YUMMILICIOUS MICROWAVE CHOCOLATE PIE
This is my sister Heidi's recipe...this has replaced my grandmother's recipe as the "family chocolate pie" (sorry Grama). It's super easy and so awesomely chocolaty. It's perfect EVERY time...and it's so good, you'll be tempted to eat a whole one by yourself. Make sure you make 2, it goes FAST.

Steps:
- 1. Chop chocolate with sharp knife into small pieces and set aside. NOTE** The original recipe calls for 6 squares of chocolate, but one day I only had 4 on hand and it turned out just fine!...and the nice thing about using 4 squares is that they come 8 to a box...so you can get 2 whole pies out of one box.
- 2. In microwave-safe glass bowl: combine cream, milk, egg yolks, sugar, powdered sugar, cornstarch and salt. Whisk until well-blended.
- 3. Microwave on high for 3 minutes (I have a 1000-watt microwave). Whisk.
- 4. Continue to microwave in 1 minute increments, whisking after each minute, until mixture is thick like pudding (can take up to 6 or so extra minutes depending on microwave).
- 5. Add vanilla and stir after it's cooked. **NOTE** If you stop here you have YUMMY vanilla custard that you can serve on its own or use as a base for other custard recipes!
- 6. Add chopped chocolate to hot custard mixture and stir until all melted and blended. Add coffee (or Kahlua, if desired) now.
- 7. For HOMEMADE crust: Mix crushed oreos and butter, press FIRMLY in pie plate.
- 8. Pour in cookie crust. Chill. Serve with whipped cream or dessert topping on top.

- Microwave chocolate and milk in large microwaveable bowl on HIGH 2 min.; stir until chocolate is completely melted. Cool 20 min., stirring occasionally.
- Add sugar and vanilla to COOL WHIP; stir until well blended. Stir half into chocolate mixture. Add remaining COOL WHIP mixture; mix lightly. Spoon into crust.
- Refrigerate 4 hours.

BEV'S CHOCOLATE PIE
This recipe was given to me by a dear friend at a church dinner. This pie never is runny. If you opt to use a frozen prepared pie crust, use the deep dish kind.

- Preheat oven to 350 degrees F (175 degrees C).
- In a saucepan, whisk together 2 cups sugar, cocoa and flour. Blend in evaporated milk and vanilla. Beat egg yolks, and stir into pan. Add the butter or margarine. Heat, stirring constantly just until butter is melted. Pour filling into unbaked pie shell.
- Bake in preheated oven for 35 to 40 minutes, or until pie is not "wobbly" when shaken.
- Beat egg whites until soft peaks form. Gradually add 1/4 cup sugar, beating constantly, until stiff peaks form. Spread meringue on pie.
- Return pie to oven, and bake until meringue is golden.

MICROWAVE CHOCOLATE PIE
My sweet Pastor's wife, Judy Richardson, shared this recipe with me several years ago while I was preparing a church cookbook for publication. This is by far the best chocolate pie I have ever tasted and the easiest to prepare. Hope you like it.

- 1. Mix first 7 ingredients in a large glass bowl Cook in microwave, stirring every 2 minutes with a wire whisk until thickene Add vanilla and butter and stir until melted Pour into baked pie shell. May use meringue to top or whipped cream which is much better in my humble opinion
