Adapted from a recipe I found on the Simply Great Meals website. Faced a dilemma in settling on a name for these. They are n-e-v-e-r called Yo Yo Biscuits, just Yo Yos... the Simply Great Meals website called them Yo Yo's, but the apostrophe makes no sense, and without the apostrophe the name looks like Yo YOS - which sounds silly and is NOT what they are known as! Conversions: 150g = just under 5oz; 60g = 2oz. Personally, I'd prefer to omit the food coloring. Not anti-pink, just prefer to avoid unnecessary chemicals. Seems to me that even a 1/2 teaspoon of cherry juice would achieve the pinkness if that's what you're after. The slivered almonds are not generally found in a traditional Yo Yo: I've added those. I'm of the belief that yummy nut never goes astray, be it in sweet or savoury dishes.

Yield 20-24 Yum Yum Yo Yo Biscuits

150 g butter, preferably unsalted
4 tablespoons icing sugar
1 cup self-raising flour, sifted
1/2 cup custard powder, sifted
1/8 cup slivered almonds (optional)
60 g butter, softened, preferably unsalted
1 1/2 cups icing sugar
pink food coloring (optional)

Steps:

  • Cream the butter and icing sugar until light and fluffy; add the sifted self-raising flour and custard powder and mix to a firm dough; fold in the slivered almonds (if using).
  • Taking a teaspoonful of the mixture, roll into balls and place onto a baking paper lined oven tray; press lightly with the back of a fork (see TIP below) and bake in a preheated oven at 180°C/350°-375°F/4-5 gas mark for 10-12 minutes.
  • Make the butter cream by beating the butter and icing sugar together until the mixture is light and fluffy; add 1-2 drops of food colouring (if using) to make the cream pale pink; join the biscuits together with butter cream.
  • TIP: When making the pattern with the fork, dip the fork in plain flour to prevent it sticking to the biscuit mixture.

Number Of Ingredients 6

2 1/4 c all purpose baking mix**jiffy is what i used, more if needed**
2/3 c whole milk butter milk**more if needed**
1 c aged cheddar, shaved
2 Tbsp herb butter, cut in small pieces
1/2 c asparagus, sliced and blanched
6 slice pancetta, cooked and crumbled**pork**

Steps:

  • 1. get ingredients together
  • 2. mix ingredients together in a mixing bowl
  • 3. roll biscuit mixture on floured surface
  • 4. cut with into 12 biscuits. place biscuits on a non stick cookie sheet or silicon mat
  • 5. bake in a hot oven at 375 degrees for 12 minutes or until golden brown. add melted herb butter on top and serve.

I serve these w/ my roasted chicken or just about any dish. You can use regular Bisquick mix. I used reduced-fat to keep the calories down, but maintain the taste.

1/2 c butter
2-1/2 Tbsp sugar
1 large egg, beaten
3/4 c buttermilk
1/4 c club soda
1/2 tsp salt
5 c bisquick heart healthy bicuit mix

Steps:

  • 1. Heat oven to 450. Lightly spray a lg baking sheet w/ cooking spray
  • 2. In lg bowl, combine the butter, sugar, egg, buttermilk, club soda, salt and bisquick mix. Knead the dough until smooth.
  • 3. Lightly flour a work surface and hands. Pat dough flat to 3/4"-thickness. Cut out biscuits. Place biscuits on baking sheet. bake 12 min, or until golden brown.

Chicken Pot Pie with Biscuits! Sautéed shallots and thyme, a splash of white wine, creamy chicken and peas and carrots all baked under a biscuit topping.

Number Of Ingredients 19

2 cups flour
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon kosher salt
6 tablespoons very cold Land O Lakes® Salted Butter
3/4 cup whole milk
4 tablespoons Land O Lakes® Salted Butter
a few sprigs of thyme
2 shallots
4 carrots, peeled and sliced thinly (about 2 cups)
4 celery stalks, chopped (about 1 cup)
1/4 cup flour
splash of dry white wine (optional)
2 cups whole milk
1 1/2 cups chicken broth
4 cups shredded chicken (I use a rotisserie chicken)
2 cups frozen peas
1 teaspoon salt
squeeze of lemon juice, black pepper, etc.

Steps:

  • Prep: Preheat the oven to 425 degrees.
  • Biscuits: Mix flour, baking powder, sugar, and salt together. Grate butter and work it into the dry mix with your hands. Add milk and stir gently with a fork to bring it all together. Turn dough out onto a clean counter. Fold it over a few times to get it into a 1-2 inch thick layer. Cut 6-10 biscuits from it using a biscuit cutter, rim of a drinking glass, or... just a knife. Let's not be too precious here.
  • Filling: Melt the butter in a large oven-safe Dutch oven or pan. Add the thyme and shallots; sauté for 5 minutes. Add the carrots and celery; sauté for 5 minutes. Add the flour; sauté for 1-2 minutes. Add a splash of wine; let it sizzle out. Slowly and gradually, add the milk and the chicken broth, stirring after each addition. The mixture should resemble a thick, creamy soup. Add chicken and peas. Season with salt, pepper, and lemon juice.
  • Bake: Arrange biscuits on top of filling. Brush biscuits with milk or butter for extra browning. Bake for 15-20 minutes, until hot, bubbly, and biscuits are cooked through.
