with the shredded cheddar cheese.
  • Bake at 350 for 1-1/2 to 2 hours. You may need to cover with foil after the first 1 hour if top browns to quickly.

6 boneless, skinless chicken breasts (about 3 1/2 pounds)
4 envelopes Italian dressing mix
2 tablespoons vegetable oil
2 tablespoons unsalted butter
1 pound white mushrooms, sliced
Kosher salt
One 10 3/4-ounce can cream of mushroom soup
6 ounces cream cheese
3/4 cup dry white wine
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat the chicken breasts in the dressing mix.
  • Heat the oil in a large nonstick skillet over medium-high heat until very hot. Add the chicken and cook undisturbed until well browned, about 4 minutes. Turn the chicken, add the butter to the pan, and cook until the chicken is just golden brown on the reverse side, 3 minutes more. Transfer the chicken to a large baking dish.
  • To the skillet, add the mushrooms and a pinch of salt; cook, stirring occasionally, until golden brown, about 5 minutes. Spoon the mushrooms on top of the chicken.
  • In a medium saucepan combine the soup, cream cheese and wine. Stir over medium-high heat until well blended and heated through. Pour the sauce over the chicken and mushrooms.
  • Bake, uncovered, until the chicken is cooked through, 1 hour. Sprinkle with parsley and serve.

I made this up when I wanted something easy, different but not exotic for a dinner party. My family all love it. Make sure you use a smoked type ham. Honey ham just doesnt taste as good. Enjoy!

6 boneless skinless chicken breasts
12 slices of thin provolone cheese
6 slices thin hickory smoked ham (from the deli)
breadcrumbs
dried parsley (or fresh)
garlic powder
salt
pepper
basic spaghetti sauce (I use the jar stuff)

Steps:

  • Place each chicken breast between 2 sheets of plastic wrap and pound them to about 1/2 inch thick Place 2 slices of cheese and one slice of ham over the"wrong" side (the part without the shiny membrane) of the chicken.
  • Roll it up as tight as you can, it doesnt have to be perfect, and"stitch" it shut with a toothpick.
  • Mix your breadcrumbs with the parsley, garlic powder, salt& pepper.
  • Roll the chicken in the crumbs, make sure everything is coated.
  • Pour your sauce in an appropriate sized baking dish and place the chicken on top.
  • Bake in a 375 degree oven for about 40 minutes, or until chicken is cooked through.

1 (10 ounce) can cream of mushroom soup
1 (10 ounce) can cream of celery soup

1 1/4 cups water
1/2 cup butter or 1/2 cup margarine
7 ounces mushrooms, drained (optional)
1 1/2 cups quick-cooking rice
1 tablespoon paprika

Steps:

  • Preheat oven to 325*.
  • Spray 13x9" baking pan, or lightly grease.
  • In medium saucepan, combine soups, water, and butter or margarine.
  • Heat through till butter melts, but do not boil.
  • Remove from heat.
  • Reserve 1 cup sauce.
  • Stir in mushrooms (if desired), and stir in rice.
  • Pour rice mixture in 13x9" pan,and place chicken pieces on top.
  • Pour over reserved cup of sauce.
  • Sprinkle with paprika.
  • Bake for 2 hours.
