4 (8 ounce) packages buckwheat soba noodles
2 tablespoons vegetable oil
1 pound pork tenderloin, cut against the grain in thin strips
2 cups carrots, cut into julienne strips
1 medium onion, cut into julienne strips
1 tablespoon freshly grated ginger
3 cloves garlic, minced
½ head napa cabbage, shredded
⅔ cup yakisoba sauce
salt and ground black pepper to taste
4 tablespoons pickled red ginger (beni shoga), or to taste
4 tablespoons kizami nori (dried flaked aonori seaweed), or to taste

Steps:

  • Bring a large pot of water to a boil. Cook soba in boiling water, stirring occasionally, until noodles are tender yet firm to the bite, 5 to 8 minutes. Drain noodles and rinse with cold water. Set aside.
  • Heat oil in a wok over medium heat. Add pork and stir-fry with a pinch of salt and pepper, about 5 minutes. Transfer meat to a plate, reserving oil in wok. Add carrots, onion, ginger, and garlic to the wok and stir-fry for 3 to 4 minutes.
  • Add cabbage to the wok and stir-fry briefly, about 1 minute. Add drained soba noodles. Pour in 1/2 the yakisoba sauce and stir-fry until noodles and vegetables are covered with sauce, about 3 minutes. Return pork to the wok. Add additional sauce as desired. Remove from heat.
  • Garnish yakisoba with kizami nori and a small pile of beni shoga just before serving.

The dish's roots are from Chinese lo mein, but with a Japanese flavor twist and a fusion of flavor from Worcestershire sauce. 1/4 cup Worcestershire sauce, such as Lea & Perrins® Worcestershire Sauce
4 teaspoons ketchup
1 tablespoon sugar
2 teaspoons soy sauce
One 16- to 18-ounce package cooked yakisoba noodles (see Cook's Note)
2 tablespoons neutral-flavored oil
8 ounces skinless pork belly, sliced into thin tiles
3 ounces shiitake mushrooms (2 to 5 mushrooms), sliced
1/2 onion, sliced
1/2 carrot, julienned
4 cabbage leaves, chopped
2 scallions, cut into 2-inch pieces
Freshly ground black pepper
Dried green seaweed flakes (aonori; see Cook's Note)

Steps:

  • Shredded pickled red ginger (beni shoga or kizami beni shoga; see Cook's Note)
  • For the yakisoba sauce: Whisk together the Worcestershire sauce, ketchup, sugar and soy sauce in a small bowl and reserve.
  • For the yakisoba: Place the noodles in a bowl, add about 1 teaspoon of the oil and stir to separate.
  • Heat the remaining oil in a skillet over high heat for 1 to 2 minutes. Add the pork belly and sear on all sides, about 3 minutes. Stir in the mushrooms, onion and carrot and cook until tender but not cooked all the way, 3 to 4 minutes. Add the cabbage and cook until almost tender, about 1 minute. Stir in the scallions and cook until slightly softened, about 30 seconds. Sprinkle in some pepper.
  • Add the noodles to the skillet and lower the heat to medium. Stir to warm and combine the noodles with the vegetables in the skillet for about 30 seconds. Stir in the yakisoba sauce and cook until the sauce is absorbed and distributed, about 1 minute. Plate up and top with the dried green seaweed and pickled red ginger if using.

1 tablespoon canola oil
2 tablespoons chile paste
2 cloves garlic, chopped
4 skinless, boneless chicken breast halves - cut into 1 inch cubes
½ cup soy sauce
1 onion, sliced lengthwise into eighths
½ medium head cabbage, coarsely chopped
2 carrots, coarsely chopped
8 ounces soba noodles, cooked and drained

Steps:

  • In a large skillet combine sesame oil, canola oil and chili paste; stir-fry 30 seconds. Add garlic and stir fry an additional 30 seconds. Add chicken and 1/4 cup of the soy sauce and stir fry until chicken is no longer pink, about 5 minutes. Remove mixture from pan, set aside, and keep warm.
  • In the emptied pan combine the onion, cabbage, and carrots. Stir-fry until cabbage begins to wilt, 2 to 3 minutes. Stir in the remaining soy sauce, cooked noodles, and the chicken mixture to pan and mix to blend. Serve and enjoy!

