3 cups vanilla nonfat yogurt
1 cup fresh or defrosted frozen strawberries in juice
1 pint fresh blackberries, raspberries or blueberries
1 cup good quality granola

Steps:

  • Layer 1/3 cup vanilla yogurt into the bottom each of 4 tall glasses. Combine defrosted strawberries and juice with fresh berries. Alternate layers of fruit and granola with yogurt until glasses are filled to the top. Serve parfaits immediately to keep granola crunchy.

1/3 cup oats
1 teaspoon chia seeds
2 tablespoons milk
1 cup mixed berry

Steps:

  • In a bowl combine yogurt, oats, chia seeds, and milk.
  • Stir to combine then layer half in a wide-mouth mason jar or container.
  • Add half the fruit and berries then layer in remaining yogurt mixture and berries. Refrigerate overnight, and up to 3 days.

1 can (8 ounces) unsweetened pineapple chunks, drained
3/4 cup sliced fresh strawberries
3 tablespoons honey
2 cups plain Greek yogurt
3 ounces white baking chocolate, finely chopped
1/3 cup sweetened shredded coconut
1/4 cup pineapple preserves
4 gingersnap cookies, crushed
1/4 cup pistachios

Steps:

  • In a small bowl, combine the pineapple, strawberries and honey., In another small bowl, combine the yogurt, chocolate, coconut and pineapple preserves., Divide half of yogurt mixture among four parfait glasses. Layer with half of the cookies and fruit mixture. Repeat layers. Sprinkle with pistachios.

My students made these in a food production class to sell to the student body and they FLEW off the counter. Who knew! You can use a variety of fruits and yogurts. We did vanilla yogurt with frozen mixed berries.

GRANOLA
1/2 cup butter
2 cups old fashioned oats
1 cup chopped almonds
1/2 cup brown sugar
OTHER
16 oz yogurt (can use flavored or greek)
fruit mix, fresh or frozen (thawed), chopped

Steps:

  • 1. To make granola: Melt butter on stove top. Add the other "granola" ingredients. Heat over medium-high, until crispy, about 5 minutes. Remove from heat. Spread out a sheet of waxed paper, spread a thin layer of granola on paper and let cool. (Store in a tightly sealed container.)
  • 2. Parfaits: In a clear 12 oz cup layer: 1/2 cup yogurt, almost 14 cup chopped fruit, repeat. Just before serving top with granola (to prevent sogginess). Keep refrigerated.
