GLAZED YEAST DOUGHNUTS

Yeast doughnuts covered with glazed icing... even better than the store bought ones! Easy and fun to make.

¾ cup scalded milk
⅓ cup granulated sugar
¼ teaspoon salt
1 (.25 ounce) envelope active dry yeast
¼ cup warm water
4 cups sifted all-purpose flour
1 teaspoon freshly grated nutmeg
⅓ cup butter or margarine
2 eggs, beaten
oil for deep frying
2 cups confectioners' sugar
6 tablespoons milk

Steps:

  • In a medium bowl, stir together the scalded milk, sugar, and salt. Set aside to cool until tepid. If using nutmeg, stir it into the flour, and add 2 cups of the mixture to the milk, and beat until well blended.
  • In a small bowl, dissolve the yeast in warm water. Stir into the milk and flour mixture, then mix in the butter and eggs. Mix in the remaining flour 1/2 cup at a time. When dough is firm enough, turn it out onto a floured surface, and knead for 3 to 4 minutes. Place into an oiled bowl, cover and allow dough to rise until doubled in bulk. This should take 30 to 45 minutes.
  • On a lightly floured surface, roll the dough out to 1/2 inch in thickness. Cut into circles using a donut cutter, or round cutter. Set aside to rise for 30 to 40 minutes, or until light.
  • Heat one inch of oil in a deep heavy frying pan to 375 degrees F (190 degrees C). Fry donuts a few at a time. Cook on each side until golden brown, then remove to drain on paper towels. Glaze while warm, or just sprinkle with sugar.
  • To make the glaze, stir together the confectioners' sugar and 6 tablespoons milk until smooth. Dip warm donuts into glaze, and set aside to cool.

1 1/3 cups warm milk, 95 to 105 degrees (divided)
2 1/4 teaspoons dry yeast or 2 tablespoons butter
2/3 cup sugar
2 eggs
5 cups all-purpose flour
1 -2 pinch nutmeg, freshly grated
1 teaspoon salt
1/2 cup unsalted butter, melted
1 1/2 cups sugar
1 tablespoon cinnamon

Steps:

  • Place 1/3 cup of the warm milk in the bowl of an electric mixer. Stir in the yeast and sugar and set aside for five minutes or so to let it proof. Stir the butter into the remaining cup of warm milk and add it to the yeast mixture. With a fork, stir in the eggs, flour, nutmeg, and salt - just until the flour is incorporated. With the dough hook attachment of your mixer beat the dough for a few minutes at medium speed. Adjust the dough texture by adding flour a few tablepsoons at a time or more milk. You want the dough to pull away from the sides of the mixing bowl and eventually become supple and smooth. Turn it out onto a floured counter-top, knead a few times (the dough should be barely sticky), and shape into a ball.
  • Transfer the dough to a buttered (or oiled) bowl, cover, put in a warm place, and let rise for an hour or until the dough has roughly doubled in size.
  • Punch down the dough and roll it out 1/2-inch thick on your floured countertop. With a 2-3 inch cookie cutter, stamp out circles in the dough . Transfer the circles to a parchment-lined baking sheet and stamp out the smaller inner circles using a smaller cutter. If you cut the inner holes out any earlier, they become distorted when you attempt to move them. Cover with a clean cloth and let rise for another 45 minutes.
  • Bake in a 375 degree oven until the bottoms are just golden, 8 to 10 minutes - start checking around 8. While the doughnuts are baking, place the butter in a medium bowl. Place the sugar and cinnamon in a separate bowl.
  • Remove the doughnuts from the oven and let cool for just a minute or two. Dip each one in the melted butter and a quick toss in the sugar bowl. Eat immediately if not sooner.
  • Makes 1 1/2 - 2 dozen medium doughnuts.

¾ cup milk
¾ cup white sugar

  • In a large mixing bowl combine 1 3/4 cups flour with yeast. In a saucepan heat milk, sugar, butter and salt until butter melts. Stir milk mixture into flour along with eggs, beating with a heavy-duty electric mixer on low for 30 seconds, just to combine. Increase speed to high and beat 3 minutes. Add the remaining flour, a little at a time, stirring with a spoon to make a firm but pliable dough. Knead dough on lightly-floured work surface 4 to 5 minutes until smooth and supple.   • Turn dough out onto floured surface, punch down and roll out to 1 /2- inch thickness. Cut out doughnuts with a floured doughnut cutter; re roll trimmings and cut them into doughnuts as well. Transfer doughnuts to baking sheets, cover and let rise 45 minutes.
  • Heat oil in a deep-fryer to 360 degrees F (180 degrees C). Fry doughnuts, in batches, turning several times, until golden all over. Using a slotted spoon remove doughnuts to a rack to drain. Let doughnuts cool and dredge in confectioners' sugar.

