6 cups potatoes (peeled,dicd and boiled)
1/2 cup cucumber (diced-drained)
1/2 cup onion (chopped)
2 tablespoons chives (chopped)
2/3 cup mayonnaise
1 tablespoon basil (fresh)
1/3 cup yogurt
2 tablespoons wine vinegar
1 tablespoon mustard
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1/8 teaspoon paprika

Steps:

  • Combine potatoes, cucumber, onion & chives in a large bowl.
  • Blend mayonnaise,yogurt,vinegar,mustard,salt and pepper in a small bowl.
  • Pour over potato mixture and blend thoroughly.
  • Refrigerate several hours.
  • Sprinkle with paprika before serving.

I had some fresh small cucumbers and one large yam so decided to make a salad with the vegies. This has a sweet vinegary dressing. For large servings double the recipe.

1 large yam, cooked, then peeled & cubed
4 medium sized cucumbers, peeled and cubed
6 green onions, diced or 3/4 cup diced sweet white onion
1/4 cup sweet red pepper, diced (optional)
2 tablespoons olive oil
1 tablespoon white vinegar
2 teaspoons sugar or 2 teaspoons Splenda sugar substitute
1 teaspoon dried cilantro
1/4 cup evaporated milk
1 pinch dry mustard

Steps:

  • Put all of the vegetables in a medium salad bowl or large gallon sige zip lock bag.
  • Put all of the dressing ingredients in a
  • Container with lid that does not leak or a plastic zip lock bag and shake, shake, shake.
  • Taste. If too vinegary for your taste buds, add a little more evaporated milk and shake again.
  • Pour over vegies and mix with a spoon.
  • Or,pour over the vegies in a zip lock bag and shake shake shake.
  • Chill at least two hours or can be overnight. I like to shake the mixture at least twice before serving.
  • Note: You can use brown sugar if you prefer. Chilling time is not listed in the preparation.

Although it's called cucumber potato salad, the recipe doesn't even call for cucumbers. It calls for cucumber dressing. I think next time this would be good if you threw in a few cucumbers too. This recipe serves 36 and is designed for large gatherings. I made 1/5th of the recipe or so and was pleasantly surprised at the flavor of the cucumber dressing. I must confess that I added a few hard-boiled eggs, used the celery ribs and the leaves, threw in some dill pickle juice, and I couldn't resist a few crunchy garlic dill pickles in the mixture. The recipe is great just by itself, but I love dill pickles and eggs in potato salad. 1 bunch green onion, sliced
2 tablespoons dill weed
2 teaspoons salt
2 cups mayonnaise
16 ounces cucumber ranch salad dressing

  • Place potatoes in a large kettle and cover with water.
  • Bring to a boil.
  • Reduce heat and cover and simmer for 20 to 25 minutes or until tender.
  • Drain and cool.
  • Cut potatoes into small cubes.
  • In a large serving bowl, combine the potatoes, celery, onions, dill, and salt.
  • In a small bowl, whisk mayonnaise and salad dressing until blended.
  • Pour over potato mixture and stir gently to coat.

1 celery, diced
1/4 onion, very thinly sliced
2 tablespoons lemon juice
2 tablespoons olive oil
2 tablespoons cider vinegar
1/2 teaspoon oregano
1/4 teaspoon minced garlic (or to taste)
1/2-1 teaspoon sugar (to taste)
feta cheese (optional)

1 1/2 lbs sweet potatoes, scrubbed, quartered lengthwise & cut crosswise into 3/4-inch pieces (or yams)
3 tablespoons cider vinegar
2 tablespoons sweet pickle relish
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup vegetable oil
2 green onions, thinly sliced
1/4 cup red bell pepper, finely chopped

Steps:

  • In a large pot, steam prepared yams 10 to 15 minutes or until tender, then remove from steamer.
  • When cool enough to handle, peel yams (if desired; I don't), then place in a large salad bowl.
  • While yams cool, combine vinegar, pickle relish, mustard, salt & pepper in a small jar with a tight-fitting lid, & shake well.
  • Add vegetable oil & shake again, before pouring over yams & tossing them to coat.
  • Add green onions & red pepper & either serve at room temperature or chilled.

1/4 cup chopped cornichons or relish
2 tablespoons whole-grain mustard
1 tablespoon honey
2 ribs celery, diced
Zest and juice from 1 lemon
1/2 small red onion, minced
Kosher salt and freshly ground black pepper
2 pounds sweet potatoes, peeled and cut into 1-inch cubes
1/4 cup white vinegar
1/2 cup mayonnaise
2 tablespoons minced fresh chives, plus more for garnish
2 tablespoons minced fresh parsley, plus more for garnish

Steps:

  • In a bowl, mix together the cornichons or relish, mustard, honey, celery, lemon zest and juice and red onion. Season with salt and pepper and let sit while the potatoes cook.
  • Put the potatoes in a large saucepan and add enough cold water to cover by 1 inch. Season the water generously with salt. Bring to a boil over medium-high heat. Reduce the heat to a simmer and cook until the potatoes are tender, about 10 minutes.
  • Drain the potatoes in a colander, put back in the saucepan, add the vinegar and, using a rubber spatula, toss gently to combine.
  • Add the mayonnaise, chives and parsley to the celery-onion mixture and stir to combine. Add the warm potatoes to the dressing and toss. Season to taste. Garnish with extra chives and parsley.

1/2 onion
1 cup mayonnaise
1/4 cup sugar
1 tablespoon vinegar
milk

Steps:

  • Peel cucumbers and slice.
  • Slice onions.
  • In another bowl combine mayo, sugar, and vinegar. whisk until smooth.
  • Add 2 tablespoons of milk and whisk until smooth. You can add as much milk as you want, it will become less thick, every time you add the milk.
  • This is also good with tomatoes and romaine lettuce for a delicious time of garden salad!
