1 pound ground beef
1/3 cup chopped onion
1/2 teaspoon minced garlic
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
88 wonton wrappers
2-3/4 cups shredded part-skim mozzarella cheese
2 tablespoons butter, melted
Grated Parmesan cheese, optional
Spaghetti sauce, warmed

Steps:

  • In a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink, 5-7 minutes; crumble beef; drain. Stir in oregano and basil. , Preheat oven to 350°. Place 8 wonton wrappers on a greased baking sheet; top each with 1 tablespoon meat mixture and 1 tablespoon mozzarella cheese. Moisten edges with water; top with another wonton wrapper. Press edges with a fork to seal. Repeat with remaining wrappers, meat mixture and cheese. , Brush wontons with butter. Sprinkle with Parmesan cheese if desired. Bake until golden brown, 10-12 minutes. Serve with spaghetti sauce.

3-1/2 cups cubed peeled butternut squash
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup half-and-half cream
40 wonton wrappers
1 large egg, lightly beaten
1/2 cup butter, melted
6 tablespoons marinara sauce
1/3 cup finely chopped walnuts
2 teaspoons minced fresh sage

Steps:

  • Place squash on a greased 15x10x1-in. baking pan. Drizzle with oil and sprinkle with salt and pepper; toss to coat. Bake, uncovered, at 425° for 15-20 minutes or until tender, stirring once. Cool slightly., Place cream and squash in a food processor; cover and process until pureed. Spoon 1 tablespoon mixture in the center of a wonton wrapper. (Keep wrappers covered with a damp paper towel until ready to use.) Moisten edges with egg; top with another wonton wrapper. Pinch edges to seal, pressing around filling to remove air pockets. Repeat with remaining wrappers and filling., In a Dutch oven, bring water to a boil. Reduce heat to a gentle simmer. Cook ravioli in batches for 30-60 seconds or until they float. Remove with a slotted spoon; keep warm., Meanwhile, place butter and marinara sauce in a microwave-safe bowl. Cover and microwave on high for 1-2 minutes or until heated through, stirring once. Stir in walnuts. Serve with ravioli; sprinkle with sage.

2 2/3 cups frozen peas (3/4 pound)
1/3 cup grated parmigiano-reggiano plus additional for serving
2 teaspoons chopped mint
About 64 dumpling or wonton wrappers
3/4 stick unsalted butter, melted

Steps:

  • Cook peas in boiling salted water until just tender, 3 to 4 minutes. Drain and cool, then purée in a food processor. Stir in cheese, mint, and 1/2 teaspoon each of salt and pepper.
  • Put a rounded teaspoon filling in center of a wrapper. Lightly brush edge of wrapper with water, then place a second wrapper on top and seal, pressing out any trapped air. Repeat with remaining wrappers and filling, keeping ravioli covered as you work.
  • Boil ravioli in 2 batches in a pasta pot of salted boiling water until tender, 2 to 3 minutes per batch, removing with a slotted spoon. Drizzle with butter and sprinkle with cheese and pepper.

6 ounces wonton wrappers
15 ounces canned pumpkin
1 large egg
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons butter
3 tablespoons olive oil
1 cup half-and-half cream
1 teaspoon rubbed sage
salt & pepper

Steps:

  • Combine pumpkin, egg, salt & pepper.
  • Hold a wonton wrapper in the palm of your hand, with the other hand dip a finger into water and wet the outside edge of the perimeter of the wonton wrapper.
  • Spoon about 1-1.5 teaspoonful of pumpkin mixture into the center and fold wonton over.pressing wet edges together to seal(you can make triangles or rectangles).
  • When all ravioli are filled, drop them into simmering water for approximately 3 minutes.
  • Drain ravioli.
  • Melt butter in pan with olive oil.
  • Add half & half, sage and salt & pepper.
  • Add ravioli to sauce and simmer for 1-2 minutes.
  • Serve with fresh shaved parmigiano regiano.

2 tablespoons olive oil
1 tablespoon finely chopped garlic (about 2 cloves)
1 tablespoon finely chopped ginger (can also be finely grated with a rasp grater)
One 32-ounce box low-sodium chicken broth
2 tablespoons soy sauce
One 9-ounce package frozen meat ravioli
1 cup packed baby spinach leaves, roughly chopped
1/4 cup thinly sliced scallions (about 2 stalks)

Steps:

  • In a medium pot, heat the olive oil over medium heat, add the garlic and ginger and cook for 1 minute. Add the chicken broth and soy sauce and bring to a boil. Add the ravioli and simmer for 5 minutes. Stir in the spinach and cook for another minute to wilt. Ladle into bowls, top with scallions and serve immediately.