1/4 cup butter or margarine
2/3 cup scalded milk
2/3 cup warm water (105 to 115 degrees F)
2 packets active dry yeast
3/4 cup sugar
5 cups sifted flour (approximately)
2 eggs, lightly beaten
1 teaspoon salt
1 teaspoon cardamom
1/2 teaspoon cinnamon
1/2 teaspoon mace
Vegetable shortening or cooking oil, for deep fat frying
1/2 cup superfine sugar mixed with 1 teaspoon cinnamon

Steps:

  • Melt butter in milk and cool to lukewarm. Place water in a warm large mixing bowl, sprinkle in yeast, and stir until dissolved; add milk mixture and sugar. By hand, beat 2 1/2 cups flour in until smooth; mix in eggs, salt, and spices. Mix in remaining flour, adding a little extra, if needed, to form a soft but manageable dough. Knead lightly 1 minute on a floured pastry cloth; shape into a ball, place in a greased large bowl, cover, and let rise in a warm, draft-free spot until doubled in bulk, about 1 hour.
  • Punch dough down, roll 1/2-inch thick on pastry cloth, using a floured, stockinette-covered rolling pin. Cut with a floured doughnut cutter and place 1 1/2-inches apart on un-greased baking sheets. Reroll and cut scraps. Cover with cloth and let double in bulk.
  • Meanwhile, begin heating fat in a deep fat fryer. When doughnuts have risen and fat has reached 375 degrees F, ease 4 doughnuts into fat, 1 at a time. Fry about 2 minutes until golden brown all over, using tongs to turn. Drain on paper toweling.
  • While doughnuts are warm, roll in topping.
  • Jelly Doughnuts: Prepare as directed, but roll dough 1/4-inch thick instead of 1/2-inch. Cut in 2 1/2-inch rounds and put 1 teaspoonful tart jelly in the center of 1/2 the rounds. Top with remaining rounds, moisten touching edges slightly, and pinch to seal. Let rise, then fry as directed. Roll in confectioners' sugar while still warm.
  • Crullers: Prepare as directed, but instead of cutting into doughnuts, cut in strips 8-inches long and 1/2 to 3/4-inch wide; let rise, then twist strips several times and pinch ends. Fry at once and roll in topping while still warm.

I was searching on this site for the Krispy Kreme original recipe so I could PinchIt! and couldn't find the right recipe. You can tell the original recipe because it has nutmeg in the recipe. I have also included the glaze recipe that dries and crackles and their marshmallow creme recipe.

2 c scalded milk
1/2 c salted butter (not margarine)
2/3 c white sugar (divided)
1 tsp salt
2 Tbsp active dry yeast or two packets
4 eggs beaten
1/4 tsp nutmeg
7 c sifted flour
GLAZE
3 Tbsp salted butter (melted)
1 1/2 c powdered sugar
1 tsp vanilla extract
2 1/2 Tbsp warm water
MARSHMALLOW CREME FILLING
1 c marshmallow cream
1 1/2 c powdered sugar
1/4 c salted butter softened
1/2 tsp vanilla extract
1/2 to 2 tsp warm water ( i used 2)

Steps:

  • 1. Scald Milk...add butter, 1 tsp. sugar, and salt ......... cool so you don't kill the yeast.
  • 2. Beat warm milk mixture, yeast, nutmeg, eggs, remaining sugar, 3 c. flour in mixer until smooth. Add remaining flour.
  • 3. Knead 5 min then cover and let rise for 1-1 1/2 hours or until double.
  • 4. Roll out dough about 1/2 inch thick or just under 1/2 inch, then cut into shape.
  • 5. Allow cut doughnuts to rise another 30-45 min.
  • 6. Fry 1-2 min. each side at 365 F. (I used brand new lard to fry them) Once golden brown on one side, turn and cook other side till golden brown. Place on paper towel to drain grease. Once cooled for a few min dip in Glaze and set on cooling rack or plate to cool.
  • 7. GLAZE and MARSHMALLOW CREME: Mix the ingredients together and whip till combined and smooth. Same directions for both glaze and marshmallow creme.