Stir-Fried Noodles With Pork, Cabbage, and Ginger (Yakisoba) image

The most popular person at any Japanese street festival is the yakisoba guy. Standing at a small cart with a hot griddle, he wears a twisted hair band and holds two giant spatulas, one in each hand. With great energy and fanfare he stir-fries a heap of vegetables and pork with chukasoba noodles-the yellow, springy Chinese-style wheat noodles more commonly known as ramen. He finishes with a glug of the special bottled sauce that tastes like a spicier version of tonkatsu sauce, and customers walk toward him like zombies. At home, however, the dish is best cooked one portion at a time.

2 ounces pork belly, thinly sliced, then cut into 3/4-inch pieces

1 (5 1/2-ounce) package yakisoba noodles (a heaping cup)
2 tablespoons jarred yakisoba sauce, preferably the Otafuku brand
1 tablespoon shredded beni shoga (red pickled ginger)
1 heaping tablespoon bonito flakes
1/2 teaspoon aonori (powdered seaweed) or finely chopped nori seaweed sheets

Steps:

  • Heat the oil in a medium-wide nonstick or cast-iron skillet over high heat until the oil shimmers. Add the pork belly, onion, and carrot and cook, stirring frequently, for about 30 seconds. Add the cabbage and cook, stirring, until it wilts slightly and the onion is lightly browned at the edges, about 3 minutes.
  • Add the noodles and cook, tossing with tongs, until the noodles are heated through, about 3 minutes. As you toss, gently separate the strands. (If the noodles don't separate easily, add a splash of water to the pan.) Add the sauce and continue to cook, tossing, until thoroughly coated, about 1 minute. Season with more sauce to taste, toss well, and transfer to a bowl. Top with the beni shoga, bonito flakes, and aonori. Eat right away.

1/4 cup soy sauce
1 tablespoon Worcestershire sauce (note, regular worc. sauce contains fish) or 1 tablespoon vegetarian worcestershire sauce (note, regular worc. sauce contains fish)
2 teaspoons sambal oelek or 2 teaspoons other hot chili paste
1/2 tablespoon sugar
2 teaspoons sesame oil
1 1/2 tablespoons vegetable oil
1 small onion, peeled and sliced
2 garlic cloves, minced
2 carrots, peeled and julienned
1/2 head cabbage, cored and shredded
4 scallion tops, chopped
1 tablespoon toasted sesame seeds (optional)

Steps:

  • Bring a medium pot of water to a boil.
  • Cook the soba noodles in the boiling water for about 2 minutes or until they are al dente.(cooking any longer will cause the noodles to clump together.).
  • Drain the noodles, rinse lightly with cold water and drain again. (This is important so the noodles won't stick.).
  • Combine the soy sauce, Worcestershire sauce, chili paste, sugar, and sesame oil in a small bowl and set aside.
  • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  • When hot, add the onions, garlic, carrots, and cabbage. Cook for 3 to 5 minutes, stirring frequently, until the vegetables begin to soften and brown slightly.

Yakisoba is a Japanese stir-fried noodle dish with a rich Worcestershire-flavored sauce. This veggie-packed version combines carrots, bell peppers, mushrooms and kale for a fun mix of textures and flavors. The key in this dish is to sauté the yakisoba noodles first, creating a dryer, firmer noodle that won't fall apart in the sauce. (Fresh ramen noodles would also work well here.) The tangy-sweet sauce consists mainly of pantry condiments and can be made the day before. Leftovers can be enjoyed the traditional street food way: reheated and served in buttered hot dog buns topped with Japanese mayo and pickled ginger.

3 tablespoons neutral oil, such as safflower or canola

  • Make the yakisoba: Place yakisoba noodles in a colander and rinse under room-temperature water. Using your hands, gently loosen and separate noodles. Drain well.
  • In a 12-inch high-sided nonstick skillet, heat 1 tablespoon of the oil over medium-high. Add noodles and spread in an even layer; cook undisturbed until golden and charred in spots, 3 minutes. Stir noodles once, then cook undisturbed until golden and charred in spots on the other side, 2 minutes longer. Transfer to a large plate.
  • Meanwhile, make the sauce: In a small bowl combine all of the ingredients and mix well.
  • To the skillet over medium, add the remaining 2 tablespoons oil, onion, carrot and bell pepper, and season with salt and pepper. Cook, stirring occasionally, until the vegetables are softened and charred in spots, 5 minutes. Stir in garlic until well combined, then add mushrooms and cook, stirring occasionally, until vegetables are tender and light golden, 3 to 5 minutes. Stir in kale in batches until wilted. 1/3 cup rice wine

YAKISOBA WITH PORK AND CABBAGE

Yakisoba is one of those dishes with roots in several countries. Although it's from Japan, it is Chinese influenced, similar to chow mein and lo mein. However you define it, there are thousands of ways to make yakisoba, many of them good. All contain noodles and vegetables, and usually some protein. The dish is always fried in a pan and finished with a somewhat sweet sauce that is put together quickly, from condiments. All of this provides plenty of leeway.

