This Mediterranean-inspired chicken dish comes packed with an array of bold flavored ingredients-from pimiento-stuffed olives, meaty artichokes, and balsamic vinegar to sweet golden raisins, dried dates, and briny capers-that create an amazing blend of flavors and textures. 14 oz Canned artichoke hearts without oil drained and quartered
0.75 cup(s) Dried date(s) pitted and chopped
0.333 cup(s) Packed light brown sugar
0.25 cup(s) Golden seedless raisins
12 medium Olive(s) pimiento-stuffed Manzanilla olives, halved
2 Tbsp Balsamic vinegar
3 medium clove(s) Garlic clove(s) minced
1 Tbsp Dried basil
1 Tbsp Capers drained
1 Tbsp Olive oil extra-virgin
2 tsp Dried oregano
0.5 tsp Table salt
0.25 tsp Black pepper freshly ground
0.5 cup(s) Reduced-sodium chicken broth

Steps:

  • Combine the chicken, artichoke hearts, dates, sugar, raisins, olives, vinegar, garlic, basil, capers, oil, oregano, salt, and pepper in a large zip-close plastic bag. Squeeze out the air and seal the bag; turn to coat the chicken. Refrigerate, turning the bag occasionally, at least 8 hours or overnight.
  • Preheat the oven to 350ºF. Remove the chicken pieces from the marinade and arrange them in a single layer in a large roasting pan. Pour the marinade over the chicken, then pour in the broth. Bake until a thermometer inserted into the thickest part of the chicken registers 160ºF, 35-45 minutes. Yields 1 thigh with about 1/2 cup sauce.

1 stick butter
½ cup chopped onions
1 tablespoon minced garlic
1 teaspoon Italian seasoning
½ teaspoon dried basil
salt to taste
2 (14 ounce) cans artichoke hearts, drained and quartered
1 (28 ounce) can crushed tomatoes
1 (14.5 ounce) can diced tomatoes
1 (6 ounce) can black olives, halved
1 (4.5 ounce) can sliced mushrooms, drained
4 boneless, skinless chicken breasts

Steps:

  • Melt butter in a large skillet over medium-high heat. Add onions, garlic, Italian seasoning, basil, and salt. Saute until it starts to brown, about 5 minutes.
  • Add artichoke hearts, crushed tomatoes, diced tomatoes, olives, and mushrooms; bring to a boil. Add chicken, cover, and reduce heat to medium. Cook, stirring occasionally, until chicken is cooked through and the juices run clear, about 20 to 25 minutes.