1 1/4-ounce packet active dry yeast
1 cup whole milk
2 large eggs
4 tablespoons unsalted butter, melted, plus more for the bowl
1 teaspoon finely grated lemon zest
3/4 teaspoon salt
1/2 teaspoon vanilla extract
4 3/4 cups all-purpose flour, plus more for dusting
Cooking spray
Vegetable oil, for frying
For the glaze:
1 1/2 cups confectioners' sugar
3 tablespoons whole milk
1/4 teaspoon vanilla extract

Steps:

  • Make the doughnuts: Put 1/4 cup warm water (110 degrees F to 115 degrees F) in a stand mixer bowl. Add a pinch of granulated sugar, then sprinkle the yeast on top; let stand until foamy, about 10 minutes.
  • Whisk 1/2 cup granulated sugar, the milk, eggs, 4 tablespoons melted butter, the lemon zest, salt and vanilla in a separate bowl. Add to the yeast mixture and whisk to combine. Using the dough hook on medium speed, gradually beat in the flour, scraping down the bowl as needed. Continue beating until the dough gathers around the hook, about 3 minutes.   • Turn the dough out onto a lightly floured surface; roll out into a 12-inch round, about 1/2 inch thick. Cut out 12 circles with a floured 3-inch-round cookie cutter, then cut out the centers with a 3/4-inch-round cutter. Line a baking sheet with parchment paper and lightly coat with cooking spray. Arrange the doughnuts and doughnut holes on the baking sheet, leaving space between each; cover loosely with plastic wrap and set aside at room temperature until slightly puffed, about 30 minutes.
  • Heat 2 inches of vegetable oil in a large pot over medium-high heat until a deep-fry thermometer registers 340 degrees F. 2 1/2 cups unbleached flour, approximately
1/2 teaspoon ground nutmeg or mace

Steps:

  • Place the water in a large bowl or in the bowl of an electric mixer. Sprinkle the yeast over it and stir it in. Add the milk, quarter-cup sugar, salt, egg and three tablespoons vegetable oil and mix. Beat in one cup of the flour until the mixture is smooth.
  • Sift another cup of flour with the nutmeg or mace and stir it into the batter mixture with a wooden spoon. Add enough of the remaining flour to make a soft but manageable dough. Cover and set aside to rise until doubled, about one hour.
  • Punch the dough down and turn it out onto a well-floured surface. Dust it liberally with flour and knead 8 or 10 times, until elastic and smooth. Cover dough with large inverted bowl and rest for 15 minutes.
  • Use a floured rolling pin to roll the dough to one-half-inch thickness. Cut with a floured three-inch doughnut cutter and, using a spatula, carefully place the cut doughnuts on a floured cloth or surface. Reroll the scraps and cut more doughnuts. Cover the cut doughnuts with a cloth and allow to rise until doubled, about 45 minutes.
  • Meanwhile, pour at least two inches of oil into a deep pan and bring it to 375 degrees over moderate heat. When the doughnuts have risen, slide them into the oil with a spatula and fry them, two or three at a time a minute or so on each side, until golden brown. Lift them out of the oil with a slotted spoon and place them on several thicknesses of paper towel to drain. Dust them with sugar while they are still warm.

I have made this recipe (which was passed down from my mother to me in 1950) for my children and my grandchildren. It is really what got me interested in cooking to begin with. And as they say, "the rest is history".

3-1/2 tsp active dry yeast
1/4 c lukewarm water (105 degrees f.)
1/2 c whole milk
6 oz vegetable shortening
1/4 c granulated sugar
2 large eggs,lightly beaten
1 tsp salt
4 to 5 c all purpose flour (humidity affects amount)
2 c vegetable oil, canola oil or lard for frying

Steps:

