2 lbs boneless bottom round roast, trimmed and cut into 3/4-inch cubes
1/4 cup all-purpose flour
1 tablespoon olive oil
1 (14 1/2 ounce) can low sodium beef broth
1 cup red wine
1 (16 ounce) package frozen pearl onions
1 (10 ounce) package cremini mushrooms
2 tablespoons tomato paste
4 garlic cloves, chopped
1 tablespoon chopped fresh thyme
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lb carrot, thickly sliced
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Toss beef and flour in medium bowl until evenly coated. Heat oil in large Dutch oven over medium-high heat. Add beef, in batches if necessary, and cook, turning occasionally, until browned, about 6 minutes. Transfer to medium with slotted spoon.
  • Add broth, wine, onions, mushrooms, tomato paste, garlic, thyme, bay leaf, salt and pepper; bring to boil, scraping up browned bits from bottom of pot. Stir in beef and reduce heat. Cover and simmer 1 hour. Stir in carrots, Cover and simmer until beef and vegetables are fork-tender, about 30 minutes. Serve sprinkled with parsley.

16 ounces frozen small whole onions, thawed and drained
2 lbs top round steaks
1 large onion, sliced
1 clove minced garlic
cooking spray
1/3 cup flour
1 (10 ounce) can condensed beef broth, undiluted
1/2 cup red wine
2 tablespoons tomato paste
1/2 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
8 ounces fresh mushrooms
3 cups cooked medium egg noodles

Steps:

  • Trim fat from steak and cut into 1 1/2 inch cubes.
  • Heat a large skillet on medium high heat.
  • Add steak and saute until browned (about 5 minutes).
  • Place in crockpot.
  • Put sliced onion and garlic in same unwashed skillet, and coat with cooking spray.
  • Saute 5 minutes, or until tender.
  • Sprinkle flour on them and cook another minute, stirring occasionally.
  • Add broth, wine, and tomato paste, stirring constantly.
  • Cook about 1 minute, or until thick.
  • Add whole onions, thyme, mushrooms, salt, pepper, and bay leaf.
  • Pour into crockpot over beef.
  • Cover and cook on high 1 hour.
  • Reduce to low and cook an additional4 1/2 hours.
  • Discard bay leaf and serve over egg noodles.
  • Serving size is a cup beef mixture and 1/2 cup noodles.

1 cup Burgundy or other dry red wine
2 cloves garlic, minced
1 teaspoon dried thyme, crushed
6 ounces small whole mushrooms, about 2 cups
1 cup frozen small whole onions, thawed
2 cups fresh or thawed frozen whole baby-cut carrots
1 1/2 pound boneless beef top round steaks, 1 1/2-inches thick, cut into 1-inch pieces

Steps:

  • Stir the soup, wine, garlic, thyme, mushrooms, carrots, onions and beef in a 3 1/2-quart slow cooker. Cover and cook on low for 8 to 9 hours or until the beef is fork-tender.

2 tablespoons olive oil
2 pounds round steak, cut into small pieces
3 tablespoons all-purpose flour
2 cups beef broth
1 ½ cups dry red wine
1 teaspoon salt
½ teaspoon dried marjoram, crushed
½ teaspoon dried thyme, crushed
¼ teaspoon ground black pepper
2 ½ cups sliced fresh mushrooms
3 onions, sliced

Steps:

  • In a large stock pot over medium/high heat, heat the oil and add the beef pieces. Sprinkle the flour over the beef. Brown the meat on all sides.
  • Pour in broth and red wine. Sprinkle in salt, marjoram, thyme and black pepper.
  • Bring to a boil. Cover, and reduce heat. Simmer for 1 1/2 hours or until beef is tender, stirring occasionally.
  • Add mushrooms and onions to the pot. Liquid should just cover everything. If necessary, add some more wine to cover. Cook until onions are limp.
