2 1/2 cups nonfat milk
2 tablespoons unsweetened cocoa powder
3 tablespoons cornstarch
1/2 cup sweetened evaporated skim milk
3 tablespoons Hersheys Chocolate Syrup
1 dash salt
1/2 teaspoon vanilla extract

Steps:

  • In a saucepan, combine the milk with the cocoa powder and cornstarch and whisk thoroughly until the powders are dissolved.
  • Add the condensed milk, chocolate syrup, and salt to the saucepan. Set the pan over med/low heat. Heat the mixture, stirring constantly, until it comes to a boil and thickens (about 6 min).
  • Remove from heat and let sit, covered, for about 5 minutes and then add the vanilla.
  • Transfer into serving cups, cover each with plastic wrap and chill 2-3 hrs before serving.
  • 3 Points per serving (3/4 cup).

1/3 cup unsweetened cocoa
3/4 cup semi-sweet chocolate chips
4 egg whites
1/3 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract
2 tablespoons soft fat-free margarine
1 tablespoon skim milk
1/2 teaspoon vanilla extract
2 cups powdered sugar

Steps:

  • Preheat oven to 350*F.
  • Spray a 9x13 inch baking pan with cooking spray.
  • In a large saucepan over low heat, combine sweetened condensed milk, cocoa, and chips. Stir until chips are melted; remove from heat.
  • Stir in egg whites, flour, baking powder, and vanilla; mix well.
  • Turn into prepared pan.
  • Bake 20 minutes or until center is set. Cool.
  • Make icing: combine icing ingredients and mix until well blended.

1 pinch salt
1 cup evaporated skim milk

Steps:

  • In a small heavy-bottomed saucepan combine sugar, cocoa, cornstarch and pinch salt.
  • Stir in the evaporated milk and whisk constantly over LOW heat for 3 minutes or until the mixture comes to a boil; whisk simmering for another 1-2 minutes longer over low heat until thickened.

  • Stir in nuts.

I have not tried this recipe. I got this recipe from Linda's Low Carb. Be sure to buy the "diet" Swiss Miss, which has fewer carbs per serving than their sugar free cocoa mix. I think that the mousse is a little salty so I will try using just one packet of cocoa mix next time. One packet doesn't have much more sodium than a glass of milk but with two packets you're getting double the sodium plus whatever is in a cup of cream.

2 tablespoons cocoa
1/2 cup walnuts (optional)
1/2 cup milk
1 teaspoon baking powder
1/4 cup sugar
25 g butter

3/4 cup brown sugar
1 cup water, boiling

Steps:

  • Sift the flour, cocoa and baking powder into a bowl and then add the sugar and nuts.
  • Melt the butter in another pan or bowl then add milk and vanilla.

  • Spread into a small pudding dish.

1/4 cup hot fudge (I use hot Hershey's Chocolate)

Steps:

  • In blender, scoop out Ice Cream.
  • Heat Hot Fudge in a microwave-safe bowl, covered, for 20-35 sec.
  • Pour Hot Fudge, Milk, and Mix in Blender.
  • Make as chunky or as smooth as you want.
  • Now you have two options.
  • You could pour and serve cold, or, heat it in the microwave for 45-60 seconds .

1 (12 ounce) bag semi-sweet chocolate chips
1ΒΌ cup M&M mini baking bites (divided)

Steps:

  • Line an 8 inch square baking dish with parchment paper, leaving 2 inches hanging over the ends.
  • Cook sweetened condensed milk and chocolate chips in a sauce pan over medium heat and stir frequently until chocolate is melted and mixture is smooth.
  • Remove from heat and stir in 3/4 cup M and M candies.
  • Pour into prepared baking dish, using a spatula to smooth out the top.
  • Sprinkle remaining M and M candies over the top, pressing slightly into the mixture.
  • Refrigerate for at least 2 hours and then cut into squares.
