CURRIED FISH FILLETS WITH YOGURT SAUCE

Steps:
- Mix yogurt, cilantro and green onion in small bowl. Season with salt and pepper.
- Preheat oven to 500°F. Spray baking sheet with vegetable oil spray. Place in oven. Rub each side of each fish fillet with 1/4 teaspoon curry powder. Whisk egg whites in medium bowl until foamy. Place wheat germ on large sheet of waxed paper. Dip fish fillets into egg whites, then turn fillets in wheat germ, coating lightly. Place fish fillets on hot baking sheet. Sprinkle with salt and pepper. Bake until fish is opaque in center, about 8 minutes. Remove from oven; let stand 2 minutes. Transfer to platter. Serve yogurt sauce alongside.

Steps:
- Sprinkle fish with juice of 1/2 lemon and let it marinate for 20 minutes.
- Coat fish in a combination of the corn meal and parmesan cheese.
- Blend sauce ingredients in a small bowl to serve along with the fish and set aside.
- In a non-stick skillet, add the oil and fry the fish on medium heat.
- Brown the fish for about 5 minutes per side and remove.
- Serve the sauce over the fish and garnish with lemon wedges.

EXCELLENT, MOIST,TENDER FLOUNDER FILLETS
Even those who claim to not like fish will "beg" for more of this one. It is so moist and tasty. I think I would try it with Ranch dressing as well. I found a similar recipe at another site but adapted it to my tastes. GUARANTEED you will love this !!!!!!!!

- In a shallow dish, combine crumbs and cheese.
- Brush both sides of the fish with the Mayonnaise.
- Coat with crumb mixture.
- Arrange in single layer in shallow dish.
- Sprinkle with garlic seasoning and pepper.
- Bake at 375 degrees for 25-30 minutes, until golden brown and flakes easily.
- They will look like they are not done this is because of the Mayonnaise which makes them so moist.

- Heat broiler, with rack in top position. Combine yogurt, mustard, capers, and 1 teaspoon oil. Season with salt and pepper.
- Pat fillets dry with paper towels. Coat one side of fillets with 1 teaspoon oil and arrange, oil side down, on sheet. Spread yogurt mixture on fillets. Broil until fish is opaque throughout and yogurt mixture is bubbling and browned in spots, about 5 minutes. Toss greens with remaining 2 teaspoons oil, season with salt and pepper. Serve fillets with greens and lemon wedges.
