3 c pasta, large shells or spiral work well
1 pkg Hidden Valley Ranch Buttermilk Ranch dressing mix (envelope)
1 1/2 c Colby jack cheese, diced (or any block cheese)
1 large cucumber, peeled
1 c grape tomatoes, halved
1 c ham, diced (optional)
1 c mayonnaise
1 c buttermilk

Steps:

  • 1. Prepare pasta noodles al dente according to package directions.
  • 2. Strain and cool.
  • 3. In a separate bowl, mix the ranch dressing envelope according to the package directions adding mayo & buttermilk.
  • 4. I thin it out with a couple additional tablespoons of buttermilk or milk if needed.
  • 5. Add cubed cheese, cucumber, tomato halves, and optional ham to the pasta.
  • 6. Add dressing.
  • 7. Combine well.
  • 8. Refrigerate for an hour or more. If the noodles soak up most of the dressing, you may add a bit of milk to loosen it up or just a squirt or two of bottled dressing.

This salad could be a meal in itself! It's my version of a chef's salad with so many yummy things including browned country ham (for a Low Country spin), homemade croutons, and a creamy herb-buttermilk ranch.

Number Of Ingredients 25

3/4 cup whole buttermilk
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh dill
1 teaspoon fresh lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1 large head green leaf lettuce, chopped (8 cups)
3 cups Sourdough Croutons (see recipe below)
2 cups cherry tomatoes, halved
1 cup shredded sharp Cheddar
1 cup julienned carrots (see Cook's Note)
1 cup julienned cucumbers
1/2 cup thinly sliced red onion
3 hard-cooked eggs, sliced
2 slices country ham, browned and chopped (see Cook's Note)
3 cups cubed sourdough bread (stale bread is best)
2 tablespoons olive oil
1 tablespoon grated Parmesan (from a can; not fresh)
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper

Steps:

  • For the Buttermilk Ranch Dressing: Stir together the buttermilk, mayonnaise, sour cream, chives, dill, lemon juice, garlic powder, onion powder, salt and pepper in a medium bowl. Cover and refrigerate until ready to serve.
  • Assemble the salad: Arrange the lettuce, Sourdough Croutons, tomatoes, Cheddar, carrots, cucumbers, onion, eggs and ham on a serving platter. Drizzle with desired amount of buttermilk ranch dressing.
  • Preheat the oven to 375 degrees F. Toss the bread cubes, olive oil, Parmesan, Italian seasoning, garlic powder and pepper on large rimmed baking sheet. Bake until the bread begins to brown, 10 minutes. Stir and bake until the croutons are browned and crispy, 5 minutes more. Set aside to cool completely.

This has got to be my favorite salad ever!! Seems to be a favorite at get together's as well!

PRETTY MUCH ALL OF THE INGREDIENTS ARE ADJUSTABLE TO YOUR LIKING, SUCH AS; CHEESE, RANCH, TOMATOES AND OLIVES. MY FAMILY DOESN'T LIKE TOMATOE SO IF I'M MAKING IT FOR THEM I LEAVE THOSE OUT.
1 box(es) garden rotini pasta
1 16 oz bag(s) cubed colby jack cheese
2 package(s) buttermilk ranch dressing mix
1/2 quart(s) buttermilk ( i dont ever use the whole thing, so smaller if you can find it)
2 can(s) sliced black olives (adjust to your liking)
1 package(s) cherry tomatoes
A pinch(es) salt and pepper (to your liking)

Steps:

  • Boil the Rotini as directed on package, drain, rinse & cool.
  • Mix the butter milk and butter milk ranch mix as directed on pkg. I add a little extra butter milk because it the noodles tend to soak up the dressing when refrigerated and it dries out.
  • Mix all of your ingredients in a Large Salad Serving Bowl or whatever you have handy that is big enough :) Cover & Refrigerate Approximately 30 min.
  • You may want to check and see if it dried out a little and if so, add a little more dressing. SERVE & ENJOY :)
