This recipe from "Cooking Light" magazine is so delicious, you won't even realize how (relatively) healthy it is. You can omit the topping for a lighter bread. It makes great muffins too; just shorten the baking time.

1/4 cup chopped pecans
2 tablespoons sugar
1 1/2 tablespoons chilled butter or 1 1/2 tablespoons stick margarine, cut into small pieces
1/4 teaspoon ground cinnamon
2 cups all-purpose flour
1/2 cup sugar
1/2 cup raisins (optional) or 1/2 cup dried cranberries (optional)
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 cup canned pumpkin
1/2 cup plain low-fat yogurt
1/4-1/2 cup brown sugar (depending on how sweet you want it) or 1/4-1/2 cup honey (depending on how sweet you want it)
1/4 cup vegetable oil
1 teaspoon vanilla extract
2 large eggs
cooking spray

Steps:

  • Preheat oven to 350°. To prepare topping, combine first 4 ingredients until crumbly. Set the mixture aside.
  • To prepare bread, lightly spoon flour into dry measuring cups; level with a knife. Combine flour and the next 7 ingredients (flour through nutmeg) in a large bowl; stir well with a whisk. Make a well in center of mixture. Combine the pumpkin and next 5 ingredients (pumpkin through eggs) in a bowl; add to flour mixture. Stir just until moist.
  • Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray; sprinkle with topping.
  • Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes on a wire rack; remove from pan. Cool completely on wire rack.

2 cups pecans (chopped)
2 cups almonds (chopped)
3 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup butter (room temp.)
1 cup sugar
1 cup brown sugar
1 teaspoon vanilla
4 eggs (beaten)
2 cups cooked mashed pumpkin (drained very well)
1/2 cup evaporated milk
2 tablespoons maple syrup
1/2 lb cream cheese (room temp.) (optional)
1/3 cup butter (room temp.) (optional)
1 1/2 tablespoons honey (optional)
1 cup powdered sugar (optional)

Steps:

  • Heat oven 350.
  • Combine the nuts, flour, baking powder and soda, cinnamon, nutmeg and salt.
  • In another bowl beat butter at medium speed for 30 seconds.
  • Add sugars and vanilla. Beat 2 minutes.
  • Add eggs one at a time until blended.
  • Stir in pumpkin.
  • Add dry mix and milk, alternating 1 cup at a time until incorporated.
  • Pour into 2 sprayed loaf pans.
  • Bake 1 hour.
  • Let cool in pans for 15 minutes.
  • Remove to racks. Brush with syrup. Let cool.
  • If desired beat together the cream cheese, butter, honey and sugar until smooth.
  • Serve with bread.

3 cups sugar
1 cup vegetable oil
2/3 cup water
4 eggs
1 (16 ounce) can pumpkin puree
3 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon clove
1/4 cup packed light brown sugar
1 cup finely chopped walnuts
2 tablespoons flour
1/2 teaspoon cinnamon
2 tablespoons soft butter

Steps:

  • In a large bowl place the first 5 ingredients (sugar, oil, water, eggs, and pumpkin), and beat one minute on low.
  • Add the next 6 ingredients (flour, soda, salt, cinnamon, nutmeg, and cloves).
  • Blend at low speed until moistened and then beat for 1 minute at medium speed.
  • Pour into two greased bread pans.
  • Make the streusel topping by mixing the last 5 ingredients (brown sugar, walnuts, flour, cinnamon, and butter).
  • Put streusel topping on both batters.
  • Bake at 350 degrees for 60-75 minute.
