2 pounds frozen yellow corn kernels, thawed
1 1/2 cups extra-fine yellow cornmeal
9 ounces mozzarella, grated
2 tablespoons milk
1 1/2 cups sugar
Pinch salt

Steps:

  • With a meat grinder, coarsely grind the corn kernels and place in a mixing bowl. Add the cornmeal, cheese, milk, sugar, and salt. Mix thoroughly with electric mixer. Using a 1 1/2 or 3 inch mold, shape the arepas. Stack them on a lightly greased baking sheet with parchment paper between the layers. Refrigerate for 30 minutes. Cook the arepas over a medium to low heat until golden brown, approximately 3 minutes.

2 lbs. fresh or frozen (thawed) yellow corn kernels
1 1/2 cups extra-fine yellow cornmeal
9 oz. mozzarella or Monterey Jack cheese, grated
2 tbsp. milk (if needed to moisten mixture)
1 1/2 cups sugar (or less depending on the sweetness of the corn)

Steps:

  • Coarsely grind the corn kernels in a meat grinder or food processor, and place in a mixing bowl. Drain excess liquid. Add the cornmeal, cheese, milk (if needed), sugar (as needed), and salt. Mix thoroughly. Using a 1 1/2 or 3-inch round mold, shape the mixture into patties of about 1/2-inch thickness. Stack them on a lightly greased baking sheet with parchment paper between the layers. Refrigerate for 30 minutes. Heat 1-2 tablespoons canola oil in a skillet over medium heat. Cook the arepas over medium-low heat until golden brown on both sides, approximately 15 minutes.
