CRUSTLESS FRESH STRAWBERRY PIE
FAST, super EASY, no-mixer dessert that's perfect for summer entertaining, picnics, or potlucks!! Somewhere in between pie, cake, and blondies is what you get with this FABULOUS recipe! Take advantage of those FRESH strawberries!!

Steps:
- Preheat oven to 350F. Spray a 9-inch round pie dish very well with cooking spray; set aside. I used a glass pie dish; baking times may vary if using metal.
- To a large bowl, add 1 cup sugar, flour, salt, and whisk to combine; set aside.
- To a medium microwave-safe bowl, add the butter and heat on high power to melt, about 45 seconds. Wait momentarily before adding the eggs so you don't scramble them.
- Ad the eggs, extracts, and whisk to combine.
- Pour the wet mixture over the dry and stir to combine; don't overmix.
- Add 2 cups strawberries and stir to combine; batter is very thick.
- Turn mixture out into prepared pie dish, smoothing the top lightly with a spatula.
- Evenly sprinkle 1/4 cup strawberries over the top, pressing them lightly into the batter.
- Evenly sprinkle 2 tablespoons sugar over the top and bake for about 34 to 39 minutes, or until edges are set and a toothpick inserted in the center comes out clean or with a few moist crumbs but no batter. I prefer to underbake slightly (35 minutes) for a more gooey center but it's personal preference and since all ovens, climates, and berries vary, watch your pie and not the clock.
- Allow pie to cool in pie dish on a wire rack before slicing and serving. Optionally serve with whipped topping or ice cream. Pie will keep airtight at room temp for up to 5 days.

With its sugar-cone crust and layers of bananas and strawberry ice cream, this pretty pie never seems to last long...especially when our grandchildren visit. It's a favorite year-round, but we really enjoy it in summer, when fresh strawberries are plentiful.

- In a large bowl, combine the crushed ice cream cones, pecans and butter. Press onto the bottom and up the sides of a greased 10-in. pie plate. Refrigerate for at least 30 minutes., In another large bowl, combine vanilla ice cream and mashed bananas. Spread over the crust; cover and freeze for 30 minutes. , Arrange sliced bananas over ice cream; cover and freeze for 30 minutes. , Top with strawberry ice cream; cover and freeze for about 45 minutes., Hull and halve strawberries; place around edge of pie. Mound or pipe whipped topping in center of pie. Cover and freeze for up to 1 month. Remove from the freezer about 30 minutes before serving.

WW CRUSTLESS STRAWBERRY-BANANA PIE
I modified this recipe from one I got at a WW meeting. 4 points for the whole pie - 1 point per serving. It can be put in a low fat graham cracker crust but don't forget to count the points. I'M MODIFYING THIS RECIPE BECAUSE I'VE FOUND THAT I LIKE IT BETTER IF I USE A LITTLE MORE WATER AND IT'S EASIER TO SPREAD IN THE PIE PLATE IF YOU ADD THE STRAWBERRIES TO THE SAUCE BEFORE HAND. - Slice bananas into a pie plate (if the bananas are on the bottom they'll be covered and won't turn brown).
- Dissolve Jello in 1 cup of boiling water, dissolve pudding mix in 1/2 cup hot (not boiling) water. Combine jello and pudding and microwave on high for 2 minutes. ADD STRAWBERRIES TO SAUCE GENTLY STIR UNTIL FULLY COATED, POUR OVER BANANAS.
- Chill for 4 hours.
- Serve with a dollop of FF Cool Whip.
- NOTE: I AQUIRED THIS RECIPE AS A CRUSTLESS PIE, BUT I'VE ALSO DIVIDED THIS AND PUT IN INDIVIDUAL CUSTARD CUPS.

- Preheat the oven to 350 degrees; spray a 9-inch pie plate with nonstick spray.
- In a medium bowl, combine the graham cracker crumbs, butter and water with a fork.
- Press into the bottom and up the sides of the pie plate. Bake until firm, 3-5 minutes; cool.
- In another medium bowl, toss the bananas with the lime juice; reserve 1 cup. Arrange the remaining bananas over the crust.
- In a small saucepan, sprinkle the gelatin over the cold water; let stand 2 minutes. Add the sugar; cook over medium-high heat, stirring constantly, until the mixture boils and the gelatin and sugar dissolve, 2-3 minutes.

- Remove from heat and immediately add the jello until dissolved.

- Preheat oven to 375 degrees F (190 degrees C). Press the prepared pie crust into a 9 inch pie pan and set aside.