  • 1. Activate yeast in the work bowl of a large stand mixer. Add dry yeast to 1/4 cup warm water (about 105° F.) Set aside for 10 minutes.
  • 2. Meanwhile, scald milk. Cool to lukewarm.
  • 3. With flat beater in place add lukewarm milk, sugar, salt, shortening and eggs to yeast in mixer bowl. Mix on low until ingredients are blended. Switch to dough hook and add flour 1 cup at a time, stirring until mixture forms a ball of dough which follows the dough hook around the bowl.
  • 4. Place dough into a lightly greased bowl and cover with a damp tea towel or oiled plastic wrap. Allow to rise in a warm place for about 30 to 60 minutes.
  • 5. Punch dough down to exhaust air. Place onto a barely oiled surface. Roll 1/2 inch thick and cut with a doughnut cutter. Re-cover doughnuts with clean tea towels or plastic and allow to rise until doubled in bulk. (45 minutes to 1 hour).
  • 6. Using caution, heat oil to 350° F. , in a deep skillet or Dutch oven (I use a Fry Daddy) until a speck of dough dropped into hot fat dances on the surface. Fry doughnuts, three or four at a time, until golden brown, (about 1-1/4 to 1-1/2 minutes per side), turning as necessary. Drain on inverted cooling rack placed over paper towel - lined sheet pan.
  • 7. TO PREPARE GLAZE: Mix boiling or very hot tap water with powdered sugar. Beat well until smooth. Beat in vanilla. Glaze doughnuts while still warm. (NOT HOT) !!
  • 8. NOTE: You are aiming for a very slightly slack dough because one that is too dry, will make a heavy end product.

APPLE CIDER DOUGHNUTS (YEAST RAISED)

They attribute it to Edible Chesapeake - a beautiful quarterly that is part of a nationwide "Edible" community focusing on local sustainable produce - www.ediblecommunities.com/content/ . I'll be using good old eastern VA peanut oil for this recipe in place of the canola oil. They turn out to be the lightest, puffiest, tender non-greasy doughnuts - move over Krispy Kreme! You've been replaced. No Kidding! Next time I make I'll be adding some grated apple to the dough & using apple cider to make a glaze (not that there's a thing wrong with lots of cinnamon sugar that is LOL).

1/2 cup apple cider (1/4 cup of it warmed to about 110 degrees)
2 1/4 teaspoons active dry yeast (1 small packet)
3 1/4 cups flour, plus more for dusting the work surface
3/4 cup whole milk, at room temperature
4 tablespoons unsalted butter, at room temperature
3 large egg yolks
2 tablespoons sugar
1 teaspoon salt
2 cups sugar
2 tablespoons ground cinnamon
canola oil, for greasing the proofing bowl and for frying

Steps:

  • Place the 1/4 cup of warm cider in the bowl of a stand mixer fitted with a dough hook. Sprinkle the yeast on the surface of the cider and let stand for about 5 minutes, until foamy.
  • Add the flour, the remaining 1/4 cup of cider, milk, butter, egg yolks, the 2 tablespoons of sugar and the salt. Beat on the lowest speed until the flour is incorporated, then increase the speed to medium and beat for about 5 minutes to form a soft, elastic dough that creates a ball around the dough hook.
  • (Alternatively, you can mix the dough by hand with a wooden spoon until it forms a wet, sloppy mass. Oil your hands and give the dough a few turns using the heel of your palm against the edge of the bowl.).
  • Use a little of the oil to lightly grease the inside of a large bowl and place the dough in the bowl. Cover with a clean dish towel and place in a warm spot. Let the dough rise for about 1 1/2 hours, until it has doubled in bulk.
  • Flour a clean work surface. Line a baking sheet with parchment paper and have a wire rack ready. Heat enough oil to fill about 3 inches in a large, heavy-bottomed pot over high heat.
  • Punch down the dough; it will be sticky. Place the dough on the floured surface, then roll it out to a thickness of 1/2-inch, adding flour as needed to keep the dough workable. Use a 3-inch doughnut cutter or two cookie cutters, in 3-inch and 1/2-inch sizes, to create 8 to 10 doughnuts. Do not reroll the dough; because it is leavened, it needs the rising action for structure. Rerolling will flatten the lift you've achieved. Save any scraps for frying.
  • Place the doughnuts on the prepared baking sheet. Cover with the clean towel and let the doughnuts and any scraps of dough rise for 15 to 30 minutes, until well puffed (they do not need to double in bulk).
  • Combine the remaining 2 cups of sugar and the cinnamon in a medium bowl.
  • Once the oil reaches 325 degrees, begin frying the raised doughnuts in batches of 2 or 3 at a time. Fry for 2 to 3 minutes on the first side until golden brown, then use tongs or long metal skewers to turn the doughnuts and fry on the second side for 2 to 3 minutes until golden brown.
  • Use a skimmer or skewer to transfer one doughnut at a time to the bowl of cinnamon sugar; immediately turn as needed to coat evenly on all sides. Transfer to the wire rack and repeat with the remaining raised doughnuts and any leftover scraps of risen dough.

