Roasted tomatoes with parmesan-oregano breadcrumbs image

Rich roasted tomatoes and flavorful crunchy topping combined make this a fantastic appetizer for your next gathering. Roma tomatoes, available year-round, are the featured variety and the perfect 2-bite size. Fresh oregano, garlic, Parmesan cheese and breadcrumbs sprinkled over the tomatoes provide wonderful and complex flavor. If you are having a crowd for a holiday meal, this 30-minute recipe makes a terrific side dish. If you have leftovers or just love the flavor, coarsely chop the roasted tomatoes and toss with cooked pasta. If you prefer your breadcrumbs very golden, consider broiling the tomatoes very briefly after they are done baking.

6 medium Plum tomato(es) halved lengthwise
2 tsp Olive oil extra virgin, divided
0.25 tsp Kosher salt or to taste
0.25 cup(s) Panko breadcrumbs
0.5 tsp Minced garlic
0.5 tsp Dried oregano
0.125 tsp Black pepper freshly ground
2 Tbsp Grated Parmesan cheese
1 tsp Fresh parsley chopped

Steps:

  • Preheat oven to 400°F. Line a small baking sheet with aluminum foil (or coat with cooking spray).
  • Toss tomatoes with 1 teaspoon oil and salt on prepared pan; flip tomatoes so they are cut-side up.
  • In a small bowl, combine breadcrumbs, garlic, oregano, pepper, cheese and remaining teaspoon oil; sprinkle breadcrumb mixture over tomatoes.
  • Bake until breadcrumbs are golden and tomatoes are softened, about 20 minutes; remove to a serving platter and sprinkle with parsley. Yields 1 tomato half per serving.

1/2 cup reduced-calorie margarine, soft
1/2 cup brown sugar, not packed
1 large egg
1 tablespoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon pumpkin pie spice
1/4 cup powdered sugar

Steps:

  • Preheat oven to 375 degrees.
  • In a mixing bowl, on medium speed (or by hand), beat margarine with brown sugar until creamy. Add egg and vanilla extract and beat until light and fluffy. Mix in flour, baking soda, pumpkin pie spice and salt.
  • Roll rounded teaspoonfuls of dough into powdered sugar. Place on baking sheet (spacing is'nt really important, but about an inch or two apart is good). Bake until golden, about 7 to 8 minutes. Makes 1 cookie per serving.

1/2 cup buttermilk
1/4 cup parmesan cheese or 1/4 cup romano cheese, grated
salt
fresh ground black pepper

Steps:

  • Cut tomatoes in half, seed, and place cut side up in broiler safe baking dish.
  • Pour 1 tablespoon of buttermilk into each tomato half then sprinkle top of each with cheese, salt and pepper.
  • Bake at 400 degrees Fahrenheit for 15 minutes; then place under broiler until lightly browned.
  • You may add oregano, basil, tarragon, garlic, or rosemary for a flavor change.

1 medium slicing tomatoes
2 tablespoons parmesan cheese
1/2 teaspoon garlic powder
salt
pepper

Steps:

  • Slice tomato into 1/4" thick slices.
  • Place slices in shallow baking pan or on cookie sheet.
  • Lightly season each tomato slice with a dash of salt and pepper.
  • Place 1/3 tbsp parmesean cheese on each tomato slice, spread it out so that it covers the face of the tomato.
  • Sprinkle garlic powder on top of the parmesean cheese on each slice. You can also use parsley if you like.
  • Broil tomatos in oven or toaster oven until the cheese turns golden brown.
  • Enjoy.
