GRANDMA'S THANKSGIVING SWEET POTATO YAMS
This is an EASY recipe that my grandmother used to make. This is one of my favorites of hers. I don't like sweet potatoes, but I love these. I got the recipe from a friend of hers (she has passed) and decided to share. It's delicious and a sweet treat.

Steps:
- Boil sweet potatoes until fork tender. Allow to cool. Peel the sweet potatoes and slice into 1" slices.
- In a bowl, stir together karo syrup, sugar, cinnamon, nutmeg, and vanilla.
- Arrange sweet potato slices in 11"x14" casserole dish.
- Pour mixture over potatoes.
- Slice margarine into slices and arrange on the top.
- Bake uncovered at 350 degrees for 20 minutes. Remove and mix the slices around. Put back in oven for 10-20 minute Serve hot.

Mother's great yams were always a hit at Thanksgiving. In America, yams are actually a type of sweet potato. Gingersnap cookies and marshmallows make this dish a real treat.

Steps:
- In a medium saucepan over medium heat, mix the sweet potatoes, butter and lemon juice. Break the gingersnap cookies into the mixture. Stirring occasionally, cook until thick, about 15 minutes.
- Cover the mixture with desired quantity of marshmallows. Remove from heat and cover 5 minutes, or until marshmallows have melted. Serve warm.

For me yams are all butter, brown sugar and orange juice. Orange flavor is absolutely incredible with yams!

Steps:
- Peel, quarter lengthwise and cut potatoes crosswise into 1/4-inch thick slices.
- Combine the sweet potatoes, 1/2 t salt, sugar, and water in a large pot.
- Cover and cook over low heat, stirring occasionally until the potatoes fall apart when poked with a fork (45 - 60 minutes).
- Off the heat, mash the sweet potatoes in the saucepan with a potato masher or food mill. Stir in the melted butter, half-and-half, orange juice, and orange zest with a wooden spoon until incorporated.
- Season with additional orange juice, brown sugar, cinnamon, salt and pepper to taste.

- Cook yams in boiling water about 15 min. (check every 5 min as so to not overcook) Drain and Cool. In a small saucepan, melt butter, juice, brown sugar, salt, water, and cinnamon. While that is heating up, peel the potatoes and slice into chucks. Place potatoes in baking dish. Pour melted mixture over potatoes (it will only cover 1lb of yams. Double recipe if more than 1lb) Bake at 350 for 35 min. After 20 min add pecans and at the end, turn on the broiler and add the marshmallows. Broil for 5 min until marshmallows turn brown.
YAMS, THANKSGIVING

- Scrub but don't peel the yams. Cut a slit in the top of each yam with a knife. Heat the oven at 375 degrees F (there is no need to preheat), and place the yams directly on the center rack. Cover the rack below with aluminum foil to catch the yam's syrup, which will drip during baking. Let the yams bake about 1 1/2 hours or until they are soft. A knife or fork should go into them easily. Cool slightly, peel and cube. Reserve. Meanwhile, heat a skillet over medium heat. Add butter or oil. Add onions, and begin cooking. Add ginger and garlic. Cook onions until they are a nice golden color. Rough mash and remove to a bowl. Add butter to skillet and diced apples. Sauté until tender. Add a bit of Calavados and let reduce. Rough mash apples and add to onions. Return yams to skillet. Add coconut milk and begin to reduce. (you want the coconut milk to be almost dry by the end.) Add apple and onion mixture during this process. Heat through and mash all together. Season yams with salt, pepper, a hint of nutmeg, butter and sweeten with a bit of maple syrup. Reheat if necessary and serve.
TROPICAL YAMS - HEALTHY THANKSGIVING DISH
This is a healthy alternative to Sweet Potatoes with brown sugar and marshmallows. It's like a vacation in your mouth!

- 1. Peel and cube the yams. Place in a 9X12 pre-oiled baking dish. Spray or drizzle oil (I use butter) on them. Cook at 350 for 30 minutes or until done. Mash the yams, add the coconut milk, agave nectar, pineapple, pecans, and seasonings. Mix well, put back in the baking pan, sprinkle with the reserved pineapple and pecans and serve.
- 2. You can make this dish the day before and then reheat it in the oven or microwave right before serving. I like sprinkling the pecans on the top right before putting it on the table.
