1 pound ground beef
1 medium onion, chopped
1 can (8 ounces) tomato sauce
1 garlic clove, minced
1 tablespoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 can (2-1/4 ounces) sliced ripe olives, drained, optional
1 tablespoon butter
6 corn tortillas (6 inches)
2 cups shredded cheddar cheese
1/4 cup water

Steps:

  • In a large skillet, cook beef and onion until meat is no longer pink; drain. Add the tomato sauce, garlic, chili powder, salt, pepper and, if desired, olives. Bring to a boil. Reduce heat; simmer for 5 minutes or until thickened. , Lightly butter tortillas on one side; place one tortilla, buttered side down, in a 2-qt. round casserole. Top with about 1/2 cup meat mixture and 1/3 cup cheese. Repeat layers, ending with cheese., Pour water around the sides of casserole (not over top). Cover and bake at 400° for 20 minutes or until heated through. Let stand 5 minutes before cutting.

The best healthy chicken tortilla casserole from scratch! This easy layered casserole is loaded with cheese, veggies, and juicy chicken.

1 1/2 pounds boneless skinless chicken breasts*
2 teaspoons extra-virgin olive oil
1 large onion (chopped)
1 medium green bell pepper (cored and chopped)
1 medium red bell pepper (cored and chopped)
1 medium jalapeno (cored and diced)
2 cloves garlic
2 teaspoons ground cumin
1 teaspoon dried oregano
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 can tomato sauce ((28 ounces))
1 1/2 cups chicken stock
3 tablespoons jalapeno hot sauce (such as Tabasco, plus additional for serving)
18 (6-inch) corn tortillas
2 cups freshly grated Monterey Jack cheese ((8 ounces))
Optional for serving: (salsa, sliced avocados, lime juice, plain Greek yogurt (or sour cream), chopped fresh cilantro)

Steps:

  • Preheat the oven to 375 degrees F. Coat a 9x13-inch casserole dish with baking spray.
  • If needed, cook and shred chicken according to these easy steps.
  • Heat the olive oil in a large, deep skillet over medium-high, then add the onion, green bell pepper, red bell pepper, and jalapeno. Saute until the veggies are tender, about 10 minutes.
  • Add the garlic, cumin, oregano, salt, and pepper and cook until fragrant, about 30 seconds.
  • Add the tomato sauce, chicken stock, and jalapeno hot sauce, then stir to combine. Let the sauce simmer for 12 minutes.
  • To assemble the casserole, spread a thin layer of the sauce on the bottom of the prepared baking dish. Arrange 6 tortillas on top to cover the sauce, overlapping as needed.
  • Top with 1/3 of the chicken and 1/2 cup of cheese.
  • Spread 1/3 of the remaining sauce over the top, then repeat the process twice more.
  • Finish by sprinkling the last 1/2 cup of the cheese over the top then cover the pan with foil.
  • Bake for 35 minutes. Remove the foil, return the pan to the oven, then bake for 10 additional minutes, until the casserole is hot and bubbly and the cheese is melted. Let rest 5 minutes. Serve hot with desired toppings.

When you don't want to heat up your oven, turn to your grill to keep your house cool. With the lid closed, it functions like an oven, quickly cooking this layered casserole of tortillas, chicken, black beans, and corn-giving it wonderfully crispy edges. Have your ingredients prepped, and take them out to the grill on a tray or sheet pan so you can easily pile the components into the hot pan. Salsa provides the moisture to soften the tortillas without making them soggy; use a pureed, more liquidy style and not a chunky pico de gallo.

1 medium Fresno chile thinly sliced

Steps:

  • Coat a 10-inch cast-iron skillet with cooking spray. Set the pan on a grill, close the lid, and heat the grill to medium-high (about 425°F). Alternatively, place the pan in the oven and preheat the oven to 425°F.
  • In a large bowl, combine the corn, black beans, and chicken. Open the grill lid and arrange 6 tortilla halves over the bottom of the pan. Top with half of the chicken mixture and ¾ cup salsa. Top with another 6 tortilla halves, remaining half of the chicken mixture, and ¾ cup salsa. Arrange the remaining 6 tortilla halves over the top, and top evenly with ½ cup salsa. Sprinkle with cheese. Carefully cover the pan with foil coated with cooking spray. Close the grill lid and cook for 15 minutes.
  • Open grill lid and carefully remove foil from pan. Sprinkle the scallions and chile over casserole. Close grill lid and cook until cheese is melted and starting to crisp around the edges of the pan, 3 to 4 minutes. Cut casserole into 6 wedges.

