A friend served this BLT pasta salad, and I just had to get the recipe. My husband loves BLT sandwiches, so this has become a favorite of his. It's nice to serve on hot and humid days, which we frequently get during summer here in Virginia. -Mrs. Hamilton Myers Jr., Charlottesville, Virginia

1/2 cup mayonnaise
3 tablespoons chili sauce
2 tablespoons lemon juice
1 teaspoon sugar
3 cups cooked elbow macaroni
1/2 cup chopped seeded tomato
2 tablespoons chopped green onions
3 cups shredded lettuce
4 bacon strips, cooked and crumbled

Steps:

  • In a bowl, combine the first 4 ingredients. Add the macaroni, tomato and onions; toss to coat. Cover and refrigerate. Just before serving, add lettuce and bacon; toss to coat.

This is a weight watcher recipe, and one of my favorites. My whole family loves this. It is only 3pts for 1 cup! I didn't see it posted anywhere, and thought I would share it. It is so simple and good. Servings are a guestimate, as my family doesn't have to stick to one cup.

3 2/3 cups cooked large macaroni shells
4 cups tomatoes, cut up
4 slices bacon, cooked and crumbled
3 cups of thin sliced lettuce
1 teaspoon sugar
2 teaspoons cider vinegar
1/2 cup fat-free mayonnaise
1/3 cup light sour cream
1 tablespoon Dijon mustard
salt and pepper

Steps:

  • In a large bowl mix together shell, bacon, tomatoes, and lettuce.
  • In a small bowl mix the sugar, vinegar, mayo, sour cream and mustard, salt and pepper to taste.
  • Pour over shell mixture, stir and chill.

2 cups uncooked elbow macaroni
5 green onions, finely chopped
1 large tomatoes, diced
1 1/4 cups diced celery
1 1/4 cups mayonnaise
5 teaspoons white vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb bacon, cooked and crumble

Steps:

  • Cook macaroni according to package directions.
  • Drain and rinse in cold water.
  • In a large bowl combine the macaroni,green onions,tomato and celery.
  • In a small bowl combine Mayonnaise,vinegar,salt and pepper.
  • Pour over macaroni mixture and toss to coat.
  • Cover and chill for 2 hours.
  • Just before serving add bacon.

1 pound bacon
1 (12 ounce) package elbow macaroni (such as Wacky Mac®)
1 ½ cups chilled mayonnaise (such as Hellman's®)
1 ½ cups chilled coleslaw dressing (such as Kraft®)
2 cups chopped romaine lettuce
3 medium whole (2-3/5" dia) (blank)s tomatoes, diced
1 bunch green onions, chopped

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels and crumble.
  • At the same time, bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and let cool, 10 to 15 minutes.
  • Stir mayonnaise and coleslaw dressing together in a large bowl until creamy. Add noodles, bacon, lettuce, tomatoes, and green onions. Toss well.
