Chilled Cucumber and Yogurt Soup image

2 tablespoons olive oil
1 clove garlic, sliced
1 onion, small dice
3 seedless cucumbers, peeled, seeded and chopped
4 cups stock, or water
1 1/2 cups yogurt
1 tablespoon chopped dill

Steps:

  • Heat oil over medium high flame and saute garlic and onion until translucent (about 5 minutes). Add cucumbers and cook (stirring) for about 5 minutes more. Add stock and bring to a boil. Reduce heat and simmer about 12 minutes. Let cool to room temperature and puree in blender or food processer. Stir in yogurt and dill. Season with salt and pepper and keep chilled until ready to serve. Serve in chilled bowls.

6 -8 medium lemon cucumbers, peeled and coarsely chopped (or 3 standard cucumbers)
1 1/2 cups low-fat plain yogurt
1 cup low-fat buttermilk
1 tablespoon extra virgin olive oil
1 garlic clove, peeled and minced
3 tablespoons finely chopped fresh chives, and 3 tablespoons fresh dill (NOT dried, NOT dried)
1/8 teaspoon red pepper flakes or 1/8 teaspoon cayenne
1/2 cup water or 1/2 cup vegetable stock
1/4 teaspoon salt, to taste
1/8 teaspoon white pepper
3 tablespoons walnuts, toasted and chopped (can substitute hazelnuts or almonds)
fresh lemon juice, to lightly drizzle on each serving soup
cayenne
ice cube

Steps:

  • In food processor or blender, puree half of the cucumber, scraping down sides of bowl as necessary. Blend until smooth, about 20 seconds.
  • In a serving bowl, combine the pureed cucumber, yogurt, buttermilk, olive oil, garlic, fresh chives and dill, and pepper flakes. Stir to mix well.
  • Cut the remaining cucumber into 1/8 inch small dice. Stir into the pureed soup mixture and then stir in enough water or stock so that the soup is thin but not watery.
  • Add the salt and pepper and stir well. Refrigerate several hours and until well chilled.
  • Ladle soup into individual bowls and garnish with toasted nuts, a drizzle of lemon juice and a sprinkle of cayenne. Add an ice cube to each bowl to keep soup chilled.

1 1/2 cups low-fat plain yogurt
4 1/2 teaspoons finely grated lemon zest (from 2 lemons)
2 tablespoons finely grated peeled fresh horseradish
Freshly ground pepper
Grated lemon zest and thinly sliced cucumber (optional)

Steps:

  • Cut cucumbers into large chunks. Puree half the cucumber with yogurt, lemon zest, and horseradish in a blender until just smooth. Add remaining cucumber, and pulse until chunky, about 4 times. Season with pepper. Refrigerate until cold, about 1 hour. Stir well, and garnish with grated lemon zest and thinly sliced cucumber, if desired, before serving.

YOGURT AND CUCUMBER SOUP

All the fresh herbs make this cold soup marvelously refreshing. Key ingredient is raisins. Absolutely perfect if you have an herb garden; otherwise, for those of us who don't, a little expensive to prepare (unless you have use for all those extra fresh herbs) but great on the tastebuds and wonderfully aromatic nevertheless. Substitute dried for fresh if fresh herbs unavailable. I prepared this for a 3-day July 4th weekend. Cut out of an article in the NY Times, adapted from Najmieh Batmanglij, a Thai chef living in the U.S., but she described this as a Persian soup. Cooking time is chilling time.

4 pickling cucumbers or 2 cucumbers, peeled, seeded and diced
3 cups low-fat yogurt
1/4 cup scallion, chopped
2 tablespoons of fresh mint, chopped
2 tablespoons fresh dill, chopped
2 tablespoons fresh oregano, chopped
2 tablespoons fresh tarragon, chopped
1 tablespoon fresh thyme, chopped
2 garlic cloves, minced
1/2 cup raisins
1/4 cup walnuts, coarsely chopped
salt and pepper, to taste
3 tablespoons dried rose petals (available at Middle Eastern stores) (optional)
1 tablespoon of fresh mint or 1 tablespoon dried mint
1 pita bread, toasted and cut into squares

Steps:

  • Combine all ingredients except the last three. Mix thoroughly with 1 cup water.
  • Refrigerate several hours or overnight.
  • Just before serving stir in rose petals and add a few ice cubes. Garnish with additional mint and pita bread croutons.