2 tablespoons olive oil
2 cups diced fresh tomatoes (about 3 to 5)
1 onion, diced
3 cloves garlic, minced
4 teaspoons chili powder
2 teaspoons paprika
2 teaspoons ground cumin
1 large boneless, skinless chicken breast (about 12 ounces), cut into bite-size pieces
Kosher salt
1 15-ounce can pinto beans, drained and rinsed
1 15-ounce can kidney beans, drained and rinsed
1 16-ounce jar salsa verde
10 large (burrito-size) flour tortillas or 12 small flour or corn tortillas
2 cups cooked rice (from 2/3 cup dry)
1 11-ounce can corn kernels, drained
1 pound grated cheddar-jack cheese
1 1/2 cups red enchilada sauce
Sour cream and cilantro, for serving

Steps:

  • In a large skillet over medium-high heat, heat 1 tablespoon of the olive oil. Add the tomatoes, onion and garlic, stir and cook for a minute or two to soften the onion. Add 2 teaspoons of the chili powder, 1 teaspoon of the paprika and 1 teaspoon of the cumin. Stir and cook the mixture for another minute or two to release the flavors of the spices. Remove the mixture to a bowl and set aside.
  • In the same skillet, heat the remaining 1 tablespoon olive oil. Add the chicken along with the remaining 2 teaspoons chili powder, 1 teaspoon paprika, 1 teaspoon cumin and 1/2 teaspoon salt. Saute the chicken until it's deep golden brown and done in the middle, about 4 to 5 minutes. Add 1 cup water and stir to make a sauce. Bring the sauce to a boil and cook until it's reduced by half, about 3 to 4 minutes. Stir in the beans and set aside.
  • To assemble the casserole, pour half a jar (about 1 cup) of salsa verde into the bottom of a 9-by-13-inch casserole dish or disposable foil baking pan. Add a layer of half the tortillas on top of the salsa verde, overlapping the edges. Spoon the rice over the tortillas, spread the tomato mixture over the rice, then sprinkle the corn over the tomatoes. Next, add the chicken and bean mixture, then sprinkle on half the cheese and pour over half the enchilada sauce. Next, add the rest of the tortillas, then pour on the rest of the salsa verde and the rest of the enchilada sauce and sprinkle on the rest of the cheese.
  • If you're baking the casserole right away, preheat the oven to 375 degrees F and bake, covered with foil, for 20 minutes. Then remove the foil and continue baking for 15 to 20 minutes, or until hot and bubbly. Serve with sour cream and cilantro.

1 (15 ounce) can kernel corn (drained)
1 (15 ounce) can black beans (rinsed and drained)
1 (1 1/4 ounce) package taco seasoning mix
8 corn tortillas
3/4 cup nonfat sour cream
1/3 cup reduced-fat Mexican cheese blend, shredded
1/3 bunch fresh cilantro, chopped, to taste (or less (or more)

Steps:

  • Brown ground beef and chopped onions in large skillet; brown 10 to 12 minutes or until thoroughly cooked, stirring constantly. Drain well and rinse with warm water to remove all fat; return beef/onions to skillet.
  • Add corn, black beans, tomatoes, chilies/jalapenos and taco seasoning mix; mix well. Reduce heat; simmer 5 minutes.
  • Meanwhile spray 12x8-inch (2-quart) baking dish with nonstick cooking spray. Cut each tortilla in half; place 8 halves in bottom of sprayed baking dish, overlapping slightly.
  • Spoon half of beef mixture evenly over tortillas. Spoon sour cream over beef mixture; spread evenly. Top with remaining 8 tortilla halves and remaining beef mixture. (Cover tightly with foil & Freeze for later OR cook as directed below...).

2 cans (15 ounces each) black beans, rinsed and drained
8 corn tortillas (6 inches)
2 cups shredded reduced-fat Mexican cheese blend
TOPPINGS:
1-1/2 cups shredded lettuce
1 cup chopped fresh tomatoes
1/2 cup thinly sliced green onions
1/2 cup sliced ripe olives

Steps:

  • In a large saucepan, combine the onions, peppers, tomatoes, picante sauce, garlic and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes.
