2 tablespoons rice vinegar
2 tablespoons Thai sweet chili sauce
1 teaspoon sesame oil
¼ teaspoon white sugar
¼ teaspoon granulated garlic
1 pinch salt to taste
1 cucumber, thinly sliced
1 green onion, thinly sliced

Steps:

  • Whisk rice vinegar, chili sauce, sesame oil, sugar, and garlic together in a small bowl; season with salt.
  • Combine cucumber and onion in a separate bowl. Pour vinegar mixture over cucumber and onion mixture and toss to coat. Refrigerate at least 1 hour. Toss before serving.

1/4 cup VINAIGRETTE: fresh mint, chopped
1 tablespoon fresh ginger, peeled and grated
1/2 teaspoon crushed and chopped garlic
1/2 piece orange, juice and zest of
3 tablespoons sweet chili sauce
1/4 cup rice wine vinegar
1 teaspoon sesame oil
1/2 cup vegetable oil
6 cups SALAD: arugula
2 pieces fresh mangoes or oranges, peeled and thinly sliced
1/2 piece red pepper, julienned
1/2 piece orange pepper, julienned
1/2 piece yellow pepper, julienned
1/4 piece red onion, sliced thinly
1/2 piece long English cucumber, halved lengthwise and sliced thinly on the diagonal
1/2 cup slivered almonds or chopped peanuts

Steps:

  • Place all vinaigrette ingredients excepts oils into a mixing bowl and whisk to combine. Whisk in sesame and vegetable oil slowly til well blended
  • Assemble arugula on your favourite platter, shallow bowl or individual plates
  • Top with mango or orange, peppers, red onion, cucumber and almondsDrizzle with vinaigrette
