4 medium baking potatoes (evenly-sized)
1 1/2 tablespoons parmesan cheese
4 tablespoons grated cheddar cheese
2 -3 tablespoons melted butter
2 -3 tablespoons chopped fresh herbs (parsley, chives, thyme, sage) or 2 teaspoons dried herbs
1 teaspoon salt

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel the potatoes if the skin is too tough, otherwise just scrub and rinse them.
  • Cut the potatoes into thin slices (but not all the way through - place the handle of a spoon or table knife alongside the potato to prevent the knife from slicing all the way).
  • Put the potatoes in a baking dish; slightly fan out the slices.
  • Drizzle the potatoes with melted butter and sprinkle with herbs and salt (to taste).
  • Bake the potatoes for about 50 minutes.
  • Remove the potatoes from the oven, sprinkle with parmesan and cheddar cheese.
  • Bake the potatoes for another 10-15 minutes (until they're lightly browned and soft inside, and the cheeses are melted).

I got this from WW Simply the Best cookbook. 3 points per serving. I find it easiest to make a batch to store in fridge and then complete the 'second' baking just before dinner.

4 large baking potatoes, scrubbed
1 bulb of garlic
1/2 cup low sodium chicken broth
1/2 cup fat free sour cream
1/2 teaspoon fresh ground black pepper
1/4 cup grated parmesan cheese
paprika

Steps:

  • preheat oven to 425°F.
  • Pierce potatoes with fork several times and place on baking sheet. Wrap garlic in foil and place alongside the potatoes. Bake until potatoes are tender and garlic is softened and brown about 50 - 60 minutes. Let cool about 15 minutes until comfortable to handle.
  • Halve the potatoes lengthwise and scoop the pulp into a bowl leaving skins intact.
  • Cut the garlic bulb in half squeeze out the pulp and add to the potato. Add broth, sour cream and pepper. Stir and mash with fork to desired consistency. Spoon mixture back into potato skins and sprinkle with cheese and paprika.
  • Return to baking sheet and heat until warmed through about 15 minutes.

Steps:

  • Heat oven to 400° F. Pierce potatoes in several places with tip of sharp knife. Bake 1 to 1-1/4 hours or until tender. Immediately cut potatoes lengthwise in half; scoop out centers, leaving 1/4-inch-thick shells. Beat potato pulp, broth, 1/2 cup cheese, onions, sour cream and mustard with mixer until well blended. 1 bulb garlic clove (large, 1/4-inch-slice cut off top)
3 lbs potatoes (rinsed, pierced with a fork, about 6 large baking potatoes)
6 slices uncooked turkey bacon
4 cups reduced-sodium chicken broth
1 1/2 tablespoons fresh thyme, chopped
1/2 teaspoon table salt
1/4 teaspoon black pepper, freshly ground
6 tablespoons reduced-fat sour cream
6 tablespoons low-fat cheddar cheese, shredded
6 tablespoons scallions, sliced

Steps:

  • Preheat oven to 400ºF.
  • Wrap entire garlic bulb tightly in foil; place garlic and potatoes in oven. (You do not need to put them on a pan; they can go right on an oven rack.).
  • Bake garlic until soft when squeezed, about 45 minutes; remove from oven and let cool. Continue baking potatoes until tender when pierced, about 15 minutes more; let potatoes stand until cool enough to handle.

6 russet potatoes
12 strips bacon
1 pound broccoli florets
¾ cup diced red bell pepper
½ cup water
1 cup sour cream
1 teaspoon salt
¼ teaspoon ground black pepper
4 cups grated Cheddar cheese
8 green onions, chopped

Steps:

  • Preheat an oven to 400 degrees F. Pierce each potato with a paring knife and roast in the oven until tender, about 1 hour, depending on the size of your potatoes.
  • Meanwhile, dice up the bacon. Heat a saute pan over medium heat and cook the bacon until crispy, about 7 minutes. Drain the bacon fat and reserve.
  • Return the saute pan to the heat and add the reserved bacon fat. Cook the broccoli and red pepper for 2 minutes. Add the water and allow to cook until water has evaporated. Remove from heat.
  • When potatoes are done cooking, remove and allow to cool until you can handle them. Cut them in half and with a spoon, scoop out the insides, leaving about 1/4 inch border on the skins.
  • Place the scooped-out potato in a bowl and mix with half the bacon, broccoli, red pepper, sour cream, salt, pepper, and half the Cheddar. Divide this filling back among the potato skins.
  • Return the stuffed potatoes to the 400-degree oven and bake until heated through, or until an instant-read thermometer reads 165 degrees, 10 to 12 minutes. Remove and top with remaining bacon, Cheddar, and green onions.