6 ounces dried Chinese egg noodles, or 10 to 12 ounces fresh
1 tablespoon sesame oil
3 tablespoons peanut oil
2 tablespoons minced ginger
2 pork chops, thinly sliced
1 small head Napa or savoy cabbage, shredded (about 4 cups)
2 carrots, shredded
2 tablespoons ketchup
1/4 cup soy sauce
1/4 cup Worcestershire sauce
2 tablespoons mirin, or a bit of sugar
Few drops Tabasco sauce, or to taste
1 bunch scallions, chopped, white parts only

Steps:

  • Bring a pot of water to a boil, salt it and add noodles. Cook until just done, about 3 minutes. Drain in a colander and run under cold water. Toss noodles with sesame oil to keep them from sticking together, and set aside.
  • Put peanut oil in a large skillet over medium-high heat. When it's hot, add ginger and cook, stirring, until just fragrant, about 1 minute. Add pork and cook for about 5 minutes or until the pork is no longer pink and is starting to brown around the edges.
  • Add cabbage and carrots to skillet and stir; sprinkle with salt. Continue to cook until vegetables soften, adding a bit of water as needed to keep them from sticking.
  • Meanwhile, stir together in a small bowl ketchup, soy sauce, Worcestershire sauce, mirin and Tabasco. When vegetables are soft and any liquid has evaporated, add noodles and sauce to skillet. Toss to coat everything well and cook until noodles are warmed through. Serve, topped with chopped scallions.

10 -12 ounces fresh Chinese egg noodles
1 tablespoon sesame oil
3 tablespoons peanut oil
2 tablespoons minced fresh ginger
2 one chicken breasts or 1 (16 ounce) package tofu, thinly sliced
1 small head napa cabbage (about 4 cups) or 1 small savoy cabbage, shredded (about 4 cups)
2 carrots, shredded
2 tablespoons ketchup
1/4 cup soy sauce
1/4 cup Worcestershire sauce
2 tablespoons mirin or 2 tablespoons a bit sugar
3 drops hot sauce (recommended ( Tabasco)
1 bunch scallion, chopped, white parts only

Steps:

  • Bring a pot of water to a boil, salt it, and add noodles. Cook until just done, about 3 minutes. Drain in a colander and run under cold water. Toss noodles with sesame oil to keep them from sticking together, and set aside.
  • Put peanut oil in a large skillet over medium-high heat. When it's hot, add ginger and cook, stirring, until just fragrant, about 1 minute. Add protein and cook until no longer pink and is starting to brown around the edges.
  • Add cabbage and carrots to skillet and stir; sprinkle with salt. Continue to cook until vegetables soften, adding a bit of water, as needed to keep them from sticking.
  • Meanwhile, stir together in a small bowl ketchup, soy sauce, Worcestershire sauce, mirin, and hot sauce. When vegetables are soft and any liquid has evaporated, add noodles and sauce to skillet. Toss to coat everything well and cook until noodles are warmed through. Serve, topped with chopped scallions.

1 (7 2/3 ounce) package yakisoba noodles
1 yellow onion (chopped)
2 garlic cloves (Minced)
1/2 cup snow peas (Ends snipped and De-stringed)
1/2 cup carrot
3/4 cup fresh broccoli and cauliflower mix, chopped
1/2 cup bell pepper (Red & Green Bell, Sliced)
1/2 cup raw unsalted peanuts or 1/2 cup almonds
2 medium green onions (chopped)
1 1/2 tablespoons peanut butter
1 tablespoon soy sauce
1/4 teaspoon red pepper flakes
3 tablespoons lime juice
1 1/2 tablespoons fish sauce
1/2 teaspoon sugar
2 tablespoons sesame oil
1 tablespoon milk (optional)

Steps:

  • First, start by chopping up all the vegetables evenly, if not already chopped.
  • Heat in a skillet over medium high heat 1 Tbsp of the Sesame oil, add the Garlic and onions. Cook until they are just soft, add the remaining vegetables. Continuously stir until all the vegetables become just soft, but still have a bite to them.
  • While the veggies are cooking, in a small saucepan, on medium heat, combine the following ingredients, peanut butter, soy sauce, red pepper flakes, lime juice, fish sauce, sugar, and the remaining 1 tbsp sesame oil.
  • Stir continuously until the peanut butter is melted and all of these ingredients become a nice sauce. If it's too thick for your liking, add a bit of milk to relieve the thickness. If the sauce is too thin, add a bit more peanut butter to your desired thickness. Keep warm and stir frequently until ready for use.
  • Leaving the skillet on, remove the cooked veggies from the skillet and place on a plate out of the way temporarily. Add one package of the Yakisoba noodles (discarding the seasoning packet offered inside the package.) separate by breaking the noodles apart and heat up within the same skillet. Place veggies back into the same skillet with the noodles and combine evenly warming through.
  • Pour the peanut butter sauce over the top and add the peanuts or almonds. Combine until all the vegetables, nuts and noodles are evenly coated. Heat through. If it becomes to thick add a bit more milk and mix until well combined and has a nice & creamy texture.
  • Plate and sprinkle a small amount of chopped green onions and serve.

3/4-1 lb boneless steak, inexpensive and partially frozen
2 (10 ounce) packages Birds Eye frozen Japanese-style vegetables or 2 (10 ounce) packages Birds Eye frozen Chinese-style vegetables
3 (3 ounce) packages ramen noodles or 4 (3 ounce) packages ramen noodles, broken up
soy sauce
salt and pepper, to taste
2 tablespoons oil

Steps:

  • Cut semi-frozen steak into thin bite size pieces and stir-fry over medium heat until thoroughly browned, heat 2 quarts water to rapid boil while stir-frying meat.
  • Add 1 to 2 seasoning packets of seasoning mix from noodles to steak.
  • Add Ramen noodles to water and boil 3 minutes.
  • While cooking noodles, add vegetables and soy sauce to taste to steak and heat thoroughly.
  • When noodles are done, drain and add to steak and vegetable mixture.
  • Salt and pepper to taste.
  • Note: Chicken, pork or shrimp can be substituted for steak.

2 tablespoons Worcestershire sauce

  • Chop bok choy (or napa cabbage). Slice sweet red pepper, mushroom, onion. Mince garlic. Measure peas and bean sprouts.
  • Combine ketchup with soy, worcestershire, and oyster sauces. Set aside.
  • Cook yakisoba (udon, or dry spaghetti). Separate as it cooks. Drain & set aside.
  • Heat oil in large skillet. Add peppers, mushroom, garlic, onion, bean sprouts, and peas. Stir fry about 5 minutes. Add water chestnuts, and bok choy, and continue to stir fry. Add cooked noodles and sauce. Mix well. Serve.
  • Extra sauce is 0 points. Add points for peanuts, shrimp or other additions.

1 carrot
1/4 of a small cabbage
4 spring onions, roughly chopped
8 ounces bean sprouts
15 fresh shiitake mushrooms, sliced
2 tablespoons oil
pickled ginger, to taste
ao nori, to taste
2 tablespoons Worcestershire sauce
2 tablespoons catsup
2 tablespoons soy sauce
2 tablespoons oyster sauce

Steps:

  • Cut the cabbage, carrot, onion, and mushrooms into bite sizes.
  • Heat oil in a large pan. Add cabbage, carrot, onion, and mushrooms in the pan and saute in high heat. Add yakisoba noodles in the pan and stir-fry 1 minute.
  • Put 1/3 cup of water in the pan and cover it with a lid. Steam the noodles for a few minutes. Take the lid off and add yakisoba seasoning or sauce.
  • Stir the noodles well and fry them for a few minutes.
  • Sprinkle ao-nori and beni-shoga over yakisoba before serving.

1 package ramen noodles
2 cups thinly sliced cabbage
1 cup thinly sliced onion
2 tablespoons cooking oil, divided
1 teaspoon ginger powder
1 teaspoon sesame oil
soy sauce

Steps:

  • Boil noodles in just enough water to cover, including seasoning packet.
  • Saute cabbage and onions in 1 T cooking oil.
  • when noodles are limp, drain and add to skillet with cabbage and onions with remaining oil.
  • Stir to mix and fry noodles.
  • Add remaining ingredients, toss to mix.
  • Serve hot.
  • Serves two.
  • Can be doubled and can add leftover meat like steak, pork, or chicken to make a complete meal.