2 T. minced fresh ginger
2 cloves garlic, minced
1/3 c. light coconut milk
1 seedless cucumber, peeled and chopped
24 oz. plain non-fat yogurt
1/4 tsp. salt
2 T. lemon juice
1/4 c. chopped cilantro
2 T. finely chopped green onion
1 T. finely chopped mint
1/2 Serrano chile, minced
4 tsp. extra virgin olive oil
Curried chicken breast, cold and diced

Steps:

  • 1. In a blender, process ginger, garlic, and coconut milk until the garlic and ginger are finely ground. 2. Add cucumber, yogurt, salt, and lemon juice. Process until smooth. Hold in refrigerator until needed. 3. In the meantime, mix together cilantro, green onion, mint, and chile. 4. To serve, ladle soup into chilled bowls. Sprinkle with spicy herb mixture. Drizzle 1 teaspoon of olive oil on top of each bowl.

3/4 pound cucumbers (1 European or 4 Persian), peeled and seeded if using regular cucumbers, coarsely chopped
1 quart plain low-fat yogurt or buttermilk
2 garlic cloves, peeled, cut in half, green shoots removed
2 tablespoons fresh lemon juice
1 teaspoon paprika
1 teaspoon toasted cumin seeds
1/2 pound ripe tomatoes, peeled (optional)
Salt and freshly ground pepper to taste

Thin cucumber rounds for garnish

Steps:

  • Blend all of the ingredients except the herbs until smooth. Taste and adjust seasoning. Refrigerate for 1 hour or longer before serving.

2 small cucumbers, peeled
salt
3 c plain yogurt
2 clove garlic, crushed
2 Tbsp fresh mint leaves, chopped
1 Tbsp fresh dill, finely chopped (optional)
3 Tbsp olive oil
1 c ice water
ground white pepper, to taste
salt, to taste
thin slices cucumber, for garnish
mint sprigs, for garnish

Steps:

  • 1. Remove seeds from cucumbers, if they are large, otherwise leave the small seeds. Shred the cucumber and mix in about a teaspoon of salt. Let stand in colander for 20 minutes to drain.
  • 2. Transfer to a large bowl and add yogurt, garlic, mint, dill and oil. Cover and refrigerate at least 2 hours.
  • 3. Just before serving add enough ice water to thin soup to desired consistency. Season with salt and paper to taste.
  • 4. Serve in small bowls or cups and garnish with cucumber slices and mint sprigs.

1/2 cup spearmint leaves, washed and dried
2 cups low-fat yogurt
Juice of 1 lime
1/2 teaspoon cumin
1/2 teaspoon fine sea salt
2 tablespoons lightly toasted pine nuts or roughly chopped walnuts or salted green pistachios (optional, for garnish)

Steps:

  • In a food processor, combine cucumber chunks, spearmint leaves and 1 cup yogurt. Pulse until pureed. Add the rest of the yogurt, lime juice, cumin and salt, and blend.
  • Transfer to a bowl, cover and refrigerate 3 hours or overnight.
  • To serve, stir throughly, taste for seasoning and ladle into small bowls or cups. Sprinkle each with 1 teaspoon nuts, if desired.

1 leek white and pale green parts only, coarsely chopped
2 large cucumbers peeled and seeded, chopped into cubes
2 cups plain or Greek style yogurt
2 cloves garlic
½ cup fresh dill
2 to 3 tablespoons olive oil plus a bit more for a finishing drizzle
Salt and pepper
Fresh mint
Golden raisins

Steps:

  • Sauté the leeks over medium heat in about a tablespoon olive oil just to soften and sweat them (about 6-7 minutes). Cool. In a food processor combine the leeks, cucumber, yogurt, garlic, dill and 2 tablespoons olive oil. Blend until smooth, about 30 seconds. Season to taste and reblend. Refrigerate for a couple of hours so flavors can meld. To serve, place a couple of golden raisins in the bottom of your serving vessel and pour a small amount of soup over top. Garnish with a drizzle of olive oil and sprig of mint. I like to serve this in a shot glass.
