16 ounces baby bella (cremini) mushrooms
1/3 cup chopped fresh thyme and oregano*
3 tablespoons olive oil**
2 tablespoons fresh lemon juice
1/2 teaspoon kosher salt
Fresh ground pepper

Steps:

  • Clean the mushrooms, then slice them. Chop the fresh thyme and oregano.
  • In a saute pan or skillet, heat the olive oil over medium high heat. Add the mushrooms and cook for 2 minutes, stirring often (the mushrooms will start to release their liquid at this point).
  • Add the herbs and kosher salt and pepper and cook another 4 to 5 minutes, stirring occasionally, until most of the liquid is cooked out and the mushrooms are tender. (Taste to assess doneness.)
  • Turn off the heat and add lemon juice and stir. Taste and add another pinch salt as necessary.

I hosted a Mario themed baby shower last night and needed a recipe for mushrooms since they helped Mario power up and grow bigger. This is the recipe I decided on.

2 box whole baby bella mushrooms-washed and wiped clean
2 stick butter (do not substitute)
2 pkg ranch style dressing mix (or other packet of seasoning such as knorr's vegetable recipe mix)

Steps:

  • 1. Wash the mushrooms well. (baby bellas tend to be a lot dirtier than button mushrooms) Take a wet paper and gently wipe any remaining dirt away.
  • 2. Place mushrooms in a slow cooker.
  • 3. Melt the 2 sticks of butter on the stove or in a microwave and melt. Add the 2 packets of seasoning to the melted butter and mix well with a fork or whisk and mix well.
  • 4. Pour mixture over mushrooms in slow cooker. Cook on low for 3 hours. **note if serving in a different bowl, pour mushrooms and sauce into the bowl. Even though the butter sauce looks oily, it holds the flavors so do not dump out. Use a slotted spoon to retrieve the mushrooms.
  • 5. Very important to serve hot. I would suggest to serve in your slow cooker or in a chafing dish.