  • After 5 minutes, pour the yeast mixture into the large bowl of a stand mixer and add the milk and shortening mixture, first making sure the milk and shortening mixture has cooled to lukewarm.

  • Set on floured baking sheet, cover lightly with a tea towel, and let rise for 30 minutes.
  • Preheat the oil in a deep fryer or Dutch oven to 365 degrees F.
  • Gently place the doughnuts into the oil, 3 to 4 at a time. Cook for 1 minute per side.
  • Transfer to a cooling rack placed in baking pan.
  • Allow to cool for 15 to 20 minutes prior to glazing, if desired.

1 1/2 cups milk
2 1/2 ounces vegetable shortening, approximately 1/3 cup
2 packages instant yeast
1/3 cup warm water (95 to 105 degrees F)
2 eggs, beaten
1/4 cup sugar
1 1/2 teaspoons salt
1 teaspoon freshly ground nutmeg
23 ounces all-purpose flour, plus more for dusting surface
Peanut or vegetable oil, for frying (1 to 1/2 gallons, depending on fryer)

Steps:

  • Place the milk in a medium saucepan and heat over medium heat just until warm enough to melt the shortening. Place the shortening in a bowl and pour warmed milk over. Set aside.
  • In a small bowl, sprinkle the yeast over the warm water and let dissolve for 5 minutes. Oddly enough, it is the same contributor as another recipe I posted also by request. Rhe recipe contributor is a Mrs. McGraw. I don't know who she is, but MAN can this lady cook. 1/4 cup vegetable shortening
1/2 cup sugar
1 teaspoon salt
1/8 teaspoon mace (or nutmeg)
1 teaspoon lemon zest, finely grated
1 cup boiling water
1 cup evaporated milk
2 (1/4 ounce) envelopes active dry yeast
1/2 cup very warm water
2 eggs, lightly beaten
7 1/2 cups sifted all-purpose flour, divided (about)
vegetable oil (for frying)
1 1/2 cups confectioners' sugar
1/2 cup boiling water
1/2 teaspoon lemon juice

Steps:

  • place shortening, sugar, salt, mace, lemon zest (if using) in a small bowl and pour over boiling water.
  • Stir until sugar dissolves and shortening melts.
  • Mix in evaporated milk and cool until warm (110-115°F).
  • Sprinkle yeast over very warm water in large bowl.
  • Stir until yeast is dissolved.
  • Mix in the cooled shortening mixture into the yeast; beat in eggs.
  • Add 4 cups of flour and beat hard with electric mixer at high speed 1-2 minutes or until smooth.
  • SLOWLY beat in enough of the remaining 3 1/2 cups of flour to make a very soft dough (IT WILL BE STICKY).
  • Place dough in large, well-buttered bowl, then turn dough in bowl to grease all over.
  • Lay a piece of buttered wax paper on top of dough, then cover bowl with a lid.
  • Place in refrigerator for 4-5 hours or until needed (it will rise as it stands in refrigerator).
  • Add enough oil into deep fat fryer to a depth of 3 inches and heat to 360°F.
  • BE CAREFUL PLEASE.
  • Take out whatever amount of dough you need (1/3 of the dough should yield about 10 doughnuts) and roll out on floured board with floured rolling pin.
  • Cut with 3" doughnut cutter and let stand at room temperature for 15-20 minutes.
  • Fry doughnuts in oil, no more than 2-3 at a time (with their holes).
  • Cook for 1 1/2 minutes per side (the holes will cook faster) or until they are rich caramel brown.
  • Drain on crumpled paper towels as they come from the hot oil.
  • Cool to almost room temperature and if desired, dip quickly in glaze (for the glaze: blend together confectioners sugar, boiling water, and lemon juice).
  • Let them drip-dry on wire rack set over waxed paper.
  • •or roll in sugar or cinnamon sugar.
  • **if you don't have a doughnut cutter, use a 3-inch biscuit cutter and a smaller biscuit cutter to make the center hole.

