1 large cucumber
2 cups plain yogurt
3/4 teaspoon cumin
1/4 teaspoon ground coriander seed
1/8 teaspoon cayenne
Juice of 1 lemon
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1/4 cup chopped fresh mint
Pita wedges, for serving

Steps:

  • Slice the cucumber in half. Use a spoon to scrape out the seeds, then grate it onto paper towels. Squeeze the cucumber in the paper towels to remove the excess moisture, then set aside.
  • In a bowl, stir together the yogurt, cumin, coriander, cayenne, lemon juice, salt and pepper. Add the cucumber and stir to combine, then stir in the mint. Taste and adjust the seasoning as you desire.
  • Cover and refrigerate for a couple of hours to allow the flavors to combine. Serve as a dip with pita wedges.

1 ounce x-rated fusion liqueur
1 ounce tequila
2 ounces sweet and sour cocktail mix
ice
1 dash Rose's lime juice
2 lime wedges
1 dash 7-Up soda

Steps:

  • In a blender add X-rated liqueur, tequilla, sweet and sour, lime juice and desired amount of ice.
  • Set to crush, or until the consistecy desired for a margarita - may turn watery if you over blend though.
  • Pour into margarita glass and topwith a splash of 7-Up and a lime wedge(twist) for garnish.
  • Enjoy! ;).

Serve this cool, refreshing salad with my Lamb Tagine and Moroccan Couscous on this site. Make the salad early in the day and keep in the refrigerator to let the flavors blend and intensify. Add more mint to taste, but do not substitute dried mint; the flavor is just not the same.
