HONEY-ROASTED PINEAPPLE WITH GREEK YOGURT



Honey-Roasted Pineapple with Greek Yogurt image

For this super simple, low-fat dessert, we roasted pineapple to intensify its sweetness, then ran it under the broiler for a rich, caramelized finish.

Juice of 2 oranges (1/2 cup)
1/4 cup honey
1 vanilla bean, split and scraped
1/2 a fresh pineapple, peeled, cored and cut into 1/2-inch-thick slices
One 7-ounce container 2 percent Greek yogurt

Steps:

  • Position an oven rack in the upper third of the oven, and preheat to 450 degrees F.
  • Combine 1 cup water, orange juice, honey and vanilla bean pod and seeds in a small saucepan. Bring to a boil, stirring occasionally to loosen the honey. Turn off the heat, and leave the saucepan on the stove. (You may need to reduce the roasting juices a little more once the pineapple is cooked.)
  • Arrange the pineapple slices in a broiler-proof 9-by-13 baking dish. Pour the orange syrup over the pineapple. Roast, basting occasionally, until the pineapple is tender and the juices have reduced, about 20 minutes.
  • Set the oven to broil, and continue to cook the pineapple until it is a deep golden yellow and lightly brown around the edges, 5 to 10 minutes more.
  • The roasting juices should be reduced and syrupy, measuring about 1/4 cup. If they are too watery, remove the pineapple slices with a slotted spoon to a medium bowl, return the juices to the saucepan and reduce the juices over medium-high heat until syrupy, about 1/4 cup.
  • Divide the yogurt among 4 small bowls. Top with the pineapple slices, and drizzle with the syrup.

1 3.4 oz box instant vanilla pudding mix (dry mix only)
20 oz can crushed pineapple (in juice, undrained)
sweetened flaked coconut
pineapple wedges
granola
sliced almonds
sliced strawberries
blueberries

Steps:

  • Combine yogurt and dry vanilla pudding mix together in a large bowl.
  • Stir until all traces of pudding mix have disappeared.
  • Stir in the pineapple, including the juice, until well combined.
  • Cover and refrigerate for 3 hours.

3 tablespoons unsalted butter
1/2 large pineapple, cored and cut into 1/2-inch chunks (4 cups)
1/3 cup sugar
2/3 cup old-fashioned rolled oats
1/3 cup fresh lime juice
4 cups plain Greek yogurt
1/4 cup chopped toasted skinned hazelnuts

Steps:

  • Melt butter in a large skillet over high heat. Add pineapple, sugar, and oats; cook, stirring and scraping bottom of pan, 5 minutes. Reduce heat to medium-high; cook, stirring, until sugar is caramelized and pineapple softens, about 5 minutes more. Stir in lime juice. Spread mixture in a single layer on a rimmed baking sheet, breaking up any big chunks; let cool slightly.
  • Spread yogurt in a large dish. Top with pineapple mixture and hazelnuts. Serve immediately.

Found in All*You Magazine many years ago. I love making this dish for our family - very simple and I can tweak it with different toppings so it always seems just a bit different.

1 whole fresh pineapple, cored (about 20 oz.)
4 tablespoons unsalted butter
1/4 cup light brown sugar, packed
6 scoops vanilla ice cream or 6 scoops frozen yogurt
1/4 cup toasted almond, slivered
1/4 cup toasted coconut
2 bananas, sliced
fresh whipped cream
1 dash cinnamon

Steps:

  • Slice pineapple into eight rings and cut each ring into 8 pieces.
  • Warm butter in a large skillet over medium high heat. When butter begins to foam, add the pineapple and brown sugar (this is when you'd add the bananas if using that option).
  • Cook, stirring frequently and make sure you are turning the pineapple chunks over while stirring. This should take about 4-5 minutes - just until the pineapple is brown and all the sugar is dissolved.
  • Remove from heat and place into a shallow serving bowls and let cool 2-3 minutes.
  • Place a scoop of ice cream/frozen yogurt on each serving and top with other toppings if desired. Or you can serve with just a dollop of freshly whipped cream and a sprinkle of cinnamon.
