1 tablespoon butter
1 medium onion, thinly sliced
1 -2 tablespoon flour
2 cups nonfat milk
2 lbs potatoes, thinly sliced
1 cup shredded low-fat cheese
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Heat oven to 375 degrees.
  • Coat a 2-quart baking dish with cooking spray.
  • Melt butter in a large frypan over medium heat; add in onion and cook stirring occasionally until onion begins to brown (about 5 minutes).
  • Stir in flour, then slowly add in milk.
  • Add in potatoes; stir to mix; bring to a boil.
  • Stir in 3/4 cup cheese, salt and black pepper.
  • Pour mixture into prepared baking dish then spread out.
  • Bake for 1 hour uncovered.
  • After 1 hour cooking time cover with foil and continue to bake another 20 minutes more.
  • Change oven to broil heat.
  • Sprinkle the remaining cheese over potatoes and broil 6-inches from heat until the cheese is golden (about 1-2 minutes).
  • Cool 5 minutes before serving.

Found this recipe on the Weight Watchers website. It is a core recipe but can become flex by counting the points. I think these potatoes have a lot of flavor and are a great side dish. Even kids and husbands will enjoy! It's easy too! I also double the ingredients and use 6-8 potatoes to get a good amount out of this.

Pam cooking spray (or other cooking spray)
1 teaspoon olive oil
2 tablespoons Dijon mustard
3/4 teaspoon paprika
1/4 teaspoon dried thyme
1/2 teaspoon table salt
1/4 teaspoon black pepper
4 -6 large potatoes (quartered, and cut into about equal sized pieces)

Steps:

  • As mentioned in the description, I usually double all the ingredients and use about 6 or so potatoes (depending on size). What I am looking for is to have enough coating of the ingredients to cover the potatoes and give them the full flavor. Please adjust the amount of potatoes to suit your tastes!
  • Preheat oven to 425°F.
  • Coat a 9 x 13-inch baking dish or a cookie sheet with cooking spray.
  • Whisk together oil, mustard, paprika, thyme, salt and pepper in a large bowl.
  • Chop up potatoes and add them to the bowl with the whisked ingredients. Stir to coat the potatoes.
  • Transfer potatoes to the baking dish or cookie sheet and roast for about 15 minutes. Stir and continue to roast 15 minutes more.
  • What I do is roast the potatoes until they are pretty browned and toasted. I check to see if they are cooked through by piercing them with a fork. If the fork is not going through easily, they need more time. I will also add a piece of Aluminum Foil to the top of the potatoes, turn the oven down to 400 F and continue to roast. The foil will allow the potatoes to get tender in the inside and cook all the way through without burning them.
  • Take out of the oven and cool slightly so that you don't burn your mouth when eating! Also good with some ketchup added to the side!

1 cup low-fat milk
4 ounces sharp cheddar cheese (mature)
3 tablespoons light sour cream
2 teaspoons Dijon mustard
1/4 teaspoon black pepper, ground
1 lb raw potatoes, peeled and thinly sliced
1 cup red onion, thinly sliced

Steps:

  • Preheat oven to 375. Spray baking dish with cooking spray.
  • In a bowl, whisk together milk, 3/4 cup of the cheese, sour cream, Dijon mustard, and pepper. Set aside.
  • Layer half of the potato and onion slices in the bottom of the dish.
  • Pour over half of the milk-mixture. Top with remaining potatoes and onions, then pour over remaining milk mixture.
  • Scatter over the remaining 1/4 cup of cheese.
  • Cover with foil (sprayed with cooking spray, so that the cheese doesn't stick to it later)and bake 45 minutes.
  • Uncover and bake 30 more minutes more, or until potatoes are tender and cheese is golden and bubbly.

3 large baking potatoes
1/2 cup fat-free reduced-sodium chicken broth
1 cup 2% Milk Shredded Sharp Cheddar Cheese, divided
1/3 cup thin green onion slices
1/4 cup Light Sour Cream
1 teaspoon Dijon Mustard
1/4 teaspoon paprika

Steps:

  • Heat oven to 400° F. Pierce potatoes in several places with tip of sharp knife. Bake 1 to 1-1/4 hours or until tender. Immediately cut potatoes lengthwise in half; scoop out centers, leaving 1/4-inch-thick shells. Beat potato pulp, broth, 1/2 cup cheese, onions, sour cream and mustard with mixer until well blended. Spoon into shells; top with remaining cheese and paprika. Bake 20 minutes or until heated through.

3 lbs russet potatoes (peeled and thinly sliced, about 6 medium)
2 medium onions, thinly sliced
1 (6 ounce) package sliced process American cheese
salt and pepper
1 1/4 cups cheddar cheese, shredded
1/4 cup butter
1/4 cup flour
1 pinch cayenne pepper (or to taste)
3 cups warm full-fat milk

Steps:

  • Set oven to 400 degrees.
  • Butter a 13 x 9-inch baking dish.
  • Cook the sliced potatoes in boiling water for about 5 minutes; drain.
  • Layer one-third of the partially-cooked potatoes in bottom of the baking dish, then one-third of onion slices, then one-third of the cheese slices.
  • Sprinkle with salt and pepper, then repeat layers two more times.
  • Sprinkle top with the shredded cheddar.
  • For the sauce; in a medium heavy saucepan melt butter over low heat.
  • Add in flour and cayenne then stir for 1 minute.
  • Slowly add in milk; whisk or stir until bubbly and thickened (about 3 minutes).
  • Pour the sauce over the cheese and potato mixture.
  • Bake for about 35 minutes or until golden.
  • Let stand for 10 minutes before serving.