PISTACHIO-DUSTED ROSE-GLAZED YEAST DOUGHNUTS



Pistachio-Dusted Rose-Glazed Yeast Doughnuts image

3 1/4 cups all-purpose flour, plus more for dusting
1/2 cup sugar
3 teaspoons instant yeast
1 lemon, zested
1 orange, zested
1/3 cup plus 4 tablespoons whole milk
2 teaspoons vanilla
2 eggs
6 tablespoons unsalted butter, melted
1 teaspoon salt
Oil, for frying
2 cups confectioners' sugar, sifted
1 tablespoon heavy cream
1 tablespoon rose water, orange blossom water or vanilla extract
Red food coloring, for coloring, optional
1/2 cup pistachios, finely ground

Steps:

  • For the doughnuts: In the bowl of a stand mixer fitted with a dough hook, add 3 cups of the flour, the sugar, yeast, lemon zest and orange zest, and mix for a couple seconds. In a small bowl, mix the milk, vanilla and eggs, and set aside. Turn the mixer on and alternate adding the milk mixture with the melted butter, scraping down the sides. Repeat for the remaining milk and butter, until it is all incorporated, then add the salt in. When you finish adding in all the liquids, the dough will be a little wet. Slowly sprinkle in the remaining 1/4 cup flour until the dough comes together and leaves the sides of the mixing bowl almost clean. (If it reaches this stage before adding in the full 1/4 cup, do not add in the rest.) Turn the dough out and knead it on a floured surface until the dough is soft and comes together, 1 minute. Place the dough in a bowl with a little oil and cover with a damp cloth. Store in a warm place to proof until it doubles in size, 1 to 2 hours.
  • Roll the dough out to 1/2- to 1-inch thick and cut into doughnut shapes. Place the doughnuts on a floured tray and cover with a damp cloth, let rise for another 30 to 40 minutes.
  • While the dough is rising, heat the oil over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. When the dough is fluffy and doubles in size, place it in the fryer for 2 minutes on each side. Take out the doughnuts and cool on a cooling rack.
  • While the doughnuts are cooling, make the glaze.
  • For the glaze: Sift the confectioners' sugar through a sifter into a bowl. Add the cream, rose water and a few drops food coloring if using, and mix. Set aside until the doughnuts are ready to be glazed.
  • When the doughnuts are cool, place a tray underneath the cooling rack and then dunk the doughnuts in the icing for a nice thick layer. Sprinkle with a dusting of the ground pistachios then place on the rack to set.

  • knead until smooth and elastic.
  • place in lightly oiled bowl and turn dough to coat.
  • cover with a damp cloth and let rise in warm place till doubled. approx 1 1/2 hours.
  • punch down dough and let rise again till doubled, approx 30 minute.
  • roll dough out 3/8 inch thick and cut out rings with doughnut cutter.
  • let rise on on board uncovered until doubled and very light, 30 - 40 minute.
  • heat oil in a fryer or pot to 375 F (3-4 inch deep).
  • carefully drop doughnuts into hot oil. Turn when they rise to the surface. 2 - 3 minutes or until golden brown on both sides.
  • carefully remove from oil, do not prick the surface, and drain.
  • while warm, roll in sugar, frost or glaze.

5 cups all-purpose flour
canola oil
1/3 cup butter
2 cups powdered sugar
1 1/2 teaspoons vanilla
4 -6 tablespoons hot water
1/3 cup butter
2 cups powdered sugar
1 1/2 teaspoons vanilla
4 -6 tablespoons hot water
4 ounces milk chocolate chips or 4 ounces semi-sweet chocolate chips

Steps:

  • Dissolve yeast in warm water in 2 1/2-quart bowl.
  • Add milk, sugar, salt, eggs, shortening and 2 cups flour.
  • Beat on low for 30 seconds, scraping bowl constantly.
  • Beat on medium speed for 2 minutes, scraping bowl occasionally.
  • Stir in remaining flour until smooth.
  • Cover and let rise until double, 50-60 minutes.
  • Dough is ready when indentation remains when touched. Turn dough onto floured surface; roll around lightly to coat with flour.
  • Gently roll dough 1/2-inch thick with floured rolling pin.
  • Cut with floured doughnut cutter.

  • Heat vegetable oil in deep fryer to 350°.
  • Slide doughnuts into hot oil with wide spatula.
  • Turn doughnuts as they rise to the surface.
  • Fry until golden brown, about 1 minute on each side.
  • Remove carefully from oil (do not prick surface); drain.
  • Dip the doughnuts into creamy glaze set on rack then when slightly cooled spread chocolate frosting on top.
  • Dip in sprinkles or other toppings after chocolate if desired.
