2 cups crushed pineapple
1 cup sugar
pinch of salt
juice of one lemon
1-1 1/2 pkgs. Knox unflavored gelatin
1/4 cup water
1 cup chopped pecans(I just add what suits me)
1 cup grated cheddar cheese(again extra if you like cheese)
1 carton whipped whipping cream

Steps:

  • Dissolve gelatin in the water; set aside. In a saucepan combine pineapple, sugar, salt, and lemon juice. Heat and add dissolved gelatin. Let cool completely then add pecans, cheese and whipped cream. Put in bowl and chill till set. Best chilled overnight.

8 ounces cream cheese
1 can bing cherry, drained
1 cup sour cream
1 can crushed pineapple, drained
1 can mandarin orange, drained
1 container Cool Whip
1 cup chopped pecans

Steps:

  • Mix creme cheese and sugar.
  • Add drained fruits.
  • Add sour creme.
  • Mix.
  • Add cool whip.
  • Mix all this together, gently, and freeze (YES FREEZE).
  • Before serving let stand at room temperature about 10-15 minutes.

Looking through my recent gem of an older community cookbook found in one of my favorite antique stores, I found this delightful salad. It will go with almost any meal and could even be used as a dessert!

1 (14 ounce) can crushed pineapple
1 (6 ounce) box lemon Jell-O gelatin
2 (8 ounce) packages Philadelphia Cream Cheese, softened
1 pint whipped cream

Steps:

  • In a medium saucepan, over medium heat, bring the crushed pineapple with its juice to a boil.
  • Remove from the heat.
  • Stir in the lemon jello followed by the cream cheese.
  • Use a mixer, if needed, to get any lumps of the cream cheese out.
  • Chill about 20 minutes.
  • Fold in the whipped cream and spoon into a large pretty glass bowl.
  • Chill at least 2 hours before serving.

1 package (3 ounces) orange gelatin
1 can (20 ounces) crushed pineapple, drained
1 can (11 ounces) mandarin oranges, drained
2 cups miniature marshmallows

1 can(s) (28 oz) pineapple, crushed with juice
2 c sugar
4 pkg (or envelopes) knox gelatin
1 c water, hot
8 oz (2 pkgs) grated cheddar cheese
1 pt heavy whipping cream

Steps:

  • 1. Combine crushed pineapple and sugar in medium sauce pan and bring to boil.
  • 2. Add 4 envelopes knox gelatin dissolved in 1 cup of water. Stir until well mixed and remove from heat. Pour into large heat resistant bowl.
  • 3. Set in refrigerator. When starting to gel (this takes approx. 1 1/2 hours) add 2 packages of cheddar cheese. I prefer the finely grated cheese. Mix well.
  • 4. Fold in heavy whipping cream, whipped.
  • 5. Return to refrigerator to set.
  • 6. Once set, decorate top. I add m. cherries and mandarin oranges.

1 (3 ounce) package lemon Jell-O gelatin
1 cup boiling water
1 cup miniature marshmallow
1 (3 ounce) package cream cheese, softened
3/4 cup mayonnaise
1 (8 ounce) can crushed pineapple
1/2 cup whipping cream
1 (3 ounce) package lime Jell-O gelatin

Steps:

  • Prepare strawberry jello.
  • Pour into 3 qt rectangular baking dish.
  • Chill until almost set, about 1 hour.
  • In large mixing bowl, dissolve lemon jello in 1 c.
  • boiling water.
  • Add marshmallows, whisk until marshmallows are almost melted.
  • Whisk in cream cheese and mayonnaise until combined.
  • Stir in UNDRAINED pineapple, set aside.
  • In small mixing bowl, beat whipping cream until soft peaks form.
  • Gently fold into lemon mixture, spoon on top of chilled strawberry jello.
  • Spread over top evenly.
  • Chill until almost firm, about 1 hour.
  • Prepare lime jello.
  • Chill until partially set, about 45 minutes.
  • Pour over chilled lemon mixture.
  • Cover and chill 4 hours or more.
  • Cut into squares and serve.

5 cups boiling water, divided
4 cups cold water, divided
2 packages (.3 ounce each) sugar-free lemon gelatin
1 package (8 ounces) reduced-fat cream cheese, cubed
1 can (8 ounces) crushed pineapple, undrained
1/4 cup chopped pecans
2 cups reduced-fat whipped topping
2 packages (.3 ounce each) sugar-free cherry gelatin

Steps:

  • In a bowl, dissolve lime gelatin in 2 cups boiling water. Add 2 cups cold water; stir. Pour into a 13-in. x 9-in. dish coated with cooking spray. Refrigerate until almost set, about 2 hours., In a bowl, dissolve lemon gelatin in 1 cup boiling water; whisk in cream cheese until smooth. Stir in pineapple and pecans. Fold in whipped topping. A favorite family gave us this favorite recipe. This is time consuming and a bit of work so not for everyday. BUT it is visually stunning and also delicious. I like to substitute red and blue flavors with the white filling for 4th of July parties. But the original rainbow is great, too. Be sure to use a clear glass pan if you can.

2 cups milk, heated to boiling point
2 cups sour cream
2 (1/4 ounce) envelopes knox gelatin
1/2 cup cold water
1 cup sugar
2 teaspoons vanilla
1 (3 ounce) package black raspberry Jell-O gelatin
1 (3 ounce) package lemon Jell-O gelatin
1 (3 ounce) package strawberry Jell-O gelatin dessert
1 (3 ounce) package lime Jell-O gelatin

Steps:

  • For filling: Dissolve unflavored gelatin in cold water. Add milk, sour cream, sugar and vanilla. Beat well.
  • Layer in 9 X 13 pan, chilling between layers.
  • First layer: jello 1, prepared as directed on package.
  • Second layer: 1 3/4 cup filling.
  • Third layer: jello 2.
  • Fourth layer 1 3/4 cup filling.
  • Fifth layer: jello 3.
  • Sixth layer: 1 3/4 cup filling.
  • Seventh layer: jello 4.
  • IMPORTANT; Let each layer set well before adding another. (Chill in refrigerator between additions.) Also, let your prepared jello cool to room temperature before layering it into the pan on top of the previous layer. When you pour a new layer in, do not pour it directly on the previous layer. The stream of liquid may be strong enough to "slice" open the layer that is there. Instead, hold a large spoon down near the pan; pour the liquid onto the spoon and let it gently cascade into the pan. The filling will probably set up before you get through all the layers. You can warm it gently to re-liquify; just be sure it is not too hot when you pour it on the previous layer.
