CREAMY SHIITAKE LINGUINE WITH SCALLIONS/ GREEN ONIONS



Creamy Shiitake Linguine With Scallions/ Green Onions image

This is the recipe I use when I serve pasta to guests. It is so elegant and the flavors are extremely unique, due to the shallots and green onions.

1 lb linguine, uncooked
1 lb shiitake mushroom, 1/4-inch slices
4 tablespoons butter
2 garlic cloves, minced
4 tablespoons shallots, minced
1/2 cup dry white wine
1/4-1/2 cup chicken broth
1 cup heavy whipping cream
nutmeg, freshly grated to taste
1/3 cup scallion, thinly sliced
2 teaspoons lemon juice
salt and pepper
2 teaspoons fresh thyme leaves
white truffle oil (optional)

Steps:

  • Cook linguine pasta according to package directions to al dente; drain, reserving some of the pasta water and return to pan to keep warm.
  • In a large frying pan, saute mushrooms in butter until they begin to soften.
  • Add minced garlic and shallots; sauté an additional 2 minutes.
  • Add white wine and simmer until wine is reduced by half.
  • Add 1/4 cup of chicken broth, heavy cream, and nutmeg; simmer until sauce thickens.
  • Remove from heat; add scallions, lemon juice, salt, and pepper.
  • Add drained pasta to sauce; tossing gently to coat the pasta. Add more chicken broth or pasta water if sauce seems too thick. If sauce is still thin, add some (Wondra) flour. (Avoid using parmesan to thicken, as I've found that it interferes with all of the other flavors).
  • Place pasta on individual plates by using a long-tined fork, twisting each portion onto a heated plate so that it stands up as high as possible.
  • Spoon any mushrooms left in the pan over the top, sprinkle with fresh thyme and drizzle white truffle oil over the top and serve.

Shiitake Mushroom Sauté with Asian Flavors image

This is a tasty little combination that can be used on top of or alongside any Asian-inspired meat or fish entrée or mixed with shrimp or crabmeat to make a light and tangy starter. I love it with tuna, brushed with a little hoisin sauce, or with medallions of pork tenderloin.

Number Of Ingredients 13

2 tablespoons canola oil
1/2 pound shiitake mushrooms, stemmed and sliced
1 teaspoon grated fresh ginger
1 garlic clove, minced
2 tablespoons ketjap manis (see p. 14), or 5 teaspoons soy sauce mixed with 1 teaspoon molasses
Juice of 1 medium lime (about 2 tablespoons)
1/2 teaspoon sambal oelek (red chile paste)
1 teaspoon sesame oil
1 small carrot, peeled and cut into matchsticks
1/2 medium red onion, thinly sliced
4 scallions, thinly sliced on the diagonal
1/2 bunch cilantro, cleaned and chopped, optional
Salt, optional

Steps:

  • Heat 1 tablespoon canola oil in a medium skillet over high heat until hot but not smoking. Add the mushrooms and stir, then lower the heat to medium-high and cook for 4-5 minutes. When the mushrooms are lightly browned and crisp, stir in the ginger and garlic and cook 1 more minute. Scrape the mushrooms into a bowl and stir in the ketjap manis, lime juice, sambal oelek, sesame oil, and remaining canola. Stir to combine, then add carrot, onion, scallions, and cilantro.
  • The sauté should be moist and well seasoned. Add a little salt, if desired, and adjust the flavor to taste with more sesame oil, ketjap manis, or sambal oelek. Serve warm or at room temperature.

This is a wonderful side dish with either Asian food or a nice grilled steak. If you can't find shiitake shrooms, baby portabellas work fine as well. This recipe comes from Gourmet magazine, April, 2003 issue. Hope you enjoy!

1 tablespoon peanut oil
1/4 lb sliced bacon, cut crosswise into 2 1/2-inch pieces
12 scallions, crushed with side of a heavy knife and coarsely chopped (white and pale green parts only)
4 large garlic cloves, thinly sliced
2 cups reduced-sodium chicken broth (16 fl oz)
1/2 teaspoon salt
1/4 teaspoon pepper
1 lb fresh shiitake mushroom, stems discarded

Steps:

  • Heat a wok or 12-inch heavy skillet over high heat until a bead of water dropped onto cooking surface evaporates immediately. Add oil, swirling it around wok, and heat until it begins to smoke.
  • Add bacon and stir-fry until brown and crisp, about 3 minutes. Transfer with a slotted spoon to paper towels to drain and reserve for another use.
  • Add scallions and garlic to bacon fat and stir-fry until fragrant, about 1 minute. Pour broth down side of wok (it will bubble vigorously), add salt and pepper, and bring to a boil. Add mushrooms, then reduce heat and simmer, uncovered, turning occasionally, until tender, about 5 minutes.
  • Transfer mushrooms to a bowl with a slotted spoon and, when cool enough to handle, cut into 1/4-inch-thick slices. Drizzle liquid over mushrooms if desired.

1 1/2 tablespoons dry Sherry
1 tablespoon soy sauce
1 tablespoon minced peeled fresh ginger
1 1/2 teaspoons rice vinegar (not seasoned)
1/2 teaspoon sugar
2 1/2 tablespoons vegetable oil
1 1/2 lb large fresh shiitake mushrooms (3 inches wide), stems cut off and discarded
1/2 teaspoon salt
1/2 teaspoon black pepper
2 scallions, cut into very thin strips (2 inches long)

Steps:

  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas). (If using a charcoal grill, open vents on bottom of grill, then light charcoal. When Charcoal turns grayish white (about 15 minutes from lighting), hold your hand 5 inches above grill rack to determine heat for charcoal as follows: Hot: When you can hold your hand there for 1 to 2 seconds; Medium-hot: 3 to 4 seconds; Low: 5 to 6 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then, if necessary, reduce to heat specified in recipe.)
  • While coals are lighting, stir together Sherry, soy sauce, ginger, vinegar, sugar, and 1/2 tablespoon oil in a large bowl until sugar is dissolved.
  • Toss mushrooms with salt, pepper, and remaining 2 tablespoons oil, then grill on lightly oiled grill rack, covered only if using a gas grill, turning over occasionally, until lightly browned and tender, 4 to 6 minutes total. Transfer mushrooms with tongs to bowl with sauce, then add scallions and toss until combined.