1/2 cup freshly shredded Parmesan cheese
3/4 teaspoon black pepper
1/3 cup chopped fresh basil, divided
1/2 (16-oz.) package won ton wrappers
1 pt. cherry tomatoes, halved
2 tablespoons olive oil
1/2 cup chicken broth
1 teaspoon white wine vinegar
1/4 to 1/2 tsp. dried crushed red pepper
1/4 teaspoon salt
Garnishes: fresh basil leaves, freshly shaved Parmesan cheese

Steps:

  • 1. Stir together first 3 ingredients and 3 Tbsp. chopped fresh basil in a small bowl. 2. Arrange 1 won ton wrapper on a clean, flat surface. (Cover remaining wrappers with plastic wrap or a damp towel to prevent drying out.) Lightly moisten edges of wrapper with water. Place about 1 1/2 tsp. cheese mixture in center of wrapper; fold 2 opposite corners together over cheese mixture, forming a triangle. Press edges together to seal, removing any air pockets. Cover with plastic wrap or a damp cloth. Repeat procedure with remaining wrappers and cheese mixture. 3. Cook ravioli, in 2 batches, in boiling salted water to cover in a Dutch oven over medium-high heat 3 minutes. Remove with a slotted spoon, and drain well on a lightly greased wire rack. Divide cooked ravioli among 4 individual serving bowls. 4. Sauté tomatoes in hot oil in a large skillet over medium-high heat 2 minutes or just until soft. Add broth and white wine vinegar; cook 2 to 3 minutes or until tomatoes begin to wilt. Stir in dried crushed red pepper, salt, and remaining basil. Pour sauce over ravioli. Garnish, if desired. Serve immediately.

PUMPKIN WONTON RAVIOLI

1 stick unsalted butter
2 cloves garlic, minced
1 15-ounce can pumpkin puree
Kosher salt
1/4 teaspoon chili powder
1/4 cup pine nuts
1 large egg
48 wonton wrappers
1 1/2 cups shaved parmesan cheese
6 sage leaves, rolled and very thinly sliced
Freshly ground pepper

Steps:

  • Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the garlic and heat it for a couple of minutes (don't brown it). Add the pumpkin, 1/2 teaspoon salt and the chili powder. Cook this filling for a few minutes, stirring occasionally, to warm it and cook off some of the excess liquid. Remove from the heat and let it cool slightly while you get the other components ready.
  • Toast the pine nuts in a small skillet over medium-low heat, tossing and stirring occasionally, until golden. Remove them to a plate and set aside.
  • Next, make browned butter: In the same small skillet, melt the remaining 6 tablespoons butter over medium-high heat; let it cook and bubble up for an additional minute or so, until the foam is golden brown. Watch it carefully and take the pan off the heat as soon as it's ready. Finally, beat the egg with 1 tablespoon cold water. Now you're ready for Operation Ravioli.
  • Bring a pot of salted water to a boil. Lay out a few wonton wrappers at a time and spoon about 2 teaspoons of the pumpkin mixture in the middle of each one. Then, one at a time, dab your finger into the egg wash mixture and "paint" around the pumpkin on the wrapper. Lay a second wonton wrapper on top of each one, match up the edges and press the two wrappers together, gently pressing out any air bubbles as you go. To seal the ravioli, use a knife or square cutter to neatly trim the edges. Set them aside while you work on the rest.
  • Drop a few ravioli at a time into the boiling water. Boil them for 1 1/2 to 2 minutes, then remove with a slotted spoon and place on a platter or serving plates. Spoon a little bit of the browned butter over the ravioli, then sprinkle on the parmesan shavings, sage, toasted pine nuts and a little pepper.

4 cups apple cider
1 1/2 teaspoons freshly ground black pepper
8 ounces ground turkey
8 ounces ground pork
1/2 cup finely grated Asiago cheese
1 shallot, minced
2 cloves garlic, minced
2 tablespoons coarsely chopped fresh sage
1 teaspoon freshly ground black pepper
1 (1 pound/454 g) package round wonton wrappers (60 wonton wrappers)
1 egg, whisked for egg wash
1/4 cup finely chopped fresh chives

Carrot and Fennel Salad with White Wine Dressing, recipe follows

Steps:

  • For the apple cider glaze:
  • Put the apple cider in a large saute pan over high heat. Once apple cider has reduced by 1/2 and has achieved thick syrup consistency, add the black pepper, stir, and set aside.
  • For the wonton ravioli:
  • In a tall-rimmed saute pan bring heavily salted water to a boil. Reduce the heat slightly to a gentle boil.
  • For the wonton filling:
  • Put the ground turkey, ground pork, Asiago cheese, minced shallot, minced garlic, sage, and black pepper, in a large bowl and mix well to incorporate.
  • To assemble the wonton ravioli:
  • Put a wonton wrapper on a clean dry working surface and brush the entire wrapper with egg wash. Keep the remaining wonton wrappers covered while working to prevent them from drying out.
  • Put 1 tablespoon meat mixture in the center of 30 wonton wrapper. To cover, gently stretch another wonton over top, connecting the edges of the wrappers, press to secure. Gently lift, cup hands over filling to release any air inside, pinch around the rim to secure and put on a dry tray. Repeat with remaining wontons.
  • To cook the wontons:
  • Gently put 5 wontons in the boiling water, turn over half way though cooking and remove once the meat is cooked and no longer pink, approximately 5 minutes.
  • To serve the wonton ravioli:
  • Put the wonton ravioli in a large bowl, drizzle with the apple cider glaze, put on a serving dish and garnish with chopped fresh chives. Serve with Carrot and Fennel Salad with White Wine Dressing, recipe follows.
