3/4 cup heavy cream
2 tablespoons Dijon mustard
1 1/2 cups diced cooked chicken

Steps:

  • Cook fettuccine as directed on package. Drain well and return the pasta to the pot.
  • Add the cream and mustard to the pasta in the pot. Cook over medium heat, mixing well, about 2 minutes or until hot.

Here, classic chicken fettuccini Alfredo may have been reinvented into a lighter version, but this recipe doesn't skimp on the dish's signature great creamy taste and texture. Heavy cream is combined with full-fat Greek yogurt to create the cheesy sauce's luscious mouthful. Patting the chicken dry before cooking it helps it to brown which develops the dish's flavor so it's worth the extra effort. For a hint of spice, you can add 1/4 teaspoon of freshly grated nutmeg to the sauce. You can also use basil instead of parsley. Serve with a mixed greens salad tossed with balsamic or red wine vinaigrette for comforting meal.

Steps:

  • Heat a large, heavy skillet over medium heat.
  • Rub garlic over chicken; reserve garlic. Season chicken with salt and pepper and rub in seasonings with your hands; set aside.
  • Off heat, coat skillet with cooking spray and then set over medium-low heat. Sauté garlic until fragrant, about 1 minute. Add chicken and cook until golden, flipping once, about 5 minutes per side.
  • Meanwhile, in a small bowl, combine broth, heavy cream and yogurt; pour over chicken and scrape bottom of skillet with a wooden spoon to incorporate seasonings. Simmer chicken gently, turning once, about 30 minutes.
  • While chicken is cooking, bring a medium pot of salted water to a boil. Cook pasta according to package directions; drain.
  • Remove chicken from cream sauce and set aside. Add Parmesan cheese to cream sauce and mix until well-combined. Add cooked pasta and 3 tablespoons of parsley; toss well. Serve pasta topped which chicken and rest of parsley. Yields about 3 ounces of chicken and 2/3 cup of pasta/sauce per serving.

Bless his heart, he asked what kind of meat is this?? Of course, after he said "this is excellent!" Oh! he hates chicken. There's only 3 WW Points in this dish, really hard to believe isn't it?

1 (9 ounce) package refrigerated fresh fettuccine
0.5 (16 ounce) package fresh broccoli florets, i just use fresh broccoli (4 cups)
1/3 cup fat-free honey-dijon salad dressing
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon olive oil
1 teaspoon garlic, minced
1 (10 1/8 ounce) package cooked boneless skinless chicken breasts, shredded (I just use cooked leftover chicken)
1/4 teaspoon ground pepper

Steps:

  • Cut pasta in half before cooking.
  • Cook pasta according to package directions, omitting salt and fat.
  • Add broccoli to pasta during last 3 minutes of cooking time.
  • Drain well; place in large bowl.
  • While pasta cooks, combine dressing and next 4 ingredients; stir well.
  • Pour dressing mixture over pasta mixture.
  • Add chicken, and toss gently.
  • Sprinkle with pepper.

1/4 cup Dijon mustard
1 tablespoon olive or vegetable oil
1 tablespoon lemon juice

1 1/3 cups uncooked orzo pasta (8 oz)
Chopped fresh parsley, if desired

Steps:

  • Heat oven to 375°F. Spray 11x7-inch glass baking dish with cooking spray. Place chicken in baking dish.
  • In small bowl, mix remaining ingredients except pasta and parsley. Spread mustard mixture over chicken to coat thoroughly.
  • Bake uncovered 25 to 30 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.

1 package (16 ounces) bow tie pasta
5 tablespoons butter, divided
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
1 teaspoon salt, divided

2 medium yellow summer squash or zucchini, cut into 1-inch pieces
3 tablespoons all-purpose flour
2 garlic cloves, minced
1-1/2 cups fat-free milk
3/4 cup grated Parmesan cheese

Steps:

  • In a 6-qt. stockpot, cook pasta according to package directions., In a large cast-iron or other heavy skillet, heat 1 tablespoon butter over medium heat. Add chicken; cook and stir until no longer pink, 7-9 minutes. Add 1/4 teaspoon each salt and pepper; remove from pan. In same pan, heat 1 tablespoon butter over medium heat. Add squash; cook and stir until tender, 3-5 minutes. Remove from heat., In a small saucepan, melt remaining 3 tablespoons butter over medium heat. 1 teaspoon finely chopped fresh rosemary plus 2 sprigs rosemary
2 teaspoons finely chopped garlic
2 teaspoons lemon juice
6 bone-in chicken thighs, skin removed (about 1 1/2 lb)
1/4 teaspoon salt
1 tablespoon olive oil
1/2 cup finely chopped onion
1/2 cup dry white wine (such as Sauvignon Blanc)
1 1/2 cups Progresso™ reduced sodium chicken broth (from 32-oz carton)
1 tablespoon butter
1 tablespoon Gold Medal™ all-purpose flour
1 tablespoon chopped Italian (flat-leaf) parsley

Steps:

  • In small bowl, mix 2 teaspoons of the mustard, the chopped rosemary, garlic and 1 teaspoon of the lemon juice. Rub mixture all over chicken thighs; season with salt.
  • In 12-inch nonstick skillet, heat oil over medium heat. Add thighs; cook 4 minutes on each side until brown. Add onion; cook 2 to 3 minutes or until just softened. Add white wine; stir to deglaze bottom of pan. Add broth and sprigs of rosemary; increase heat to medium-high; heat to simmering. Reduce heat to medium-low; cover and simmer 10 to 13 minutes or until juice of chicken is clear when thickest part is cut to bone (at least 165°F). Remove chicken to plate, and keep warm.
  • Strain cooking liquid; discard solids. Heat butter in same skillet over medium heat. Stir in flour until smooth; cook 1 minute, stirring constantly, until mixture is lightly browned and bubbling. Slowly add cooking liquid; beat with whisk to combine. Add remaining 1 teaspoon mustard and remaining 1 teaspoon lemon juice; cook 1 to 2 minutes or until slightly thickened. Spoon some of sauce over chicken; top with parsley. Serve remaining sauce on the side.
