A quick and simple fresh mint yogurt sauce.

4 sprigs Fresh Mint ((equivalent to 2 tbsp of finely chopped mint))
½ Garlic Clove (,minced)
½ Lemon (, juice of)
1 cup (250ml) Full Fat Plain Yogurt
Salt and Pepper (to taste*)

Steps:

  • Finely chop the mint leaves, discarding the stalks, and add to a mixing bowl.
  • Add the yogurt, garlic and juice of half a lemon to the bowl. Mix until combined.
  • Season and adjust to taste.

5 bone-in skinless chicken breast halves
1 teaspoon coarse salt
1 tablespoon fresh lemon juice
1 cup plain low-fat yogurt
1/2 cup chopped of fresh mint
1 tablespoon minced fresh ginger
3 garlic cloves, minced
1 teaspoon garam masala
1/2 teaspoon chili powder

Steps:

  • Rinse chicken under cold water. Place in a large bowl and rub with salt and lemon juice. Set aside.
  • Blend remaining ingredients; toss well to mix and then coat chicken.
  • Seal bowl with plastic wrap and refrigerate for 24 hours.
  • Preheat oven to 400* F.
  • Place chicken on a foil-lined baking sheet and bake for 35 minutes.

8 ounces plain whole-milk yogurt, preferably Greek-style
3 tablespoons finely chopped fresh mint
1 1/2 teaspoons freshly squeezed lemon juice
1 small garlic clove, minced

Steps:

  • Combine all ingredients in a small bowl, and stir well to combine. Sauce can be made up to 1 day ahead; store in an airtight container in the refrigerator. Serve chilled or at room temperature.
