X-LAZY EARLY RISER CROCK POT BREAKFAST
When entertaining house guests with early morning flight departures, I use this recipe. I defrost the tator tots in fridge the day before. I do think if you assembled it all and refrigerated it, the timing works out better. Six hours is a long time and a cook needs their beauty sleep, LOL! The texture of the potatoes is less than ideal but a crock pot is not the same as frying pan.

Steps:
- Line the crock pot with slow cooker liner.
- Set up timer so that it cooks for 6 hours or less on low.
- Layer half of the following ingredients: potatoes, onion, ham, and cheese.
- Don't let cheese touch sides of crockpot or it will burn.
- Repeat layers.
- Remove seal from Egg Beater container, dump in salt, pepper, and dried mustard (optional) or try thyme or Italian if you prefer.
- Put cap back on, shake well, pour onto layered mixture, and cover the crock pot. Refrigerate until you go to bed-- cold temperature should slow heat a bit. Cook 6 hours or less on low.
- If you are awake but not your guests, (lol) lift lid, wipe off water drops that are on the lid, replace lid, unplug, let set, and it should stay warm for quite awhile.

APPLE PEAR BREAKFAST COBBLER FOR THE CROCK POT
This is THE BEST crock pot breakfast I've ever had! There is nothing better than treating the family to a delicious hot breakfast before sending them out into the chilly world.

Steps:
- Spray crockpot with nonstick cooking spray.
- Peel, core and slice into 8ths the apples and pears.
- Put the prepared fruit into the crock pot.
- In a jar with a tight fitting lid put the brown sugar, flour, lemon juice, apple cider, and spices.
- Put the lid on the jar and shake the jar vigorously until there are no more lumps.
- Pour over fruit and stir to coat.
- Dot the tops of apples and pears with 2 T of butter.
- Spread the granola evenly over the fruit.
- Cover.
- Cook on low 6-8 hours.
- Turn off crock pot, remove lid, and allow to cool 10 minutes before serving.
- Serve with milk for breakfast or ice cream as a dessert.
- *We've had it with a bit of ice cream even for breakfast! :).

- In 4-5 quart crock pot, layer ingredients in order: one third of the tater tots, bacon, onions, green peppers, and cheeses. Repeat layers two more times, ending with cheeses.
- In a medium mixing bowl, combine eggs, milk, and flour and beat with whisk or egg beater until combined. Season with salt and pepper to taste. Pour mixture over layers in crock pot.
- Cover crock pot and cook on low. The cooking time may take anywhere from four hours to overnight, depending on your crock pot.

CHRISTMAS MORNING CROCK POT BREAKFAST
Slow cookers can make quick work of breakfast. What could be better than waking up to the fresh aroma of a hearty morning meal wafting through the house? With the aid of the Crock pot, it's easy to give the entire family a hot breakfast, regardless of when they drag themselves out of bed. This recipe has been passed down to me from friends. It is a Christmas morning tradition in our household. It's great to throw it together the night before and not have to worry about cooking the next morning. We typically spoon it into tortillas and top with salsa for breakfast tacos. Very forgiving recipe, you can do just about anything to it. UPDATE: I've noticed some people not having luck with this, so I wanted to add a few things -- make SURE you use DICED hash browns, little squares, not the shredded stuff. Also, I've only ever made this in an oval crock with a removal ceramic interior. You may want to check it after 8 hours if your crock runs hot.

- Repeat the layering process two or three more times, ending with a layer of cheese.

- mix eggs and 2 1/2 cups milk together --
- pour over bread.
